Time 1h30m

Yield 16 pieces

Number Of Ingredients 14

1/2 cup extra-virgin olive oil
1 tablespoon finely chopped fresh rosemary
1 tablespoon fresh thyme leaves
1 teaspoon red pepper flakes, plus additional for seasoning
3 cloves garlic, grated
1 tablespoon finely chopped fresh parsley
Kosher salt
4 slices thick-cut bacon
All-purpose flour, for dusting
2 pounds pizza dough, divided into sixteen 2-inch balls weighing 2 ounces each
4 teaspoons tomato paste
16 basil leaves
12 ounces fresh mozzarella, cut into 1/4-inch cubes
Marinara sauce, warmed, for serving

Steps:

  • Place a pizza stone on the center rack of the oven and preheat the oven to 500 degrees F. Line a baking sheet with parchment paper and place it on top of the pizza stone.
  • In a small skillet or pot, warm the olive oil over medium heat until very warm to the touch. Add the rosemary, thyme, red pepper flakes and garlic. Remove from the heat and let cool slightly. Stir in the parsley and season to taste with salt.
  • In a medium skillet over medium-low heat, cook the bacon until crispy, turning occasionally, about 10 minutes. Drain on a paper towel-lined plate, then crumble.
  • Lightly dust a work surface with flour. Flatten and shape each piece of dough into a 3 1/2-inch round.
  • Spread 1/4 teaspoon tomato paste in the center of a round, leaving a small border around the edge. Tear a basil leaf into pieces and add to the center, along with about 1 teaspoon of bacon. Top with 3/4-ounce (about 1 heaping tablespoon) mozzarella. Sprinkle with a pinch of salt and some red pepper flakes. Very lightly brush the circumference of the dough with water. Bring the edges of the round towards the center, lightly pleating to form a tight enclosure, and pinch to seal. Using a metal skewer dipped in flour, make a hole in the center of the dough to create a steam vent. Place on a sheet of parchment and repeat with the remaining dough and fillings. Remove the hot baking sheet from the oven, then transfer all the dough balls to the hot baking sheet, spacing them 2 inches apart. Brush them liberally with the herb oil.
  • Transfer the baking sheet to the pizza stone and bake, 5 minutes. Rotate the pan and bake until golden brown, about 5 minutes more. Brush with herb oil and serve immediately with marina sauce and the remaining herb oil for dipping.

Yield Makes four 12-inch pizzas

Number Of Ingredients 10

Martha's Pizza Dough
4 ounces Gruyere cheese, grated
2 ounces young pecorino cheese, finely grated
8 ounces buffalo mozzarella cheese, torn into 2-inch pieces
6 ounces fresh spinach, stems removed
2 cloves garlic, thinly sliced
Freshly ground black pepper
Extra-virgin olive oil, for drizzling
1 tablespoon thinly sliced fresh mint leaves
Lemon wedges, for serving

Steps:

  • Preheat oven to 550 degrees (or highest temperature) with a pizza stone placed on lowest rack for at least 30 minutes. Top a pizza peel with parchment paper.
  • Working with one piece of dough, flatten dough into a disk that is thicker in the center than at the edges. Using your fingers, gently pull on the edges of the dough to form a 12-inch circle; dough should still be thicker in the center. Transfer dough to prepared pizza peel.
  • Top dough with one-quarter of the cheeses, spinach, and sliced garlic. Season with pepper and drizzle with olive oil.
  • Transfer pizza along with parchment paper to pizza stone and bake until spinach is wilted and slightly browned, 10 to 12 minutes.
  • Using pizza peel, remove pizza from oven and top with one-quarter of the mint. Serve with lemon wedges. Repeat process with remaining dough and toppings.

Tips:

  • Use a variety of cheeses for a more flavorful pizza. The recipe calls for mozzarella, cheddar, and Parmesan, but you can use any combination of cheeses that you like. Some other good options include fontina, Gruyère, Gouda, and Asiago.
  • Don't skimp on the bacon. Bacon is one of the best things about this pizza, so don't be afraid to use a generous amount. You can also use different types of bacon, such as turkey bacon or pancetta.
  • Use a store-bought pizza crust to save time. If you're short on time, you can use a store-bought pizza crust instead of making your own. Just be sure to choose a crust that is the right size for your baking dish.
  • Bake the pizza until the crust is golden brown and the cheese is melted and bubbly. The baking time will vary depending on the type of crust you are using, so keep an eye on the pizza and remove it from the oven when it is done.
  • Let the pizza cool for a few minutes before slicing and serving. This will help the cheese to set and make the pizza easier to slice.

Conclusion:

This three-cheese bacon pizza is a delicious and easy-to-make meal that is perfect for any occasion. The combination of melted cheese, crispy bacon, and flavorful sauce is sure to please everyone. So next time you're looking for a quick and easy dinner idea, give this pizza a try. You won't be disappointed!
