12 ounces uncooked elbow macaroni
2 pounds kielbasa or Polish sausage, halved lengthwise and sliced
1 tablespoon olive oil
2 medium onions, chopped
2 medium zucchini, quartered and sliced
2 medium carrots, grated
1/2 teaspoon minced garlic
1 jar (26 ounces) spaghetti sauce
1 can (14-1/2 ounces) stewed tomatoes
1 large egg, lightly beaten
1 carton (15 ounces) ricotta cheese
2 cups shredded cheddar cheese
2 cups shredded part-skim mozzarella cheese
2 green onions, chopped

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a large skillet, brown sausage in oil over medium heat; drain. 3 cups elbow macaroni
2 tablespoons butter
2 tablespoons all-purpose flour
1/4 teaspoon each salt and pepper
2 cups milk
2 cups old cheddar cheese, shredded
1 cup asiago cheese, shredded
1/4 cup cracker crumb
1/4 cup parmesan cheese
1 tablespoon butter, melted

Steps:

  • In large pot of salted, boiling water, cook pasta for 8 to 9 minutes, or until pasta is tender but firm.
  • Drain Rinse with cold water and drain again, return to pot.
  • Meanwhile, in saucepan melt butter over medium Heat.
  • Sprinkle with flour, salt and pepper, cook, stirring for 1 minute.
  • Whisk in milk, bring to boil.
  • Reduce heat and simmer, whisking often, for about 5 minutes or until sauce thickens.
  • Stir in cheddar Cheese, whisking until smooth.

  • Fold in Asiago and pour mixture evenly into Greased 8 cup (2 L) baking dish.

1 3/4 cups uncooked elbow macaroni (8oz)
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons all-purpose flour
1/2 teaspoon salt
1 3/4 cups milk
1 1/2 cups grated cheddar cheese (6oz)
1/2 grated parmesan cheese
6 slices bacon, crispy cooked, crumbled (1/3 cup)
3 tablespoons choped fresh chives

Steps:

  • Heat oven to 400°F Spray 34 mini muffin cups with cooking spray. In 3 quart sacuepan, cook & drain macaroni as directed on pkg. Return to saucepan.
  • Meanwhile, in a 1-quart saucepan, melt butter over medium-low heat. Stir in flour and salt. Cook & stir until mixture is smooth and bubbly. Gradually add milk, stirring constantly, until mixture boils and thinkens. Stir in 3/4 cup of the cheddar cheese until melted. Stir in Parmesan cheese, blue cheese and bacon, until blended. Pour over macroni, stirring until well mixed.
  • Spoon mixture into mini muffin cups, filling full. Sprinkle with bread crumbs. Sprinkle evenly with remaining 3/4 cup cheese.
  • Bake 20-25 min or until golden brown. Let stand 10 minute Sprinkle with chives. Remove from pan. Use a sharp pearing knife to help release macaroni cups from pan.
