Bring to a boil, lower to a simmer, cover and simmer for 1 1/2 to 2 hours, or until the beans are very tender. Discard the lemon rind and chile pepper and drain.
  • Combine the beans, garlic and lemon juice in a food processor. Season with a couple pinches of kosher salt and black pepper. Puree until smooth, 2 to 3 minutes. While the motor is running, drizzle in the olive oil. Adjust the seasoning with kosher salt and black pepper, as needed. Reserve in the refrigerator.

When the oil is hot and shimmery, add the peppers and cook, tossing occasionally, for 3 to 4 minutes. Place the lemon cut-side down in the skillet and char simultaneously until deeply browned.

SASSY & SPICY THREE BEAN DIP

Sassy & Spicy Three Bean Dip image

This is my first recipe post! I came up with it when I was trying to duplicate my favorite spicy bean dip that is no longer sold at my grocery store. Everyone LOVES this dip and I am asked to make all the time. The only complaint is that there is never enough! It is pretty easy to make as you just throw all the ingredients into a food processor. It can be used as a filling for burritos, tacos or tostadas as well. I sometimes add half a can (15 oz)of Vegitarian Medium Chili to the food processor as well (for the texture of the TVP). Adjust the heat to your liking. Hope you enjoy! Adios!

Tips:

  • Use a variety of beans: Using a mix of different beans, such as black beans, pinto beans, and kidney beans, adds flavor and texture to the dip.
  • Roast the peppers: Roasting the peppers brings out their natural sweetness and smoky flavor. You can roast the peppers in the oven or on the grill.
  • Use fresh herbs: Fresh herbs, such as cilantro and parsley, add brightness and freshness to the dip. You can also use dried herbs, but fresh herbs are preferred.
  • Don't overcook the beans: Overcooked beans will become mushy and lose their flavor. Cook the beans until they are just tender.
  • Let the dip chill: Letting the dip chill for at least 30 minutes before serving allows the flavors to meld and develop.
  • Serve with your favorite toppings: Serve the dip with your favorite toppings, such as sour cream, guacamole, salsa, or shredded cheese.

Conclusion:

Three-pepper bean dip is a delicious and easy-to-make appetizer that is perfect for any occasion. It is a great way to use up leftover beans and roasted peppers.
