1 box Betty Crocker™ Super Moist™ white cake mix
Water, vegetable oil and egg whites called for on cake mix box
2 tablespoons instant espresso coffee powder or granules
1 container (8 oz) mascarpone cheese, softened
2 tablespoons coffee-flavored liqueur
1 package (24 oz) chocolate-flavored candy coating, chopped
1 1/2 cups bittersweet chocolate chips
1 tablespoon unsweetened baking cocoa

Steps:

  • Heat oven to 350°F. Make cake mix as directed on box, using water, oil and egg whites and adding coffee powder. Bake and cool as directed for 13x9-inch pan.
  • Line cookie sheet with waxed paper. Crumble cake into large bowl. Add mascarpone cheese and liqueur; mix well. Shape into 1-inch balls; place on cookie sheet. Freeze until firm; keep refrigerated.
  • In microwavable bowl, microwave candy coating and chocolate chips uncovered on Medium (50%) 2 minutes, then in 15-second intervals, until melted; stir until smooth.

Water, vegetable oil and eggs called for on cake mix box
3/4 cup hot brewed espresso coffee or very strong coffee
2 tablespoons cognac
2 tablespoons powdered sugar
3 cups mascarpone cheese
1 1/2 cups powdered sugar
2 tablespoons cognac
3 teaspoons vanilla
1 cup cold whipping cream
3 tablespoons Dutch processed or regular unsweetened baking cocoa
Chocolate-covered coffee beans
3 oz dark baking chocolate, coarsely chopped

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Grease 2 (9-inch) round cake pans with shortening; line pans with cooking parchment paper. Make cake mix as directed on box, using water, oil and eggs. Pour batter into pans.
  • Bake 25 to 29 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans to cooling racks. Cool completely.
  • In small bowl, mix coffee syrup ingredients. Set aside to cool.

1 cup strong brewed coffee, room temperature
4 large egg whites
4 Heath candy bars (1.4 ounces each), chopped
FROSTING:
4 ounces cream cheese, softened
2/3 cup sugar
1/3 cup chocolate syrup
2 teaspoons vanilla extract
2 cups heavy whipping cream
6 tablespoons strong brewed coffee, room temperature
1 Heath candy bar (1.4 ounces), chopped

Steps:

  • Line two greased 9-in. round baking pans with waxed paper and grease the paper; set aside. In a large bowl, combine the cake mix, coffee and egg whites; beat on low speed for 30 seconds. Beat on medium for 2 minutes. Fold in chopped candy bars. , Pour into prepared pans. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. 3 1/2 ounces good bittersweet chocolate
3 1/2 ounces good semisweet chocolate
1/2 cup heavy cream
2 tablespoons tiramisu liqueur (from liquor store)
1 tablespoon brewed coffee
1/2 teaspoon good vanilla extract
ghiradelli ground chocolate, and
cocoa (for rolling)

Steps:

  • Chop the chocolates and place in a bowl.
  • Heat the cream in a small saucepan until it boils. Immediately pour the hot cream through a fine-meshed sieve into the bowl with the chocolates. With a wire whisk, slowly stir the cream and chocolates together until the chocolate is completely melted. (If the chocolate doesn't melt completely, place the bowl over a pan of simmering water and stir for a few minutes just until it melts.) Whisk in the Tiramisu liqueur, coffee and vanilla. Cover and chill for 45 minutes to 1 hour until pliable but firm enough to scoop.
  • With 2 teaspoons or a 1 1/4 inch ice cream scoop, make the dollops of the chocolate mixture and place on a baking sheet lined with parchment paper. 140ml double cream
25g unsalted butter
150g dark chocolate , chopped
60ml marsala
1 heaped tbsp strong espresso powder , plus extra for dusting
250g white chocolate

Steps:

  • Gently heat the double cream and butter until just steaming. Put the dark chocolate in a heatproof bowl, pour over the warm cream and stir to melt. Stir in the marsala, then mix the espresso powder with 1 tbsp boiling water and add this as well. Chill for 1-2 hrs, or until firm enough to scoop. Use a teaspoon to scoop the mixture and gently roll into balls using your hands (you may want to use gloves). Put on a lined baking tray and freeze for 30 mins.
  • Heat the white chocolate in the microwave for 1-2 mins, or until melted, then dip each ball in the white chocolate and return to the tray using a fork. Dust with a little espresso powder while the chocolate is still soft. Return to the freezer for 10-15 mins to set. Will keep in the fridge for three days.
