Yield 5 toasties

Number Of Ingredients 8

3/4 C corn flour (I used Bob's Red Mill found at Whole Foods)
1/4 C gluten free flour blend
1 t baking powder
1/4 t salt
1/4 C unsalted butter, softened
1/3 C sugar
1 egg
1/2 t coconut extract

Steps:

  • 1. Whisk together the corn flour, all-purpose flour, baking powder, and salt. 2. In a separate bowl, cream together the butter and sugar. 3. Add the egg and coconut extract and blend well. 4. Then combine the flour mixture slowly into the butter mixture. 5. Place scoopfuls (serving spoon size) of batter onto a parchment lined cookie sheet, about an inch apart. Flatten. 6. Put the cookie sheets in the fridge for at least 10 minutes You can pop them in while you are pre-heating the oven to 350 degrees. 7. Bake the cookies for about 12-14 minutes, until the edges start turning golden brown.

This is very good. It is sort of like French toast but without eggs, and has a milky flavor inside.

¾ cup whole milk
2 tablespoons brown sugar
3 slices white bread
1 tablespoon maple syrup, or to taste

Steps:

  • Stir together milk and sugar in a saucepan until well combined. Bring to a boil over medium-high heat, being careful that the milk doesn't burn.
  • Remove from heat and allow to cool slightly. Soak bread in the sweetened milk.
  • Heat a non-stick skillet over medium heat and quickly brown the soaked bread on both sides. Serve hot with maple syrup.

French Toast Bake image

This French toast bake is my new tradition for Christmas morning! Serve with fruit and/or maple syrup.

1 stick unsalted butter, melted
1 cup brown sugar
2 (8 ounce) loaves stale French bread
4 large eggs
1 ½ cups milk
1 teaspoon vanilla extract
½ teaspoon ground cinnamon, or more to taste
2 tablespoons powdered sugar, or to taste

Steps:

  • Slice bread and cut off and discard crusts. Beat milk, eggs, and vanilla together in a bowl until well combined.
  • Stir melted butter and brown sugar together until well mixed. Pour into the bottom of a 9x13-inch pan; spread evenly. Layer bread slices over top. Pour milk mixture evenly over bread. Sprinkle with cinnamon. Cover with aluminum foil and chill in the refrigerator, 8 hours to overnight.
  • When ready to bake, preheat the oven to 350 degrees F (175 degrees C).
  • Bake, covered, for 30 minutes. Remove cover and continue to bake until golden brown and bubbly, about 15 more minutes.
  • Remove from the oven and sprinkle with powdered sugar and cinnamon before serving.
