2 ounces Bacardi "Rock Coconut" rum or plain white rum
4 ounces Malibu Coconut rum
3 ounces whipped cream vodka
2 ounces coconut cream
2 ounces pineapple juice
Drizzle of Godiva white chocolate liqueur
Toasted coconut
Honey

Steps:

  • To toast the coconut, I just put a big handful into a round cake pan and popped it into the oven under the broiler a few minutes. You do have to keep and eye on it, and move it around every couple of minutes. Do NOT turn your back on it... it will burn in a heartbeat if you aren't paying it any attention! Then, to rim the glasses, I ran a bead of honey all around the rim, then inverted the honey rimmed glass down into toasted coconut firmly. Into a martini shaker, mix together the alcohols, cream of coconut, and pineapple juice. Add ice and shake for a minute or so until cold. Strain the drink out into toasted coconut-rimmed martini glasses. Drizzle some of the Godiva white chocolate liqueur over the top and garnish with a bit more toasted coconut if you'd like.

1 cup sweetened shredded coconut
1/2 teaspoon salt
1/2 cup freshly squeezed lime juice, plus 2 tablespoons for glasses (about 5 limes)
3/4 cup Coco Lopez or cream of coconut
1/2 cup plus 2 tablespoons tequila
1/4 cup Cointreau or other orange liqueur

Steps:

  • Preheat oven to 350 degrees. On a rimmed baking sheet, toss coconut with the salt. Spread on sheet; toast in oven, stirring frequently, until golden brown, 8 to 10 minutes. Let cool, then crush with your hands until crumbly.
  • Pour 2 tablespoons lime juice into a shallow dish. Place coconut mixture in another dish. Dip rims of two cocktail glasses in lime juice, then in coconut mixture, coating well.
  • Combine remaining ingredients with 1 cup ice in a blender; puree until smooth. Divide evenly between prepared glasses, and serve immediately.

For the toasted coconut syrup:
3/4 cup unsweetened shredded coconut
1/4 cup plus 2 tablespoons sugar
2 tablespoons honey
For the drink:
6 ounces cold brew
Coconut milk (for serving)

Steps:

  • Make the toasted coconut syrup:
  • Preheat oven to 350°F. Spread coconut on a rimmed baking sheet and toast until golden brown and fragrant, about 10 minutes.
  • Bring toasted coconut, sugar, honey, and 1/2 cup water to a low boil in a small saucepan. Remove from heat, cover, and let steep at least 30 minutes and up to 4 hours.
  • Strain syrup through a fine-mesh sieve into a small bowl or resealable glass container, pushing down on solids to extract as much syrup as possible. You should have about 1/3 cup.
  • Make the drink:
  • Fill a glass with ice and add cold brew. Stir in desired amount of syrup (about 2 Tbsp.) Top with a splash of coconut milk.

  • Toasted coconut syrup can be made 7 days ahead; store in an airtight container and chill.

1/3 cup coconut cream, chilled
1 ounce coconut rum
1 vanilla bean

Steps:

  • Place all ingredients into a cocktail shaker. Strain into a martini glass and serve with the vanilla bean folded into it. (so both ends peek out).
