4 Yukon potatoes, peeled and diced
2 tablespoons butter
1 medium onion, finely chopped
1 red bell pepper, diced
1 yellow bell pepper, diced
1 tablespoon minced garlic
1/2 teaspoon cayenne
1 tablespoon salt
1 tablespoon coarsely ground black pepper
1 tablespoon smoked paprika
1 teaspoon chopped fresh oregano leaves
1 (3-pound) store-bought rotisserie chicken, meat removed and diced
1/4 cup chicken stock
2 tablespoons chopped fresh parsley leaves
1/2 lemon, juiced

Steps:

  • Preheat oven to 325 degrees F.
  • Bring a large pot or water to a boil over medium heat. Add the potatoes and cook until tender, about 12 to 14 minutes. Drain and set aside.
  • In a large oven-proof skillet over medium-high heat, add the butter. Add the onions, bell peppers and garlic and saute for a few minutes. 1 (16 ounce) package frozen diced hash brown potatoes (such as Ore-Ida®), thawed
3 skinless, boneless chicken breast halves, diced
1 small onion, chopped
1 green bell pepper, chopped
¼ cup chicken broth, or more as needed
1 pinch Montreal-style steak seasoning, or to taste
1 pinch garlic powder, or to taste
1 pinch seasoned salt, or to taste
1 bunch broccolini, chopped
1 cup shredded smoked Cheddar cheese

Steps:

  • Melt butter and olive oil together in a large frying pan over medium heat. 1 cup chicken, cooked and cubed
2 tablespoons heavy cream
