  • Drain the block of tofu, and freeze overnight. Thaw, and cut into quarters. Squeeze out any moisture by hand, then wrap in paper towels, and squeeze again. Crumble into a medium bowl.
  • Add celery and green onion to the tofu. Stir in mayonnaise, soy sauce and lemon juice until well blended.

The idea for this comes from a great restaurant I worked at. Tofu is cooked in a great marinade and served in a sandwich with cheddar. For me, it's comfort food.

1 tablespoon olive oil
1 teaspoon soy sauce
2 garlic cloves, crushed
1/2 lime, juice of
1 tablespoon honey
3 slices firm tofu
2 slices whole wheat bread
2 slices cheddar cheese
2 teaspoons mayonnaise
1 teaspoon mustard
lettuce (optional)
fresh basil (optional)
onion (optional)

Steps:

  • To make the marinade, combine the oil, soy sauce, garlic, lime juice (lemon juice can also be used), and honey. Mix it with a fork until combined.
  • Place the tofu in the marinade until ready to cook (this can be a few minutes or a few hours, it doesn't really matter).
  • Cook the tofu in a pan with a little of the marinade, no oil is necessary as it is already in the marinade. Cook till golden brown (or to your liking).
  • While the tofu is cooking, lightly toast the bread. Then spread the mayonnaise on one slice and the mustard on the other.
  • When the tofu is cooked, place it on one slice of bread, put the cheddar on top, and place it bread-side down in the pan. Place the lid on the pan to let the cheese melt.
  • When the cheese has melted, remove the sandwich, place any veggies on top of the cheese, and place the last piece of bread on top.
  • Serve warm!

1 pound firm tofu
¼ cup olive oil
½ teaspoon ground cumin
½ teaspoon chili powder
½ teaspoon dried oregano
2 cloves garlic, minced
¼ cup white wine vinegar
¼ cup dry white wine
10 slices whole wheat bread
¼ cup mayonnaise
5 Roma tomatoes, sliced
1 cup arugula
1 red onion, thinly sliced
salt and ground black pepper to taste

Steps:

  • Cut tofu into 10 thin slices. Set on a baking sheet, cover with another baking sheet, and weigh down with something heavy, such as a large can of food. Drain until excess water is removed, at least 30 minutes.
  • Heat olive oil in a small cast iron skillet over medium heat. Toast ground cumin, chili powder, and oregano in the hot oil until spices are aromatic, about 2 to 3 minutes.
  • Transfer oil and spice mixture to a saucepan over medium heat; stir in minced garlic, white wine vinegar, and white wine. Bring to a simmer, then remove marinade from heat.
  • Place drained tofu into a glass dish; pour marinade over tofu. Cover with plastic wrap; refrigerate for at least 8 hours.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Remove tofu from marinade; pat dry with paper towels and place on broiler rack. Broil on each side until skin is crisp, about 6 minutes per side.
  • To assemble, spread mayonnaise on one side of each slice of bread; place 2 tofu slices on 5 of the bread slices; top tofu with sliced tomato, arugula, red onion, salt, black pepper, and remaining slices of bread.

12 ounces firm tofu (Chinese-style)
1/2 teaspoon each ground cumin, chili powder and dried oregano
1/4 cup olive oil
1 medium clove minced garlic
1/4 cup white wine vinegar
1/4 cup dry white wine
4 thick slices whole wheat bread, lightly toasted
Chili mayonnaise (see below)
Sliced tomato
washed arugula and, optional: slices of red onion
Salt and freshly ground black pepper

Steps:

  • Cut tofu into 1-inch thick slices. Drain. Set them on a sheet, cover with another baking pan or cookie sheet and weight down with something heavy; drain for at least 1/2 hour to remove excess water. In a small cast iron skillet toast cumin, chili and oregano until they emit a lovely aroma. Remove to a nonreactive saucepan and add olive oil, garlic, vinegar and white wine. Bring to a simmer. Transfer drained and weighted tofu to a flameproof ceramic dish and pour marinade over tofu. Cover with plastic and refrigerate for a day at least or, for up to 3 to 4 days. Preheat the broiler. Remove marinated tofu, pat dry and broil, about 6 inches away from the heat until crispy on each side. Spread bread with mayonnaise; slice tofu in half to make 1/2-inch slices and set over mayonnaise. Top with tomato, arugula and onion if you wish. Spread second slice of toasted bread with chili mayo and cover sandwich.

1 apple, peeled and diced
1/2 cup chopped pecans

7 oz tofu
2 tablespoons soy sauce, divided
½ teaspoon garlic powder, divided
¼ teaspoon turmeric, divided
¼ cup vegan mayonnaise
¼ cup ketchup
2 hashbrowns, cooked
2 ciabatta rolls
sliced tomato, to serve
sliced avocado, to serve

Steps:

  • Remove tofu from package and drain. Wrap the tofu in paper towels and cover with a couple heavy books. Let sit for 10 to 15 minutes to remove excess water.
  • Cut tofu in half, reserving one half for a future recipe. Slice into 4 rectangles.
  • Add olive oil to pan over medium heat. Add the tofu rectangles, 1 tablespoon soy sauce, ¼ teaspoon garlic powder, and ⅛ teaspoon turmeric, and let brown for 3 to 4 minutes before flipping over. Repeat on other side with other half of seasonings.
  • When both sides are browned, transfer tofu to plate.
  • To make sauce, combine vegan mayo and ketchup in small bowl.

1 tomato, sliced
4 slices firm tofu
1 dash soy sauce

  • Preheat your oven's broiler.
  • Split the pita breads in half so that you have 4 round pieces. Spread mayonnaise on one half of each one, and tahini on the other half. To have on hand: baked seasoned tofu.
For the baked seasoned tofu:
1 1/2 tablespoons soy sauce
1 teaspoon minced ginger
1 small garlic clove, minced or puréed
1/4 teaspoon cumin seeds, lightly toasted or ground
Pinch of cayenne
2 tablespoons honey
1 teaspoon lime juice
1 tablespoon canola or grapeseed oil
2 tablespoons finely chopped cilantro
For the sandwich:
1 4-ounce slab baked marinated tofu
1 medium carrot, cut in half crosswise, then in thick lengthwise slices (1/4 to 1/3 inch); cut the narrow end in half
1 teaspoon extra virgin olive oil
1 teaspoon tahini
1 tablespoon chopped cilantro
2 heaped tablespoons kimchi (1.5 ounces)
1 5-inch square of focaccia, or 2 slices whole wheat country bread

Steps:

  • 1. Roast the tofu. Preheat the oven to 375 degrees. Whisk together the ingredients for the baked tofu. Line a small baking sheet with parchment. Pat the tofu dry with paper towels and dip into the marinade, making sure to coat both sides. Place on the baking sheet and bake 10 minutes, or until the edges are just beginning to color and the marinade sets on the surface of the tofu. Remove from the oven and allow to cool. Turn the heat up to 425 degrees. 2. Brush the carrot slices with the olive oil and place on a parchment-lined baking sheet. Place in the oven and roast for 15 to 20 minutes, turning the slices over halfway through. They should be lightly browned. Remove from the oven. 3. Spread the tahini on the bottom slice of bread or focaccia. Top with the tofu. Sprinkle the cilantro over the tofu and top with a layer of carrots. Top the carrots with the kimchi, then place the other half of the focaccia or the other slice of bread on top and press down. Cut in half and enjoy. Variation: Another Tofu Sandwich Kimchi is high in sodium and if that is an issue you might prefer this variation. Substitute Dijon mustard for the tahini and grated raw carrots for the roasted carrots. Omit the kimchi. Top the tofu with the grated carrots and sliced cucumbers or avocado, then add a handful of arugula or a few leaves of lettuce. Spread the top slice of bread with 2 heaped teaspoons of chermoula or Georgian cilantro sauce.
