Tomato-and-Herb Conserve image

Extend the summer by making these oven-dried tomatoes, packed in oil with herbs, to enjoy when the warm weather is gone. They're juicier and more versatile than their sun-dried cousins; serve them on pasta or crostini with goat cheese.

Yield 2 cups

Number Of Ingredients 6

1 pound cocktail tomatoes, halved
Kosher salt
1 cup extra-virgin olive oil, plus more if needed
2 small rosemary sprigs
1 clove garlic, sliced
2 small sage sprigs

  • Preheat oven to 375 degrees. Arrange tomatoes, cut-sides up, on a parchment-lined rimmed baking sheet; season with salt. Roast until tomatoes shrink and collapse slightly, about 1 hour. Let cool completely, then pack into a 2-cup-capacity jar.
  • In a small saucepan, combine oil, herbs, and garlic. Bring to a bare simmer over medium heat. Carefully pour mixture into jar, topping with more oil if necessary. ROAST TOMATO AND HERB SAUCE

Roast tomato and herb sauce image

This can be used in its original state on a pizza or in a soup or pureed to be used in tomato based recipes such as chilli con carne, bolognese sauce, tomato chicken curry etc.

Provided by bearnaise

Time 30m

Yield Serves 4

Number Of Ingredients 0

Steps:

  • Place all the ingredients in a roasting tin in a medium oven (temp 190)
  • Leave for half an hour or until it all looks molten red and smells lovely and tomatoey - do not let it brown
  • Puree if desired, removing the hard herbs like bayleaf and rosemary first, personally I can't bear to liquidise it and eat it like it is!
  • If you are not using it immediately, let it cool then freeze it. You can use a breadknife to carve pieces off and then put it back in the freezer if you don't want to use it all at once
  • This can be used with my chilli con carne recipe

TOMATO AND HERB SALAD

Tomato and Herb Salad image

Categories     Salad     Herb     Tomato     Side     No-Cook     Quick & Easy     Wheat/Gluten-Free     Buffet     Lime     Mint     Summer     Healthy     Vegan     Parsley     Gourmet     Sugar Conscious     Vegetarian     Pescatarian     Dairy Free     Peanut Free     Tree Nut Free     Soy Free     Kosher

Yield Makes 16 servings

Number Of Ingredients 11

For vinaigrette
1/4 cup fresh lime juice
1 teaspoon salt
1 teaspoon sugar
freshly ground black pepper to taste
1/2 cup extra-virgin olive oil
4 pounds large vine-ripened tomatoes (about 8)
1 cup packed flat-leafed parsley leaves
1 cup packed coriander leaves
1/2 cup thinly sliced mint leaves
1/2 cup thinly sliced scallions

Steps:

  • Make vinaigrette:
  • In a small bowl whisk together lime juice, salt, sugar, and pepper and add oil in a stream, whisking.
  • Cut tomatoes into 1/2-inch-thick slices and arrange decoratively on a platter. Drizzle tomatoes with about two thirds vinaigrette.
  • In a bowl combine herbs and scallions and toss with remaining vinaigrette.
  • Mound herb mixture on top of tomato slices.

Tips:

  • Choose ripe, flavorful tomatoes: The quality of your tomatoes will greatly impact the taste of your conserve. Look for tomatoes that are deep red and blemish-free.
  • Use a variety of herbs: Don't be afraid to experiment with different herbs to find a combination that you like. Some popular choices include basil, thyme, rosemary, and oregano.
  • Don't overcook the conserve: Overcooking the conserve will make it less flavorful and more likely to turn into a jam. Cook it just until the tomatoes have softened and the herbs have infused their flavor.
  • Sterilize your jars and lids: This will help to prevent bacteria from growing in your conserve and ensure that it lasts for a long time.
  • Process the jars in a boiling water bath: This will help to seal the jars and ensure that they are safe for storage.

Conclusion:

Tomato and herb conserve is a delicious and versatile condiment that can be used in a variety of dishes. It is easy to make and can be stored for up to a year. If you are looking for a way to use up your summer tomatoes, this is a great recipe to try.
