Grilled Corn and Tomato Salad with Thai Basil Vinaigrette Dressing image

Provided by Food Network

Categories     side-dish

Time 1h

Yield 4 servings

Number Of Ingredients 16

8 large ears corn
Kitchen twine
1 small or 1/2 large red onion, finely chopped
2 cups grape tomatoes, quartered lengthwise
4 to 5 large Thai basil leaves, roughly chopped
Kosher salt and freshly cracked black pepper
1/2 cup chopped Thai basil leaves
1/2 cup chopped cilantro leaves
1/4 cup lime juice
1/4 cup orange juice
1 tablespoon honey
2 teaspoons freshly grated ginger
1 teaspoon lime zest
1/2 teaspoon kosher salt
1/2 teaspoon fresh cracked black pepper
1/4 cup canola oil

Steps:

  • Preheat a grill to medium-high heat.
  • Salad: Peel back the corn husks, but do not remove them completely. Carefully pick off and discard the wispy silk threads that are attached to the corn. Pull the husks back over the ears and tie the ends closed with kitchen twine. Soak the corn in large bowl of cold water for 10 minutes. Drain the water, shake off the excess and put them on the grill for 15 minutes, turning every 3 to 4 minutes until the corn is tender. Remove them from the grill and let the ears cool to room temperature.
  • Vinaigrette: While the corn is cooling, prepare the dressing. Puree all the ingredients, except the canola oil, in a blender or food processor. After the mixture is well incorporated, slowly drizzle in the canola oil while the processor is still running. Blend for 30 seconds, then transfer the dressing to a bowl.
  • Assembly: Once the corn has cooled, cut the kernels off the cobs into a medium bowl and discard the cobs. Add the red onion and grape tomatoes and mix to combine. Drizzle in 1/2 cup of the Thai Basil Vinaigrette Dressing while lightly tossing the salad together. Reserve the remaining dressing. Gently stir in the basil leaves. Season the salad with salt and pepper to taste, and add more dressing, if desired. Serve slightly chilled on serving plates, using a slotted spoon to keep excess liquids in the bowl.

HEIRLOOM TOMATO SALAD WITH GRILLED CORN & BASIL VINAIGRETTE

HEIRLOOM TOMATO SALAD WITH GRILLED CORN & BASIL VINAIGRETTE image

Categories     Salad     Tomato

Yield 10-12 Servings

Number Of Ingredients 8

3 tablespoons Champagne vinegar or white wine vinegar
1 small garlic clove, minced
1/4 cup extra-virgin olive oil
1/4 cup finely chopped fresh basil
1 teaspoon fine sea salt
4 ears of corn in husks
1 1/4 pounds assorted heirloom tomatoes, cored, cut into 1/2-inch pieces
1 10-ounce container small heirloom cherry tomatoes

Steps:

  • Mix vinegar and garlic in bowl. Whisk in oil, then basil. Season with salt and pepper. Fill large bowl with water. Mix in 1 teaspoon sea salt. Add corn; soak 1 hour. Prepare barbecue (medium-high heat). Drain corn. Grill in husks until outside is very charred and corn kernels are tender, turning occasionally, about 25 minutes. Cool corn. Remove husks and cut kernels off cobs into large bowl. Add tomatoes. Toss with enough vinaigrette to coat. Season salad with salt and pepper.

Tips:

  • Choose ripe, flavorful tomatoes: The quality of your tomatoes will greatly impact the flavor of your vinaigrette. Look for tomatoes that are deep red and have a slightly sweet smell.
  • Use fresh basil: Fresh basil adds a bright, herbaceous flavor to the vinaigrette. If you don't have fresh basil, you can use dried basil, but the flavor will be less pronounced.
  • Use a good quality olive oil: The olive oil you use will also impact the flavor of the vinaigrette. Look for a fruity, extra virgin olive oil.
  • Whisk the vinaigrette vigorously: This will help to emulsify the oil and vinegar and create a smooth, creamy dressing.
  • Season the vinaigrette to taste: Add salt and pepper to taste, and feel free to experiment with other herbs and spices, such as garlic powder, onion powder, or dried oregano.
  • Let the vinaigrette rest for at least 30 minutes: This will allow the flavors to meld together and develop. If you're short on time, you can use the vinaigrette right away, but it will be even better if you let it rest for a while.

Conclusion:

Tomato basil vinaigrette is a versatile dressing that can be used on a variety of dishes, from salads to grilled vegetables. It's easy to make and can be customized to your liking. So next time you're looking for a light and refreshing dressing, give tomato basil vinaigrette a try. You won't be disappointed!
