SUN-DRIED TOMATO BOW TIE SALAD
A refreshing pasta salad that can also be the main dish. I created this salad once when I needed a potluck dish and was short on time, energy and wanted to use ingredients I had on hand. It was a big hit and the recipe was much requested.

Steps:
- Cook pasta ala dente and drain.
- Add remaining ingredients and stir gently.
- Chill.
- NOTE: I have also made this salad using diced pepperoni (about 1/2 cup) in place of the chicken.
- If you use the full 2 cups of chicken it is a great main dish salad, or if you prefer you can omit meat altogether and have it as a side salad.
- If your store carries two sizes of the bottled dressing, use the bigger size.
- I don't have any on hand at the moment to check the ounces.
- Sometimes I also add diced green pepper.

My sister Fran gave me this recipe years ago, no idea where it came from. It has become my standard offering at cook-outs, and always gets rave reviews!

Steps:
- Boil pasta in salted water until al dente. Drain.
- Combine dressing mix, vinegar, water and oil.
- Add tomatoes, scallions and cheese.
- Pour mix over cooled pasta.
- Chill at least 1 hour.
Tips:
- To save time, use a food processor to grate the Parmesan cheese.
- If you don't have a food processor, you can grate the Parmesan cheese with a microplane grater.
- If you don't have any basil on hand, you can use oregano or thyme instead.
- For a more flavorful salad, use sun-dried tomatoes instead of regular tomatoes.
- To make the salad ahead of time, simply prepare the dressing and store it in a jar in the refrigerator for up to 3 days. Then, when you're ready to serve, toss the dressing with the tomatoes, bow-tie pasta, and Parmesan cheese.

This tomato bow-tie salad is a simple and delicious salad that is perfect for a summer meal. It is light and refreshing, and the combination of tomatoes, bow-tie pasta, and Parmesan cheese is a classic.
