ROASTED COD WITH WARM TOMATO-OLIVE-CAPER TAPENADE
Steps:
- Preheat oven to 450 degrees F. Coat a baking sheet with cooking spray. Rub cod with 2 teaspoons oil. Sprinkle with pepper. Place on the prepared baking sheet. Transfer to the oven and roast until the fish flakes easily with a fork, 15 to 20 minutes, depending on the thickness of the fillet. Meanwhile, heat the remaining 1 teaspoon oil in a small skillet over medium heat. Add shallot and cook, stirring, until beginning to soften, about 20 seconds. Add tomatoes and cook, stirring, until softened, about 1 1/2 minutes. Add olives and capers; cook, stirring, for 30 seconds more. Stir in oregano and vinegar; remove from heat. Spoon the tapenade over the cod to serve.
Tips:
- Choose ripe, flavorful tomatoes. This will ensure that your tapenade has the best possible flavor.
- Use a variety of capers. Some recipes call for green capers, while others call for black capers. You can use a combination of both for a more complex flavor.
- Don't be afraid to experiment with different herbs and spices. Some common additions to tapenade include basil, oregano, thyme, garlic, and red pepper flakes.
- Make sure to chop the ingredients finely. This will help the tapenade to come together smoothly.
- Serve tapenade at room temperature. This will allow the flavors to meld together and develop.
Conclusion:
Tomato caper tapenade is a versatile condiment that can be used in a variety of ways. It can be spread on bread or crackers, used as a dip for vegetables or chips, or added to pasta or sandwiches. It's also a great way to use up leftover tomatoes.
With its bold and savory flavor, tomato caper tapenade is sure to be a hit at your next party or gathering. So next time you're looking for a quick and easy appetizer, give this recipe a try.
