Creamy Carrot, Tomato, and Ginger Soup image

Carrot-ginger soup and tomato bisque are lunchtime hall-of-famers on their own. Here, the best of both worlds is combined into this one creamy and comforting soup.

Provided by Lauryn Tyrell

Time 1h30m

Number Of Ingredients 9

12 ounces carrots, peeled and cut into 1-inch pieces (2 cups)
1 small sweet potato (6 ounces), peeled and cut into 2-inch pieces (1 cup)
1 can (28 ounces) whole peeled tomatoes, drained (juices reserved for another use)
1 tablespoon minced fresh ginger
6 tablespoons extra-virgin olive oil, divided, plus more for serving
Kosher salt and freshly ground pepper
1/2 white onion, finely chopped (3/4 cup)
1 tablespoon unsalted butter
Crusty bread, for serving

Steps:

  • Preheat oven to 375°F. In a 3-quart baking dish (such as a 9-by-13-inch), toss carrots, sweet potato, tomatoes, and ginger with cup oil. Season with salt and pepper. Roast until liquid has evaporated and vegetables have caramelized slightly, about 1 hour.
  • In a medium saucepan, heat remaining 2 tablespoons oil over medium. Add onion and a pinch of salt and cook, stirring occasionally, until lightly golden, 6 to 7 minutes. Add roasted vegetables with any accumulated juices and 3 cups water. Bring to a boil, then reduce heat to medium-low and simmer 10 minutes.
  • Transfer to a blender and let stand until no longer steaming, about 5 minutes. Add butter and blend until completely smooth. (If too thick for your taste, you can add more water, a few tablespoons at a time, until desired consistency is reached.) Season to taste and serve with crusty bread, topped with more pepper and oil.

4 large vine-ripened tomatoes, seeded and quartered
2 tablespoons olive oil, divided, or as needed
kosher salt to taste
½ onion, finely chopped
1 stalk celery, finely chopped
1 (32 fluid ounce) container vegetable broth
¼ cup fresh mint leaves
1 tablespoon table cream
1 teaspoon fresh mint leaves, or to taste

CORN SOUP WITH FRESH TOMATOES

Corn Soup with Fresh Tomatoes image

John Derian's dining table can always handle one more guest. So can his menu: He sticks to easy recipes, such as corn-and-tomato soup, which can feed a big group.

Provided by Martha Stewart

Categories     Food & Cooking     Soups, Stews & Stocks     Soup Recipes

Yield Makes 8 cups

Number Of Ingredients 9

2 ounces (4 tablespoons) unsalted butter
2 medium onions, diced (2 1/2 cups)
2 teaspoons fresh thyme
Coarse salt and freshly ground pepper
10 cups fresh corn kernels (from 8 large or 10 to 12 medium ears corn)
4 to 5 cups water
3 medium tomatoes, cut into 1/4-inch dice (3 cups)
1/4 cup shredded fresh basil
3 tablespoons extra-virgin olive oil, plus more for drizzling

Steps:

  • Melt butter in a stockpot over medium-high heat. Add onions, thyme, 1 teaspoon salt, and 1/2 teaspoon pepper, and cook until onions are translucent, about 5 minutes. Stir in corn and 4 cups water. Bring to a boil. Reduce heat, and simmer, covered, for 5 minutes.
  • Working in batches, pulse mixture in a food processor or blender until chunky (for a finer consistency, strain half of the mixture through a coarse sieve after pulsing). Thin with up to 1 cup water if desired. Reheat soup before serving. Toss together tomatoes, basil, and oil. Season with salt and pepper. Garnish soup with tomato mixture, and drizzle with oil.

Tips:

  • Choose ripe, flavorful tomatoes. This will ensure that your soup has the best possible flavor.
  • Use fresh or frozen corn. Canned corn can be used in a pinch, but it will not have the same flavor as fresh or frozen corn.
  • Use a variety of carrots. Different types of carrots, such as rainbow carrots or baby carrots, can add color and flavor to your soup.
  • Don't overcook the vegetables. You want them to be tender, but not mushy.
  • Season the soup to taste. Add salt, pepper, and other spices to taste.
  • Serve the soup with a garnish of fresh herbs, such as cilantro or parsley.

Conclusion:

This tomato, corn, and carrot soup is a delicious and healthy way to use up fresh summer produce. It's easy to make and can be tailored to your own taste preferences. Serve it as a light lunch or dinner, or as a side dish with grilled chicken or fish.
