I love sandwiches of all types but sometimes I just want veggies. This is satisfying even for a meat lover like myself. Other items that would be great on this sandwich would be shredded lettuces, bean sprouts, peppercini peppers and arugula. I just used what I had in my fridge.

TOMATO, CUCUMBER AND GUACAMOLE SANDWICHES

Categories     Sandwich     Garlic     Herb     Onion     Tomato     No-Cook     Picnic     Vegetarian     Quick & Easy     Lunch     Lime     Avocado     Cucumber     Chill     Healthy     Jalapeño     Bon Appétit     Vegan     Pescatarian     Dairy Free     Peanut Free     Tree Nut Free     Soy Free     Kosher

Yield Makes 4 servings

Number Of Ingredients 9

1/2 large avocado, peeled
1 tablespoon fresh lime juice
1 garlic clove, pressed
1 teaspoon minced jalape&;ntilde;o chili
8 slices good-quality whole wheat bread (each about 4x4 inches and 1/2 inch thick)
20 thin tomato slices
16 thin peeled cucumber slices
8 thin red onion slices
1 cup lightly packed fresh cilantro sprigs

Steps:

  • Using fork, mash avocado, lime juice, garlic and jalapeño in small bowl until almost smooth. Season guacamole with salt and pepper.
  • Divide guacamole among all bread slices, spreading evenly (guacamole will be thinly spread). Place 5 tomato slices atop guacamole on each of 4 bread slices. Top each with 4 cucumber slices, then 2 onion slices, then cilantro. Top with remaining 4 bread slices, guacamole side down, pressing lightly. Cut sandwiches in half. (Can be prepared 3 hours ahead. Wrap in plastic; chill.)

Tips:

  • Choose ripe, flavorful tomatoes. Look for tomatoes that are deeply colored and have no blemishes. Avoid tomatoes that are green or have bruises.
  • Use fresh, crisp cucumbers. Cucumbers should be firm and have no signs of wilting. Avoid cucumbers that are yellow or have soft spots.
  • Select ripe avocados. Avocados should be firm but slightly yielding to the touch. Avoid avocados that are too hard or too soft.
  • Use a good quality bread. The bread should be sturdy enough to hold the sandwich together, but not so thick that it overwhelms the other ingredients.
  • Add your favorite toppings. You can add cheese, bacon, sprouts, or any other toppings you like to your sandwich.
  • Serve immediately. Tomato cucumber avocado sandwiches are best enjoyed fresh. If you need to make them ahead of time, wrap them tightly in plastic wrap and refrigerate them for up to 2 hours.

Conclusion:

Tomato cucumber avocado sandwiches are a delicious and refreshing summer meal. They are easy to make and can be customized to your liking. With a few simple ingredients, you can create a sandwich that is both satisfying and nutritious. So next time you're looking for a quick and easy lunch or dinner, give this recipe a try. You won't be disappointed!
