TOMATO GINGER JAM

Categories     Condiment/Spread     Tomato     Spring     Gourmet

Yield Makes about 1 1/4 cups

Number Of Ingredients 11

1/4 cup minced shallot
1 tablespoon finely grated peeled fresh ginger
1 large garlic clove, minced
3/4 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon dried hot red pepper flakes
2 tablespoons unsalted butter
1 tablespoon sugar
1 1/2 pounds plum tomatoes, seeded and finely chopped
1 1/2 tablespoons fresh lime juice
2 tablespoons finely chopped fresh cilantro

Steps:

  • Cook shallot, ginger, garlic, salt, black pepper, and red pepper flakes in butter in a 10-inch heavy skillet over moderately low heat, stirring, until shallot is softened, about 5 minutes. Add sugar and cook, stirring, until dissolved. Add tomatoes and simmer over moderate heat, stirring occasionally, until thickened, 10 to 15 minutes.
  • Cool jam to room temperature, then stir in lime juice and cilantro.

Tips:

  • Choose ripe, flavorful tomatoes: The quality of your tomatoes will greatly impact the taste of your jam, so make sure to use the best tomatoes you can find. Choose tomatoes that are fully ripe, with a deep red color and no blemishes.
  • Use fresh ginger: Fresh ginger has a more vibrant flavor than ground ginger, so it is the best choice for this jam. Peel and grate the ginger before using.
  • Add a little bit of heat: A pinch of cayenne pepper or a few drops of Sriracha sauce can add a nice touch of heat to the jam. Be careful not to add too much, though, as you don't want to overpower the other flavors.
  • Let the jam cool completely before canning: This will help to prevent the jars from breaking when you seal them.
  • Store the jam in a cool, dark place: Once the jam is canned, it can be stored in a cool, dark place for up to a year.

Conclusion:

Tomato ginger jam is a delicious and versatile condiment that can be enjoyed in many different ways. It can be spread on toast or crackers, used as a dipping sauce for chicken or fish, or even added to yogurt or oatmeal. No matter how you choose to enjoy it, tomato ginger jam is sure to please your taste buds. So next time you have a surplus of tomatoes, give this easy recipe a try!
