Tips:

  • For the best flavor, use fresh, ripe tomatoes. If you can't find fresh tomatoes, you can use canned diced tomatoes, but be sure to drain them well before using.
  • If you don't have any gorgonzola cheese on hand, you can substitute another blue cheese, such as Roquefort or Stilton.
  • Be careful not to overcook the pasta shells. They should be cooked al dente, or slightly firm to the bite.
  • To make the pasta shells easier to fill, use a piping bag fitted with a large star tip.
  • If you don't have any heavy cream on hand, you can substitute milk or half-and-half.
  • Serve the pasta shells immediately, while they are still hot and the cheese is melted.
