TOMATO JELLY

This was my late Mother in Law's recipe. She made this every fall and everyone couldn't wait for it. I don't know where else it originated from but I just know it's a very old recipe. I hope you enjoy it as much as we always did when Mom made it.

Time 50m

Number Of Ingredients 5

4 c tomatoes--skinned and chopped up
4 c granulated sugar
a few whole cloves (very few)
1/2 lemon (sliced very thin)
1 pkg liquid fruit pectin

Steps:

  • 1. Skin and chop tomatoes and place in pot with the sugar, few cloves (like 3 or 4)and lemon slices, cooking on a medium heat about 20 minutes or so, until thickened. Watch it closely so it doesn't burn, stirring constantly.
  • 2. Fill small jars that have been sterilized with the hot jelly, wipe off the rims and apply the seals and lids. Place on counter to cool and listen for them to seal.
  • 3. I added a package of pectin because, if I remember right, it is a very thin consistency, like almost too thin and it needs to be thickened up a bit.
  • 4. Enjoy !!

A deceiving raspberry pepper jelly made from green tomatoes! We serve this with cream cheese for an appetizer, but it is also good over grilled fish or chicken.

Time 45m

Yield 100

Number Of Ingredients 5

5 cups finely chopped green tomatoes
4 cups white sugar
2 cups frozen raspberries
2 jalapeno peppers, finely chopped
1 (6 ounce) package raspberry-flavored gelatin mix (such as Jell-O®)

Steps:

  • Combine green tomatoes, sugar, raspberries, and jalapeno peppers together in a saucepan; cook and stir until sugar is dissolved and raspberries and tomatoes are broken down, about 15 minutes. Remove saucepan from heat and stir in gelatin mix until well blended.
  • Pour tomato-raspberry mixture into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack tomato-raspberry mixture into hot, sterilized jars, filling to within 1/4-inch of the top. Run a knife or thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

GREEN TOMATO AND JALAPENO JELLY

Green Tomato and Jalapeno Jelly image

Every year about this time (November), I wonder what new thing I can do with the green tomatos still growing in my garden. With the freezing temps, I know I have to bring in all these "greenies" and use them somehow. I decided why not make jelly??? Since I love pepper jelly, I incorporated the idea I use for pepper jelly and...

Time 50m

Number Of Ingredients 6

4 c peeled green tomatoes
4 medium jalapeno peppers, seeded
1/4 c cider vinegar
1 Tbsp chopped fresh ginger
3 c white sugar
6 oz lemon jello mix (powder)

Steps:

  • 1. Add chopped tomatos, jalapenos, vinegar and ginger to a food processor and pulse until you have a fine grind.
  • 2. Pour mixture into a saucepan and add the sugar. Stir well with a wooden spoon to combine ingredients.
  • 3. Bring mixture to a boil (Med/High heat), then reduce to medium and simmer at a low boil for approximately 20 minutes, stirring often.
  • 4. Remove from heat and stir in the powdered jello mix. (Use a whisk to ensure even mixing)
  • 5. Pour hot mixture into glass jars of your choice and allow the mixture to cool. (I used three pint ball jars). Place in fridge for at least an hour to allow the mixture to "jelly up".

Tips:

  • Use ripe, flavorful tomatoes: The quality of your tomatoes will greatly impact the flavor of your jelly. Choose ripe, in-season tomatoes that are free of blemishes and bruises.
  • Remove the skins from the tomatoes: Peeling the tomatoes will help to create a smoother jelly. You can peel the tomatoes by hand or use a food mill.
  • Use a low-sugar pectin: Pectin is a natural thickener that helps to create a jelly-like consistency. If you are using a low-sugar pectin, you will need to cook the jelly for a longer period of time to reach the desired consistency.
  • Use a candy thermometer: A candy thermometer is essential for making tomato jelly. It will help you to accurately measure the temperature of the jelly so that you can know when it is done.
  • Process the jelly in a hot water bath: Processing the jelly in a hot water bath will help to seal the jars and prevent spoilage. Be sure to follow the instructions in your recipe carefully.

Conclusion:

Tomato jelly is a delicious and versatile condiment that can be enjoyed in many ways. It can be used as a spread for sandwiches or crackers, served as a side dish with meat or fish, or even used as a glaze for roasted vegetables. If you are looking for a new and exciting way to enjoy tomatoes, be sure to give tomato jelly a try.
