2 tablespoons olive oil
½ cup chopped onion
2 stalks celery, chopped
1 large carrot, finely chopped
½ cup uncooked long-grain rice
1 (29 ounce) can diced tomatoes
2 cups chicken broth
salt and pepper to taste
¾ pound scallops
¼ cup chopped fresh basil

Steps:

  • Heat oil in a large saucepan over medium heat. Add the onion, celery, and carrot; cook and stir vegetables until they begin to soften, approximately 2 to 3 minutes. Add rice and cook, stirring until rice is evenly coated in oil, 1 to 2 minutes. Stir in undrained tomatoes, chicken broth, and salt and pepper. Bring to a boil. Reduce heat, cover, and simmer for 15 minutes.
  • Rinse the scallops, and if large cut scallops in half. Stir the scallops into soup, and cover. Continue to simmer until the rice is tender and the scallops are opaque, approximately 5 to 10 minutes.
  • Season to taste with salt and pepper. Stir in the basil, and serve.

  • I like to make an unfussy rice and tomato soup (for myself, too, sometimes, especially when I'm trying to balance out my characteristic gluttony) by diluting a good, bought tomato sauce with water, adding a handful or so of basmati rice, and cooking until the rice is tender, about 8 to 10 minutes. With children it makes more sense to leave the soup fairly solid, but you can add water from a boiled kettle toward the end of cooking time if you want a thinner soup rather than liquid tomato-rice stew. Grate Parmesan on top and eat - with bibs.

3 cups water
1 3/4 cups reduced-sodium chicken broth (14 fl oz)

Steps:

  • Cut a shallow X in bottom of each tomato with a sharp paring knife. Blanch tomatoes in batches of 2 or 3 in a 5- to 6-quart pot of boiling water 10 seconds, transferring with a slotted spoon to a bowl of ice and cold water to stop cooking.
  • Peel tomatoes, then halve crosswise. Squeeze halves gently, cut sides down, over a sieve set over a bowl to extract seeds and juices, then press on seeds and discard them. Reserve juice and tomatoes.
  • Cook onions, carrot, celery, garlic, zest, thyme, red-pepper flakes, fennel seeds, and bay leaf in oil in a 2 1/2- to 3-quart heavy saucepan over moderate heat, stirring occasionally, until vegetables are softened, about 5 minutes.
  • Add tomatoes with reserved juice, tomato paste, water, chicken broth, salt, pepper, saffron, and 1 teaspoon sugar, then simmer, uncovered, stirring and breaking up tomatoes with a spoon occasionally, 20 minutes. 2 tablespoons olive oil
1 large onion, sliced
1 teaspoon dried basil
1/2 teaspoon salt

2 (14 ounce) cans tomatoes (best brand possible)
3 tablespoons tomato paste
3 3/4 cups chicken broth, divided
4 tablespoons flour
1 teaspoon sugar
1 cup cream (or whole milk for a lighter version) or 1 cup half-and-half (or whole milk for a lighter version)
1 cup long grain rice

Steps:

  • Melt butter in a saucepan and add olive oil, onion, basil and salt and pepper.
  • Stir and cook onions for 3-4 minutes.
  • Add tomatoes and tomato paste.
  • Gently simmer, uncovered, 10 minutes.
  • Blend 5 T chicken broth with flour. Add to the tomato mixture, stir and add remaining broth.

4 slices bacon, minced
1 small onion, diced
6 ripe tomatoes or 32 ounces canned tomatoes
1 1/2 teaspoons sugar
1 1/2 lbs mild Italian sausage

1 cup uncooked long-grain rice
1/2 cup parmesan cheese
1 tablespoon butter
salt and pepper
fresh parsley, minced

Steps:

  • Saute bacon and onion together until lightly browned. Drain off fat.
  • In soup pot, add peeled and diced fresh tomatoes or break up canned tomatoes. Add sugar, then bacon/onion mixture. Simmer for 10 minutes.

Ever wonder what to do with your leftover rice from Chinese food? This is a fairly ad hoc recipe, open to throwing in whatever you tend to like. Measures are fairly fluid.

1/2 cup cooked white rice
1 (10 3/4 ounce) can condensed tomato soup (Campbells is best)
1/4 cup frozen peas
2 cooked hot dogs, sliced
1/4 cup of shredded mozzarella cheese
1 tablespoon salsa
1 tablespoon sour cream

Steps:

  • In a medium saucepan, combine water & condensed soup, frozen peas & hotdog pieces. (You can cook the hotdogs in the microwave to save time). Heat over medium-low heat until peas are tender (about 10 minutes). Remove from heat. Stir in mozarella cheese until melted. Pepper to taste.
  • Add a dollop of salsa & sour cream for a spicier flavor.
  • Please note that, if there are left-overs, the rice will absorb most of the soup, so you will have to add more water.

1 cup water
½ cup uncooked long grain white rice
2 large carrots, thinly sliced
1 ½ teaspoons ground cumin
1 teaspoon chili powder

½ teaspoon black pepper
1 (15 ounce) can garbanzo beans

Steps:

  • Place the diced tomatoes with juice and water in a large pot, and bring to a boil. Mix in the rice and carrots, and season with cumin, chili powder, red pepper, salt, and black pepper. Reduce heat to low, cover, and simmer 25 minutes, or until rice and carrots are tender.
  • Mix the garbanzo beans into the pot, and continue cooking 5 minutes, until heated through.

2 teaspoons olive oil
3 1/2 cups onions, diced
3 medium garlic cloves, finely chopped
1 1/4 lbs wild mushrooms, such as shiitake, oyster, chanterelle, morel, chopped (recommend using a mix of mushrooms)
4 celery ribs, with leaves chopped
2 cups sun-dried tomatoes, dry-packed, cut into matchstick size
8 cups nonfat beef broth or 8 cups vegetable broth
1/4 cup no-added-salt tomato paste
1 teaspoon crushed red pepper flakes
salt, to taste
1 pinch cayenne (optional)
1 cup wild rice, uncooked
green onion, finely chopped (optiona)

Steps:

  • In a large pot, heat the oil over medium-high heat. Cook the onions until golden brown, about 8 minutes, stirring occasionally.
  • Stir in garlic; cook for 2 minutes.
  • Stir in the mushrooms and celery; cook for 5 minutes, stirring occasionally.
  • Stir in the tomatoes. Reduce the heat to medium low.
  • Add the beef broth, tomato paste, red pepper flakes, salt, and cayenne. Cook for 1 hour, reducing the heat to low when the soup starts to boil, stirring occasionally.
  • Meanwhile, cook the wild rice using the package directions, OMITTING the salt and margarine. Be careful not to overcook.
  • Just before serving, stir the rice into the soup. Garnish with green onions.
