1 cup diced onion
3 cloves garlic, minced
2 tablespoons chili powder, or to taste
1 teaspoon ground cumin
¼ cup water
4 cups chopped fresh tomatoes
1 (15 ounce) can kidney beans, drained and rinsed
salt to taste
1 (10 ounce) package frozen chopped spinach, thawed and drained
4 (10 inch) flour tortillas
1 ripe avocado, sliced
4 tablespoons sour cream
4 tablespoons salsa

Steps:

  • Heat oil in a large skillet on medium-high heat. Saute onion and garlic for 5 minutes. Stir in chili powder and cumin, and cook 1 minute. Stir in water, tomato, kidney beans and salt. Bring to a boil, then reduce heat and simmer for 20 minutes.

This is something I just made after kind of combining a few other recipes I found while trying to find a way to use up some fresh spinach I had. It could definitely still use some work, but I just wanted to post the basics. If you have any ideas, let me know!

2 tablespoons garlic, minced
1/3 cup onion, chopped
1 cup fresh Baby Spinach, washed and stemmed
1 (15 ounce) can cannellini, drained and rinsed (white kidney beans)
1 (15 ounce) can diced tomatoes
ground black pepper, to taste (optional)
3 tablespoons water

Steps:

  • In non-stick skillet (10 inches or so), over medium heat, saute garlic and onion until tender.
  • Add spinach and water to skillet, reduce heat to medium-low, cover, and cook just until spinach is wilted (about 3 minutes).
  • Add beans and tomatoes (as well as pepper and any other optional spices), cover, and simmer 15-20 minutes.
