This recipe can be prepared on the stove top, or in the oven or crock pot. I decided to post it since it is a bit different than the swiss steak recipes I have seen on here. Just wait until you smell this stuff cooking!

1 1/2 lbs beef round steak, cut 3/4 inch thick
3 tablespoons flour
1 teaspoon salt
1 teaspoon dry mustard
1/4 teaspoon pepper
3 teaspoons garlic powder
2 teaspoons shortening
1 (16 ounce) can tomatoes
1 small onion, sliced
1 stalk celery, sliced
2 medium carrots, sliced
1 tablespoon Worcestershire sauce
1/4 cup red wine
1/4 cup water
hot cooked noodles
mashed potatoes or hot cooked rice

Steps:

  • Cut meat into 6 serving pieces.
  • Combine flour, salt, mustard, pepper, and garlic powder.
  • Put 2 T. of the flour mixture into the meat.
  • Brown the meat in the shortening on both sides.
  • Drain off excess fat.
  • Add undrained tomatoes, onion, celery, carrots, Worcestershire sauce and cooking wine.
  • Cover and simmer for 1 1/4 hours or until meat is tender.
  • Remove meat to a serving platter and keep warm.
  • Combine 1/4 water and the remaining flour mixture.
  • Stir into tomato mixture until thick and bubbly.
  • Pass with meat.
  • Serve meat and sauce with hot cooked noodles or rice.
  • Crock pot directions:.
  • Prepare swiss steak as above except cut meat to fit your crock pot.
  • After browning meat, transfer to crock pot.
  • Stir remaining flour into pan drippings in the skillet.
  • Stir in the remaining ingredients and cook until thick and bubbly.
  • Pour over meat in the crock pot.
  • Cook on low for 8 to 10 hours.

4 boneless skinless chicken breast halves
4 slices swiss cheese
1 (10 1/2 ounce) can condensed cream of chicken soup
1 (10 1/2 ounce) can condensed cream of mushroom soup
1 cup chicken broth
1/4 cup milk
2 -3 cups Stove Top stuffing mix, dry
1/2 cup melted butter
salt and pepper

Steps:

  • Place chicken breasts in crock pot. Pour chicken broth over chicken breasts. Season chicken with salt and pepper. Put one slice of swiss cheese on each breast.
  • In a separate bowl, combine both cans of soup and milk. Pour soup mixture evenly over chicken breasts. Sprinkle stuffing over entire top of dish. Drizzle melted butter on top of stuffing. Cook on low for 6-8 hours or on high for 4 hours.

Brushing the bones with tomato paste then browning in the oven firstly then combined with the slow cooking crockpot method will produce the most flavorful richest beef broth --- I usually prepare the ingredients early in the morning, by late evening you will have a wonderful rich beef broth, or you may cook overnight --- the stock may be frozen after cooling, if you don't have a crock pot you may certainly simmer this over very low heat on top of the stove, it will still be delicious! The more bones you use the richer your stock will be, so use lots!

7 -10 beef bones with marrow (or use any beef bones with a little meat left on them)
6 ounces tomato paste
2 onions, chopped (leave the skin on onions)
2 carrots, peeled and chopped
2 tablespoons dried parsley flakes (optional)
8 -10 black peppercorns
2 teaspoons salt (or to taste)
cold water (enough to cover the bones)

Steps:

  • Place the bones on a greased baking sheet and brush liberally with tomato paste (use only tomato paste not tomato sauce).
  • Bake at 350 degrees F turning once during baking.
  • Bake for about 25 minutes on each side or until browned.
  • Place in the crock pot or large stock pot along with remaining ingredients, then add in enough water to cover.
  • Cover and cook on low for 12-24 hours OR on HIGH for 6 hours (if cooked on high setting the stock will be lighter in color and less concentrated) or if cooking on the stove top simmer on lowest heat for about 4-6 hours.
  • Remove from crock pot or stock pot; strain and refrigerate.
  • The stock will keep well for 4-5 days or may be frozen.
  • Note: veal bones may be replaced for beef bones.
  • **Note** you may certainly use more than the amount stated for beef bones, the more used then the richer the stock.

2 (15 ounce) cans of hormel chunky chili with beans
1 (12 ounce) can hunts tomato paste
4 roma tomatoes, cut into large chunks (the small, bright red ones)
1/2 small yellow onion, finely grated
2 dashes Tabasco sauce
1 dash salt
2 dashes black pepper
2 dashes red peppers
1 dash garlic salt
3 dashes cinnamon (trust me, without it the chili will be too spicy)
1/2 cup hot water

Steps:

  • Basically just separate the ground beef so it is loose and dump all the other ingredients on top of it in the crock pot(or large pot on a burner set to low heat); mix well.
  • Cover and leave in crock pot on low for 6 (give or take a little is fine) hours.
  • If making on stove top reduce cook time to 4 hours.
  • I top a big bowl of this with oyster crackers and sharp cheddar cheese, but it can be served over spaghetti noodles if you prefer.

1 tablespoon ground coriander
1 tablespoon smoked paprika

1/2 of an onion (White, Yellow or red, your choice)
1 cup chicken stock, from a box
1/2 cup raisins (if you want, you can use more)
1/2 cup prune (if you want you can use more)
couscous (optional, any flavor you want)

Steps:

  • Super Easy:.
  • Olive Oil in pan on high heat.
  • Add chopped onions and sautee a little.
  • Add chicken.
  • Mix a bit.
  • Reduce heat and add all the spices and mix a little.
  • Count to 60 so let the spices warm up a little.
  • After 1 minute has passed, add chicken stock, prunes and rasins and stir a bit.
  • Cover and simmer for about 15 minutes.
  • Uncover, stir a bit again and simmer another 5 minutes until the stock has reduced a bit and it's not so runny.
  • If you are using couscous, put the cous cous on a serving plate first then pour this chicken dish over the couscous which will absorb any loose liquid.

3 lbs beef simmering beef short ribs
1 tablespoon vegetable oil
2 cups button mushrooms
2 onions, chopped
3 garlic cloves, minced
2 carrots, diced
1 tablespoon crumbled dried rosemary
3/4 teaspoon salt
1/2 teaspoon pepper
1 (28 ounce) can diced tomatoes, 796 ml
3/4 cup red wine (or 3/4 cup beef stock and 1 tbsp. wine vinegar)
2 tablespoons tomato paste
1/4 cup all-purpose flour
2 tablespoons balsamic vinegar or 2 tablespoons wine vinegar
1/3 cup water
2 tablespoons chopped fresh parsley

Steps:

  • In measuring cup, pour boiling water over porcini mushrooms; let stand for 20 minutes. Strain, reserving liquid. I like to strain the liquid through a paper towel lined sieve, because of the sand in the liquid from the mushrooms. Set mushrooms and liquid aside.
  • Cut ribs into 2 bone pieces. Broil, turning once, until browned, 5 minutes. Place in slow cooker.
  • In skillet, heat oil over medium high heat; sauté porcini and button mushrooms, onions, garlic, carrots, rosemary, salt and pepper until softened, 5 minutes. Scrape into slow cooker. Add tomatoes.
  • Whisk together soaking liquid, wine and tomato paste; pour into slow cooker. Cover and cook on low for 7 to 8 hours or until meat is tender. Skim off fat.
  • In small bowl, whisk together flour, vinegar and 1/3 cup water; whisk into slow cooker. Cover and cook on high for 15 minutes or until thickened. Stir in parsley. Makes 6 to 8 servings.
  • VARIATION: Stove Top Short Ribs in Red Wine Sauce: Follow recipe as directed, using Dutch oven instead of slow cooker; cover and simmer over medium low heat until ribs are tender, about 2 hours. Skim of fat. Reduce flour to 2 tablespoons and water to ¼ cup; whisk into pan and simmer until thickened, about 5 minutes. Stir in parsley.

Add the vinegar and oil before serving. I double or triple the recipe and freeze them in 2 cup portions to use in recipes that call for a can of black beans. I also serve them sometimes with salsa, cheese and sour cream if I don't have the red pepper or jalepenos, as I always have salsa on hand. **PLEASE NOTE** Cooking time is based on original recipe instructions below and not on my slow cooker method.
