2 tablespoons olive oil, divided
1 pound boneless skinless chicken breasts, cut into 1-inch cubes
2 teaspoons Italian seasoning, divided
1/2 teaspoon salt
1/4 teaspoon pepper
1 large onion, chopped
1 habanero pepper, seeded and finely chopped
3 garlic cloves, minced
1 can (14-1/2 ounces) fire-roasted diced tomatoes, drained
2 cups heavy whipping cream
1/2 cup shredded Italian cheese blend
1/3 cup chopped fresh basil

10 dried guajillo chilies, stemmed, seeded and deveined
3 garlic cloves
Olive oil
2 tablespoons fresh lemon juice
1 1/2 teaspoons Sriracha hot sauce
1/2 teaspoon chili flakes
Salt
Sugar
1 slice stale white bread, grated on box grater
1 tablespoon butter
1 garlic clove, smashed
Pinch dried thyme
1 chicken about 3 1/2 pounds, quartered
Salt
freshly ground pepper
1 cup plain yogurt
Olive oil
Fresh lemon juice
1 head frisée, chopped
1/2 head Treviso radicchio, sliced

Steps:

  • Make the guajillo vinaigrette: soak guajillo chiles in warm water to cover overnight. The next day, scrape chili from skin and chop ½ cup flesh, discarding skin. In small saucepan over very low heat, cook garlic in 1 tablespoon olive oil until soft. Remove garlic and mash to a paste; combine with chopped guajillo, ½ cup olive oil, lemon juice, Sriracha, chili flakes and salt and sugar to taste.
  • Make the bread crumbs: In small heavy skillet over low heat, cook bread crumbs in butter with garlic and thyme, stirring occasionally, until golden; discard garlic.
  • Prepare outdoor grill. Season chicken with salt and pepper and grill over medium coals (turning frequently) until cooked through, 30 to 45 minutes. Transfer chicken to platter and let rest 10 minutes. Cut breasts in half and split drumsticks from thighs; dress with guajillo vinaigrette.
  • Mix yogurt with olive oil, lemon juice, salt and pepper to taste; dollop on 4 plates. Arrange 2 pieces chicken on each plate. Toss frisée and radicchio with olive oil, lemon juice, salt and pepper to taste; mound next to chicken and sprinkle with bread crumbs.

This sauce is the invention of Rich Torrisi and Mario Carbone, of Torrisi Italian Specialties in NYC, and is all over the food blogs (Pinterest, Food52 just to name a few). What drew my attention is that Food52 mentioned jarring it and giving as gifts... What a fab idea! I didn't realize I'd fall in love myself and have to triple the recipe! It's a creamy, spicy, heavenly spread that lends itself to a million things - roasted meats and chicken, eggs in any form (fried, scrambled, fritatta), tossed with grilled shrimp to top a salad (or for an appetizer), stirred into cooked greens or a soups - stews - beans. Serve as a dip with toasted pita or a rustic corn chip, or even use as a sandwich spread. The uses are endless, and delicious. This sauce will keep up to 6 months in the fridge, if it lasts that long.... Enjoy!

4 ounces pickled peppers
2 ounces roasted red peppers
1 ounce tomato paste (or 2 oz. crushed tomato for a looser, thinner version of the sauce)
1/4 cup olive oil (extra-virgin is always best)
1/4 teaspoon red chili pepper flakes
1/4 teaspoon dried oregano
1/4 teaspoon sugar (I prefer brown, but white is fine too)
salt (please taste the sauce first, many pickled peppers are plenty salty!)
1 tablespoon garlic, minced (not in the original recipe, but I love the extra dimension it adds)

Steps:

  • When it comes to the pickled peppers, B and G hot cherry peppers are suggested by Torrisi, although the pickled jalapenos from the grocery store would be great too. Throw in a chipotle pepper for a smoky version of the sauce. Play with it!
  • Combine all ingredients in a food processor or blender, and mix until desired texture is reached. Torrisi's makes it "slightly smooth" -- I like mine pureed quite finely.
  • If jarring for edible gifts, I like to use the jam jars that allow you to insert a small square of fabric (I like using red-checked gingham, since it looks so Italian) and a tag with the recipe or a list of sauce uses.
