1 teaspoon kosher salt
2 sticks unsalted butter, sliced, frozen
7 tablespoons ice cold water
2 teaspoons distilled white vinegar
2 teaspoons kosher salt

½ teaspoon dried sage
½ teaspoon ground cinnamon

¼ teaspoon freshly grated nutmeg

1 pinch cayenne pepper
1 large russet potato, peeled, quartered
1 teaspoon kosher salt
1 tablespoon butter
1 large onion, finely chopped

4 cloves garlic, crushed

1 pound ground pork
1 pound ground beef
1 cup potato cooking water, plus more as needed
1 large egg
1 tablespoon water

Steps:

  • Place flour, salt, and frozen butter slices into the bowl of a food processor. Pulse on and off until butter is about the size of peas, about 30 seconds. Stir vinegar into cold water; drizzle water/vinegar into the flour mixture. Pulse on and off until mixture is crumbly and holds together when you pinch a piece off, about 10 seconds. If dough isn't pressing together, drizzle in another teaspoon of water.
  • Transfer mixture to a work surface. Press it together until it becomes a lump of dough. Wrap in plastic wrap. Refrigerate until chilled, at least 1 hour.
  • Mix salt, pepper, thyme, sage, cinnamon, ginger, nutmeg, allspice, mustard, clove, and cayenne together in a small bowl.
  • Place potato quarters in a saucepan; cover with cold water. Add 1 teaspoon kosher salt. Bring to a boil over high heat; reduce heat. Simmer until cooked through, 10 to 15 minutes. Scoop out potatoes and transfer to a bowl; save cooking liquid. Mash potatoes with a potato masher.
  • Melt butter in a skillet over medium heat. Add chopped onion and a pinch of salt. Cook and stir until onions turn golden, 10 to 15 minutes.
  • Stir garlic, celery, and spice blend into the skillet with onions. Stir until onion mixture is evenly coated with the spices, about 30 seconds. Add ground beef and ground pork. Ladle about 3/4 cup of the potato cooking liquid into the skillet.
  • Cook and stir until meat is browned and has a very fine, almost pastelike texture. Continue cooking, stirring occasionally, until meat is tender and most of the liquid has evaporated, about 45 minutes. Stir in mashed potatoes. Remove from heat and cool to room temperature.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Divide chilled dough into 2 pieces, one just slightly larger than the other. Roll the larger piece out into a 12-inch circle on a lightly floured work surface. Place in a 9-inch deep dish pie plate. Roll top crust out into a circle about 11 inches in diameter. Cut small slits in the top crust to allow steam to escape.
  • Fill bottom crust with the meat mixture; smooth out the surface. Whisk egg and water together to make egg wash. Brush edges of the bottom crust with egg wash. Place top crust on the pie and press lightly around the edges to seal. Trim excess dough from the crust. Crimp the edges of the crust. Brush entire surface of the pie with egg wash.
  • Place in preheated oven. Bake until well browned, about 1 hour. Let cool to almost room temperature before serving.

My Mom's Cretons (Aka Gorton) and Tourtiere image

There are as many recipes for Cretons as there are folks making it in Quebec. This recipe is my adaptation of my Family's recipe. Note; it does not contain milk.

3 lbs ground pork butt (or ground pork)
1 medium onion (chopped fine)
1 tablespoon allspice
1/2 teaspoon clove
1/4 teaspoon cinnamon
2 cups water (you may not need it all)
1/8 teaspoon pepper
1/2 teaspoon salt

Steps:

  • If your meat is too lean, cut up 1/4-1/3 pound Salt Pork, and render into lardons. Remove the salt pork bits, then continue the recipe, omitting the salt. Do not use bacon for the extra fat, bacon is smoked. You can use Lard, 1-2 T, in a pinch.
  • Put all ingredients into a large sauce pot, just covering by an inch with the water.
  • Mix together.
  • Simmer on low, stirring frequently for 3-4 hours.
  • Add water as needed to keep moist and from sticking.
  • After the allotted cooking time you should have simmered the mixture down till there is about an inch of combined fat and water.
  • Taste to check the seasonings. If your spices are old, you may need to re-spice the mixture
  • (with the same amounts), then cook out the raw taste a bit.
  • Transfer to a bowl to cool, stirring to keep fat suspended in meat.
  • Serve warm on toast, or cold for sandwiches.
  • For Tourtiere mix the same mixture with 3 0r 4 mashed (dry) potatoes,
  • allowing them to suck up the moisture.
  • Allow to cool, and ladle into pre-pared pie crusts.
  • Egg wash and bake to specifications.

1 large baking potato
1 large onion, minced
½ teaspoon salt
½ teaspoon ground black pepper

1 recipe pastry for a 9 inch double crust deep dish pie
1 egg
¼ teaspoon paprika

Steps:

  • Bake the potato until done, 30 - 45 minutes in a preheated 400 degrees F (205 degrees C) oven. Peel and mash the potato.
  • Place the potato, ground pork, onion, spices and water in a large frying pan and simmer until very thick, for about one hour.
  • Meanwhile, prepare your pastry.
  • Line a deep-dish pie plate with pastry. Spoon in filling, spreading evenly. Cover with top crust.
  • Brush with beaten egg and sprinkle with paprika, if desired. Cut steam vent. Bake for 50 minutes at 350 degrees F (175 degrees C). If edges brown too fast, cover with a strip of foil. Serve warm.

Tourtière is a French Canadian meat pie which is traditionally served at Christmas. It may be made from pork, beef or a combination of meats sometimes including veal. Different regions in Quebec have their own traditional recipes. Some regions use game such as hare or duck rather than beef and pork. The pies should not have too much filling as they are just a part of the whole traditional Christmas dinner. It's usually served with tomato ketchup. This recipe is the creation of Mme Jehane Benoit, a famous Quebec cooking expert who received the Order of Canada for her contributions to Canadian cuisine. 1 lb ground beef (or combination of beef and pork, or beef, pork & veal)
1 small onion, chopped
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon celery salt
1/4 teaspoon clove, ground (a must for authentic Quebecois pie)
1/2 cup water
1/4-1/2 cup breadcrumbs
pastry for a double-crust 9-inch pie, of your choice

Steps:

  • Place all ingredients except breadcrumbs and pastry in a saucepan.
  • Bring to a boil and cook, uncovered, over medium heat for 20 minutes.
  • Remove from heat and add a 3 or 4 spoonfuls of breadcrumbs.
  • Let mixture stand for 10 minutes.
  • If the fat is sufficiently absorbed by the breadcrumbs, do not add more. If not, add more crumbs in the same manner.
  • Cool mixture and spoon into a pastry-lined pie plate.
  • Cover with crust and bake at 400F until golden brown (follow directions for pie crust you chose).
  • Serve hot.
  • NOTE: Cooked tourtière may be frozen for 4 to 5 months and does not need to be thawed before reheating.
  • To reheat, place your frozen tourtiere (covered in foil) in a medium oven and bake until a knife inserted in the center is hot when you pull it out.

4 cups finely chopped onion
6 cups water
2 ½ tablespoons salt
2 teaspoons pepper

1 ¾ teaspoons ground cloves

¼ cup liquid chicken seasoning
8 (15 ounce) packages pastry for double-crust pie

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a large pot, mix the pork, beef, onion, and water. Season with salt, pepper, allspice, cloves, cinnamon, and chicken seasoning. Bring to a boil. Reduce heat to low and simmer 30 minutes.
  • Drain liquid from pot into a bowl. Transfer remaining meat mixture to a separate bowl and chill until ready to use. Place bowl with liquid in the refrigerator and chill 1 hour, or until fat has congealed on the surface.
  • Scrape and discard fat from the chilled liquid. Spoon the meat mixture into pie crusts. Add 1 tablespoon of reserved liquid to each pie. (This prevents them from becoming to dry.) Place top crust on top of each pie and pinch edges to seal. Cut slits in top crust so steam can escape.

4 cloves garlic, finely chopped
4 onions, chopped
3 tablespoons/45 ml canola oil
3 pounds/1.5 kg ground pork
3 pounds/1.5 kg ground veal
Salt and freshly ground black pepper
1 cup/250 ml veal stock
1/2 teaspoon/2.5 ml ground cinnamon
1/2 teaspoon/2.5 ml ground cloves
1/2 teaspoon/2.5 ml ground nutmeg
4 potatoes, grated
6 batches Shortcrust Pastry, recipe follows, or store-bought
2 eggs beaten with a little water, for egg wash
2 1/4 cups/560 ml all-purpose flour, plus more for dusting
1/4 teaspoon/1 ml salt
3/4 cup/180 ml cold unsalted butter, cubed
6 tablespoons/90 ml ice water (approximately)

Steps:

  • In a large saucepan, soften the garlic and onions in the oil. Add the pork and veal and continue cooking for about 15 minutes, stirring to crumble the meat. Sprinkle with salt and pepper. Add the veal stock, cinnamon, cloves, nutmeg and potatoes and cook, stirring frequently, until the potatoes begin to fall apart, about 45 minutes. Let cool. Adjust the seasoning. Cover and refrigerate for 4 hours or until completely chilled.
  • With the rack in the lowest position, preheat the oven to 375 degrees F (190 degrees C).
  • Line six 9-inch (23-cm) pie plates with the pastry. Cover with the cooled meat mixture. Cover with a second crust. Brush with egg wash. Make an incision in the center. Press the edge to seal with a fork or your fingers. Bake until the crust is golden brown, 50 minutes to 1 hour.
  • In a food processor, combine the flour and salt. Add the butter and pulse for a few seconds at a time until the butter is the size of peas. Add the water and pulse again until the dough just begins to form. Add water as needed. Remove the dough from the food processor and form 2 discs. Cover in plastic wrap and refrigerate the dough for at least 30 minutes.
  • Roll out the dough on a floured work surface or between 2 sheets of parchment paper in a 1/8-inch (3 to 4-mm) thick sheet. Use the dough to make a 2-crust pie or line two 9 to 10-inch (23 to 25-cm) pie plates. Yield: 2 pie crusts.

Steps:

  • Towards the end of the pork cooking time, place the potatoes into a separate saucepan and fill with enough water to cover. Bring to a boil and cook until tender, about 10 minutes. Drain and mash potatoes. When the pork is done, stir the mashed potatoes into that pan until evenly blended.
  • Preheat the oven to 375 degrees F (190 degrees C). Line two 9 inch pie plates with bottom crusts. Spoon equal amounts of the pork filling into each crust. Cover with top crusts and flute the edges to seal.
  • Bake for 45 minutes in the preheated oven, or until crust is golden brown.

1 teaspoon ground cinnamon
1 teaspoon ground allspice
3 tablespoons minced fresh parsley leaves
1 tablespoon chopped fresh thyme leaves
1/4 cup red wine
1 pound pork loin, diced into 1/2 inch pieces
1 pound sirloin, diced into 1/2 inch pieces
1/2 pound venison, diced into 1/2 inch pieces
1/4 cup olive oil
1 onion, diced small
1 cup small diced celery, (2 or 3 stalks)
1 cup small diced carrots, (3 or 4 carrots)
1 teaspoon minced garlic, (1 or 2 cloves)
1 medium potato, peeled and diced small
2 cups chicken broth
2 (9 inch) rounds prepared pie crust
1 egg, beaten, for egg wash

Steps:

  • Combine salt, pepper, cinnamon, allspice, parsley, and thyme in a large bowl. Stir in red wine to make a marinade. Add meat the cubes and coat the meat thoroughly, using your hands if necessary to make sure all meat is covered by the marinade mixture. Cover and marinate for at least 30 minutes.
  • Preheat oven to 400 degrees F.
  • To a medium pot heat olive oil and add onion, celery, carrot, and garlic and stir using a wooden spoon until soft, about 5 to 10 minutes. Add potatoes to the pot, stirring briefly, then add meat and brown slightly, stirring constantly. Reduce heat and add chicken broth. Simmer for about 30 minutes, remove from heat and let cool slightly.
  • Lay pie crust into a pie pan and spoon in the meat mixture. Cover with top crust, seal and pinch with fork. Cut slits in top crust to release steam and brush with egg wash.
  • Place pie onto a baking sheet and bake for 45 minutes until crust is golden brown. Let cool for 10 to 15 minutes before cutting and serving.

This savory French-Canadian meat pie combines ground pork and warm spices with chunks of braised pork shoulder and shreds of chicken or turkey. But you could make it with leftover brisket, with venison, with smoked goose or ham. Traditionally it is served with relish or tart, fruity ketchup - I like this recipe for cranberry ketchup best, though I use a splash of fresh orange juice instead of the concentrate it calls for. "I've never had a slice of tourtière and spoonful of ketchup and not liked it," David McMillan, the bearish chef and an owner of Joe Beef in the Little Burgundy section of Montreal, told me. "I especially love a tourtière made by someone who can't really cook."

1 1/2-2 pounds pork-shoulder meat, cut into 1 1/2-inch chunks
Kosher salt and freshly ground black pepper to taste
2 tablespoons neutral oil, like canola
5 allspice berries
2 cinnamon sticks
1 12-ounce bottle stout or other dark beer
4 large chicken thighs, or 1 large turkey thigh
2 tablespoons unsalted butter
2 medium-size yellow onions, peeled and diced
4 cloves garlic, peeled and minced
2 tablespoons parsley, roughly chopped
10 to 12 ounces cremini mushrooms or a mixture of wild mushrooms, sliced
1/2 cup dry white wine or stock
1 pound ground pork
1/2 teaspoon ground white pepper
1/8 teaspoon ground cinnamon

  • Make the dough. In a food processor, pulse together the flour and salt. Add butter and lard in stages, pulsing until the mixture forms bean-size pieces. Slowly add ice water, 1 tablespoon at a time, and pulse until the dough just comes together. It should be moist but not wet.
  • Turn dough out onto a lightly floured surface, and gather into two balls. Flatten each into a disk with the heel of your hand. Cover tightly with plastic wrap, and refrigerate for at least 1 hour and up to 2 days.
  • Make the pork shoulder. Season the pieces of pork aggressively with salt and pepper. Put 1 tablespoon of the oil into a large, deep skillet or Dutch oven, and set it over medium-high heat. When the oil shimmers, sear the meat on all sides until browned, turning as necessary, 10 minutes.
  • Add the allspice berries and cinnamon sticks, and stir to toast them, then add the beer. Bring to a boil, then reduce the heat, cover the pan and simmer steadily until the pork is very tender, 45 minutes to an hour. (When the pork is done, you can allow it to cool in its liquid and refrigerate it for one or two days before using.)
  • Make the chicken or turkey. Heat oven to 325. Season the chicken or turkey thighs aggressively with salt and pepper, then roast in a cast-iron pan or shallow baking tray until their skin is crisp and they have cooked through, approximately 1 hour. (The chicken or turkey, too, may be made ahead and stored in the refrigerator before using.)
  • Make the pie filling. Melt the butter in a large, heavy-bottomed Dutch oven set over medium heat, and when it foams, add the onions, garlic and parsley. Cook, stirring often, until soft, 5 to 7 minutes. Add the mushrooms, and cook, stirring often, until they are soft and have given up their liquid, 5 to 7 minutes. Add wine or stock, and stir to deglaze the pan, then cook until the liquid has evaporated, 5 minutes.
  • Add the ground pork and the spices, and cook until the pork has lost its pinkness, 5 to 7 minutes. Add grated potato, and cook another 5 to 7 minutes. Remove from heat.
  • Shred the cooked chicken or turkey into the pot along with the cooked pork and about 1/2 cup of its braising liquid, stir lightly to combine and season to taste with salt and pepper. Chill in the refrigerator for at least an hour and up to a day.
  • Assemble the pie. Place a large baking sheet on the middle rack of oven, and heat to 400.
  • Remove one disk of dough from the refrigerator, and using a pin, roll it out on a lightly floured surface until it is roughly 10 to 11 inches in diameter. Fit this crust into a 9-inch deep-dish pie plate or cast-iron pan, trimming it to leave an overhang. Place this plate, with the dough, in the freezer.
  • Roll out the remaining dough on a lightly floured surface until it is roughly 10 to 11 inches in diameter.
  • Remove pie crust from freezer, and put the chilled filling into it. Cover with remaining dough. Press the edges together, trim excess, then crimp the edges. Using a sharp knife, cut three or four steam vents in the top of the crust. Paint the pie's top with the egg wash.
  • Place pie in oven on hot baking sheet, and cook for 20 minutes, then reduce temperature to 350, and cook until the crust is golden brown and the filling is bubbling, about 30 to 40 minutes more. Let cool 20 minutes before serving.

  • Fill crust, cover with top crust and seal edges. Cut vent holes.
  • Combine egg and water and brush over pastry crust.
  • Bake at 425 for 10 minutes, reduce heat to 350 and bake 30 minutes or until lightly browned.

Steps:

  • Add potatoes a little at a time to meat.
  • Add seasonings and mix.
  • Add more seasonings to taste.
  • Place pie dough on 2 pie plates.
  • Add half of mixture to each pie.
  • Cover each pie with remaining dough.
  • Seal the edges of pies and cut 5 to 6 vent holes on the tops of pies.
  • Brush top of pies with melted butter.
  • Bake 20 - 30 minutes at 350°F or until crusts are golden brown.

I first ever had these at the home of a French Canadian friend..I have been making them at Christmas time as a make ahead appetizer for years now. It can be made into one individual pie, but I prefer the individual tarts..I freeze these individually on cookie sheets and then vacuum seal in my bagger or can be stored in a plastic container.

5 1/4 ounces all-purpose vegetable shortening
8 1/4 ounces unbleached pastry flour
1/4 cup cold tap water
2 tablespoons cold tap water
salt
9 ounces potatoes, diced in 1/2-inch cubes
1 lb ground beef
9 ounces ground lean pork
9 ounces onions, diced in 1/2-inch cubes
1 7/8 teaspoons beef base, prepared according to package instructions
3 tablespoons instant potato flakes
1 1/2 teaspoons instant potato flakes
3/8 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon granulated garlic
1/4 teaspoon ground black pepper
egg wash, for topping

Steps:

  • The dough can be made in advance. You will need 1 pound of dough to make this pie. Blend the shortening, flour and cold water together in the bowl of a stand mixer on low speed, using a dough hook. Mix until well blended.
  • Remove the dough from the bowl, wrap in plastic wrap and put it on a sheet pan. The dough can be stored for up to 1 week in the refrigerator, but allow it to come to room temperature before rolling.
  • Cut the dough in half and roll out 1 piece of dough to fit into a 10-inch pie plate. Fit the dough circle into the bottom of the pie pan, pushing it snugly against the edges. Roll out the other piece of dough and set aside until ready to use.
  • Preheat the oven to 350 degrees F.
  • Bring a medium pot of salted water to a boil over medium heat. Add the potatoes and blanch until al dente. Drain and set aside to cool.
  • In a large skillet over medium heat, add the beef, pork, and the onions.
  • Brown the meat, then discard the grease. Add the potatoes and moisten the mixture with the beef soup base. Add instant potato powder along with cinnamon, nutmeg, garlic, black pepper and 1/4 teaspoon salt. Mix well.
  • Pour the filling into the dough lined pie plate. Level it off and cover with the remaining circle of dough. Pinch the edges of the bottom layer and top layer of dough together and create the knuckle-like pie edge ridges. Trim off any excess dough using a sharp knife.
  • Brush the top of the pie with the egg wash. Make a few slits in the top crust to allow the steam to escape.
  • Bake until cooked through and the top of the pie is golden brown, about 45 minutes. Remove from the oven and serve.

½ cup water

1 recipe pastry for a 9 inch double crust pie

Steps:

A French Canadian dish that is served everywhere in the Northern Quebec region. It is tasty and filling. It takes a long time to cook and peeling and cubing all the potatoes may be tiring but it is well worth it! Try it just once and I'm sure you'll agree. This is not a pie...it is so much more than that! Please note that I have made this using Campbell's Beef and Barley soup concentrate in lieu of beef bouillon concentrate on occasion and my family from Quebec loved it. The bouillon is traditionally used however, and anything else is optional. This will feed 15-20 people. Québécois like to serve with salad, pickled beets, cucumbers, tomatoes and salad.

2 lbs hamburger meat
15 lbs peeled and cubed potatoes (don't cube too big or too small 3/4 an inch is good)
2 (10 1/2 ounce) cans campbell's condensed vegetable soup (optional)
3/4 cup liquid, beef bouillon concentrate only use if not using the soup listed above
8 -10 cups water
1 (15 ounce) package Pillsbury ready made pie dough (or your own)

Steps:

  • The French Canadian way: All of the above except use beef bullion concentrate to flavor the meal instead of Campbell's Soup.
  • Add water, 2 cans Campbell's Soup, salt,pepper, and ground pork and hamburger meat to a large pot.
  • Boil ingredients until the meat is fully cooked.
  • Taste to see if it needs more salt or not.
  • Peel and cube potatoes and mix with the last 2 cans of soup; set aside.
  • For the full recipe, use a turkey basting pan with lid to bake this.
  • For smaller recipe, use a stock pot.
  • Line the bottom of the pan with dough.
  • Fill the bottom of the pan with half of the cubed potatoes.
  • Pour the meat and stock on top of the potatoes.
  • Pour the last half of the potatoes on top of the meat and stock.
  • You should be able to see stock peeping through the top layer of potatoes.
  • Cover and seal with the dough.
  • Make 4 slits at the center of the pie dough to allow the ingredients to breathe as they cook.
  • Cover with foil or lid.
  • Bake for 1 hour at 400 degrees or until it is boiling.
  • Reduce the heat to 250 degrees and bake for 11 hours, 9 hours if the recipe is smaller.
  • Serve immediately and enjoy.

1/2 lb ground beef or 1/2 lb veal
1/2 cup chicken stock
1 garlic clove, crushed
1 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon ground sage

2 cups mashed potatoes (approx. 8 med potatoes, no butter or milk added)
2 (9 inch) pie crusts, pastry for (can be store bought or homemade)

Steps:

  • In a large saucepan, mix first 8 ingredients. Bring to a boil, simmer and stir until meat loses its pink colour.Continue to simmer 30 minutes, uncovered, stirring occasionally.
  • Stir in mashed potatoes. Cool at least two hours.
  • Press filling in to uncooked pie shell.
  • Place pastry on top of filling, crimp edges to seal. Top crust can be brushed with egg or milk before baking.
  • Cut a hole in the centre, about the size of a dime.
  • Bake at 425 F for 25-35 minutes.
  • Allow to cool and set at least 20 minutes before serving with beef gravy and petite pois (tiny sweet peas). You can also bake only until top is slight browned and then freeze in advance of holidays or for a last-minute meal idea - reheat at 400 F for 15 minutes and then allow to sit for about 5 minutes before serving.

Vegetarian Tourtiere By The Canadian Living Test Kitchen I was serving tourtiere for Christmas this year and didn't want DD to be left out. This is the version I made for her. I've included the recipe for a delicious sounding crust but I cheated and used a commercial pie crust. It uses TVP, or textured vegetable protein, which is a dried soy product available in granules or chunks that, when cooked, resemble the texture of ground meat. Look for it in the health food section of grocery stores.

2 tablespoons vegetable oil
3 celery ribs, diced (with leaves)
2 onions, diced
2 garlic cloves, minced
2 cups potatoes, cubed peeled
2 teaspoons tamari or 2 teaspoons sodium-reduced soy sauce
1 1/2 teaspoons dried savory
salt and pepper
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
2 bay leaves
2 cups vegetable broth
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon dried thyme
1/2 teaspoon cracked black peppercorns
1/2 cup unsalted butter
1/2 cup shortening
2 teaspoons vinegar
ice water

Steps:

  • Pepper Thyme Pastry:
  • In bowl, whisk together flour, salt, thyme and pepper.
  • Using pastry blender or 2 knives, cut in butter and shortening until in fine crumbs with a few larger pieces.
  • In liquid measure or small bowl, whisk vinegar with enough ice water to make 2/3 cup (150 mL).
  • Drizzle mixture over flour mixture, tossing with fork to form ragged dough.
  • Divide in half; press into 2 discs.
  • Wrap each and refrigerate until chilled, about 30 minutes. (If making ahead may be refrigerated for up to 24 hours at this point.).
  • Toutiere Filling:.
  • In large bowl, pour 1 cup (250 mL) boiling water over TVP then cover and let stand for 10 minutes.
  • Meanwhile, in shallow Dutch oven, heat oil over medium-high heat; cook celery, onions and garlic, stirring occasionally, until golden. (about 10 minutes).
  • Stir in potatoes, tamari, savory, salt, pepper, allspice, cloves, bay leaves and TVP and cook, stirring often, for 5 minutes.
  • Stir in broth and 1 cup (250 mL) water; bring to boil.
  • Reduce heat, cover and simmer until potatoes are tender (30 to 40 minutes).
  • Break up most of the potatoes with back of spoon; simmer, uncovered, until slightly thickened (7 to 10 minutes).
  • Let cool. (If making ahead may be refrigerated for up to 24 hours at this point.).
  • On lightly floured surface, roll out 1 of the pastry discs to generous 1/8-inch (3 mm) thickness. Fit into 9-inch (23 cm) pie plate.
  • Trim pastry to rim of plate.
  • Spoon in filling.
  • Roll out remaining pastry and brush rim with water.
  • Place over filling; trim to leave 3/4-inch (2 cm) overhang and fold overhang under pastry rim; flute to seal.
  • Roll out pastry scraps; cut out holiday shapes.
  • Brush top of pie with water and arrange cutouts on top.
  • Cut steam vents in top.
  • Bake in bottom third of 400°F (200°C) oven until bubbly and golden (about 1 hour).
  • Variation.
  • To make tourtiere vegan, replace butter with 1/2 cup (125 mL) shortening.
