2018 Pennsylvania Farm Show prize-winning recipe by Darlene Noll of Schuylkill County (PA) for traditional chocolate, cream-filled whoopie pies.

1 cup of butter
2 cups of brown sugar
4 eggs
2 teaspoons of vanilla
3 cups of all purpose flour
1 cup of cocoa
2 teaspoons of salt
2 teaspoons of baking soda
1 cup of milk
1 egg white
2 teaspoons of vanilla
2 teaspoons of flour
2 teaspoons of milk
2 cups of confectioner's sugar
3/4 cup of Crisco

Steps:

  • Mix butter and sugar. Add eggs and vanilla. Add dry ingredients alternately with milk.
  • Drop with cookie scoop. Bake at 350 degrees Fahrenheit for 12 minutes. Put icing between two whoopie cookies.

1 cup unsweetened cocoa powder
1 teaspoon salt
1 teaspoon baking powder
½ teaspoon baking soda
1 cup butter at room temperature
2 cups white sugar
2 eggs

1 ½ cups milk
¾ cup butter at room temperature
1 cup confectioners' sugar
2 teaspoons vanilla extract
2 cups marshmallow creme

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk flour, cocoa powder, salt, baking powder, and baking soda in a bowl. Beat 1 cup butter and white sugar in a separate large bowl, with an electric mixer on medium speed, until mixture is creamy. Beat eggs and 2 teaspoons vanilla extract into butter mixture.
  • Stir half the flour mixture into wet ingredients, followed by milk; stir remaining flour mixture into dough. Drop dough by tablespoonfuls onto baking sheets. For 25 whoopie pies, make 50 cookies.
  • Bake cookies in the preheated oven until set and lightly browned, about 10 minutes. Let cool completely.

1/2 cup baking cocoa
1/2 cup hot water
1/2 cup shortening
1-1/2 cups sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2-2/3 cups all-purpose flour
1 teaspoon baking powder

1/4 teaspoon salt
1/2 cup buttermilk
FILLING:
3 tablespoons all-purpose flour
Dash salt
1 cup 2% milk
3/4 cup shortening
1-1/2 cups confectioners' sugar
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350°. In a small bowl, combine cocoa and water. Cool for 5 minutes. In a large bowl, cream shortening and sugar until light and fluffy, 5-7 minutes. Combine dry ingredients; gradually add to creamed mixture alternately with buttermilk, beating well after each addition , To form each cookie, drop 2 tablespoons 2 in. apart onto greased baking sheets. Gradually whisk in milk until smooth; cook and stir over medium-high heat until thickened, 5-7 minutes. Remove from heat. Cover and refrigerate until completely cool. , In a small bowl, cream the shortening, sugar and vanilla until light and fluffy, 5-7 minutes. Add milk mixture; beat until fluffy, about 7 minutes. Steps:

½ teaspoon espresso powder, optional
1 stick unsalted butter, room temperature
¾ cup light brown sugar
¼ cup granulated sugar
1 large egg, room temperature
1 teaspoon peppermint extract
1 cup whole milk, room temperature
1 stick unsalted butter, room temperature
14 oz marshmallow cream
2 ½ cups powdered sugar, plus more as needed
¼ teaspoon kosher salt
40 crushed peppermint candies

  • Preheat the oven to 350°F (180°C). Line 2 baking sheets with parchment paper.
  • Make the cakes: In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, and espresso powder, if using.

5 tablespoons all-purpose flour
1 cup milk
