BRIE SMOTHERED PORK CHOPS

Brie Smothered Pork Chops image

Provided by Guy Fieri

Categories     main-dish

Time 1h55m

Yield 2 to 4 servings

Number Of Ingredients 20

1/2 cup light brown sugar
1/4 cup apple cider vinegar
2 tablespoons kosher salt, plus more for sprinkling
1 tablespoon granulated garlic
1 tablespoon whole black peppercorns
1 tablespoon dried thyme
1 teaspoons mustard powder
Pinch dried red pepper flakes
2 cups ice cubes
2 double-cut pork loin chops (1 bone), about 1 1/2-inches thick, 1-pound each
Freshly ground black pepper
Extra-virgin olive oil
4 ounces Brie
Olive oil
1 green apple, such as Granny Smith, roughly sliced
1/2 sweet onion, such as Vidalia, roughly sliced
1/4 cup Calvados
1/2 cup low-sodium chicken broth
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter, cold and cubed

Steps:

  • For the brine and pork chops: Combine 2 cups water, brown sugar, vinegar, 2 tablespoons salt, garlic, peppercorns, thyme, mustard powder and red pepper flakes in a large saucepan and set over high heat. Bring to a simmer and stir until the sugar has dissolved. Remove from the heat and add the ice cubes to bring down the temperature. Once cooled and the ice cubes have dissolved, add to a resealable plastic container (or a plastic bag) and add the pork chops. Place in the fridge for 1 hour.
  • Tie each pork chop around the perimeter with a piece of kitchen twine. This will help the chop retain a nice, round shape while cooking.
  • Preheat the oven to 350 degrees F.
  • Remove the chops from the brine and pat dry with some paper towels (removing the excess moisture on the surface allows the pork chop to sear and caramelize). Sprinkle lightly with salt and pepper. Set a large cast-iron skillet over high heat. Coat the pan with oil and when the oil starts to smoke, add the pork chops to the pan. Cook over high heat until well browned, 8 to 10 minutes. Turn the chops over and reduce the heat slightly to allow the chops to cook through. Cook on the second side until golden brown, about 8 minutes. When done, remove the pork chops from the skillet and place onto a sheet tray. Divide the slices of the Brie between the chops and layer evenly on each so they are covered well. Place the sheet tray into the oven and cook until the Brie is just melted and the pork has cooked to 140 to 145 degrees F. Remove from the oven and transfer the chops to a plate to rest.
  • For the pan sauce: Meanwhile, place the skillet back over medium-high heat. Add a drizzle of olive oil and then add the apples and onions. Saute for 4 to 5 minutes, and then add the Calvados. Allow the alcohol to cook off (you can flambe at this stage if desired by igniting the Calvados in the pan). Once the Calvados has reduced, add the stock and simmer. Season with some salt and pepper. Allow to reduce for 2 to 3 minutes, and then remove from the heat and swirl in the cold butter cubes. This will thicken the sauce and give it a nice sheen. Serve the Brie-topped pork chops with the sauce.

LEMONADE PORK CHOPS

Lemonade Pork Chops image

I saw this on Diners, Drive-Ins and Dives. I put the recipe together by watching the video on their website several times and guesstimating the amounts. You can make any adjustments you feel like to suit your own taste as the simmering progresses. As a bonus, this is about the best lemonade I have ever tasted due to the fact that you get all the oil from the skins included and there is no heat used that could alter the flavour.

Time 2h20m

Yield 18 Pork Chops, 18 serving(s)

Number Of Ingredients 18

7 large lemons, cut in 1/8ths
2 cups sugar
8 cups water
750 ml ketchup
1 cup brown sugar
1 1/2 cups soy sauce
1 cup apple cider vinegar
3 teaspoons oregano
3 teaspoons paprika
3 teaspoons chili powder
3 teaspoons dried onion flakes
3 teaspoons garlic
3 teaspoons cracked black pepper
3 teaspoons ginger
2 teaspoons basil
2 teaspoons thyme
18 pork chops
2 cups breadcrumbs

Steps:

  • In batches in food processor combine Lemons, sugar and just enough water to make a slurry. In a large container combine the slurry with the rest of the water. Strain the mixture and you should end up with 8 cups of the best lemonade you ever tasted.
  • Combine all other ingredients and the lemonade. Simmer for 2 hours and use immediately or set aside in fridge for later use.
  • This amount covers 18 large Pork Chops in a full sized roasting pan, so adjust amounts according to requirements.
  • When I made the Pork Chops, this did 18 large (Costco) bone in double loin chops. I just tossed them in bread crumbs and quickly browned them in a skillet. Then they are stacked overlapping in a deep roasting pan and covered with the sauce. Cover the roaster with plastic wrap and then aluminum foil. Place in a preheated oven at 350F and cook for 2 hours or until the chops are easy to pull apart. At the 1 hour mark, rearrange the chops so the top ones spend some time completely covered in sauce.

Tips:

  • Choose the right pork chops: Bone-in pork chops will give you more flavor than boneless chops, and they will also stay juicier during cooking. Look for chops that are about 1 inch thick.
  • Make sure your marinade is flavorful: The marinade is what will give your pork chops their flavor, so make sure it's packed with flavor. Use a combination of citrus juices, herbs, and spices to create a marinade that you love.
  • Let the pork chops marinate for at least 30 minutes: The longer you marinate the pork chops, the more flavorful they will be. If you're short on time, you can marinate them for as little as 30 minutes, but for best results, marinate them for at least 2 hours or overnight.
  • Cook the pork chops over medium heat: Cooking the pork chops over medium heat will help them cook evenly and prevent them from drying out.
  • Don't overcook the pork chops: Pork chops are best when they are cooked to an internal temperature of 145 degrees Fahrenheit. Overcooking them will make them dry and tough.
  • Let the pork chops rest before serving: Letting the pork chops rest for a few minutes before serving will help them retain their juices and make them more tender.

Conclusion:

Triple D's Lemonade Pork Chops are a delicious and easy-to-make dish that is perfect for any occasion. The pork chops are marinated in a flavorful combination of lemonade, herbs, and spices, then grilled or baked to perfection. Serve them with your favorite sides for a meal that everyone will love.
