PARADISE BARS

Paradise Bars image

This is a bar cookie recipe I got from the Los Angeles Times - it was a request from a reader who wanted the recipe from the Bread & Cie Bakery in San Diego. I haven't made them yet, but they sound really good!

Provided by Marcasite Queen

Categories     Bar Cookie

Time 1h30m

Yield 12-16 bars, 12-16 serving(s)

Number Of Ingredients 11

3/4 cup butter, softened
3/4 cup light brown sugar, packed
1 1/2 cups flour
2 cups light brown sugar
2 1/4 teaspoons vanilla extract
4 eggs
1/3 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
2 cups coconut flakes, unsweetened
2 cups pecan pieces

Steps:

  • Preheat oven to 350 degrees F.
  • Crust: Using a stand or hand mixer, cream together the 3/4 cup butter and 3/4 cup brown sugar until smooth. Add the flour and mix well.
  • Place the mixture in a parchment-lined 13X9X2 inch baking pan, pressing the mixture firmly onto the base of the pan to form a packed, even layer.
  • Bake the crust until lightly golden, about 20 to 25 minutes. Set aside until cool.
  • Filling: in a large bowl, mix the brown sugar, vanilla and eggs well; set aside.
  • In a medium bowl, whisk together the flour, baking powder and salt. Combine the flour mixture with the egg mixture until thoroughly incorporated. Stir in the coconut and pecan pieces.
  • Pour the filling over the cooled crust, spreading evenly with a spatula. Bake until set, about 40 to 50 minutes. Cool before cutting and serving.

Tips:

  • When preparing the crust, use cold butter. This will help to prevent the crust from becoming greasy.
  • Be sure to press the crust firmly into the pan. This will help to prevent it from cracking.
  • Bake the crust for 10-12 minutes, or until it is golden brown.
  • When making the filling, be sure to use ripe bananas. This will give the filling a sweeter, more flavorful taste.
  • Mash the bananas until they are smooth. This will help to create a creamy filling.
  • Be sure to add the sugar, flour, and spices to the bananas before cooking. This will help to thicken the filling and give it a more complex flavor.
  • Cook the filling over medium heat, stirring constantly. This will help to prevent it from burning.
  • Once the filling has thickened, remove it from the heat and let it cool slightly.
  • Pour the filling onto the cooled crust. Be sure to spread it evenly.
  • Refrigerate the bars for at least 4 hours before serving. This will help them to set.

Conclusion:

Tropical Paradise Bars are a delicious and easy-to-make treat that are perfect for any occasion. With their creamy banana filling and crunchy graham cracker crust, these bars are sure to be a hit with everyone who tries them. So next time you're looking for a sweet and refreshing snack, give Tropical Paradise Bars a try. You won't be disappointed!
