Yield 4 tea sandwiches.

1 can (6 ounces) light water-packed tuna, drained and flaked
1 to 2 tablespoons mayonnaise
1/4 teaspoon lemon-pepper seasoning
4 tablespoons crumbled goat cheese
4 slices multigrain bread, crusts removed
4 large fresh basil leaves

Steps:

  • In a small bowl, combine the tuna, mayonnaise and lemon-pepper. Spread 1 tablespoon of goat cheese on each slice of bread. Spread two slices with tuna mixture; top with basil leaves and remaining bread. Cut in half or into desired shapes.

This is just about the only way I make tuna salad sandwiches. I have been making them this way for nearly 30 years and have turned many friends on to them who frown at my recipe only to really love them once they try them. Hope you enjoy!

1 can of Albacore Tuna in Water
1 tbsp of mayo
4-8 0z. of Cream Cheese
Lea & Perrin's Worchestershire Sauce
Bagels or Honey Wheat Bread

Steps:

  • Drain tuna and chop up as good as you can in a mixing bowl. I like to chop it very fine as it just makes it easier to mix when you add the other ingredients.
  • Add around a tbsp of mayo or just enough to wet tuna, and mix until tuna is moistened.
  • Add 4-8 0z cream cheese ( more makes the tuna go further) depending on how much you prefer.
  • Then I add around 2 tbsp's of Lea& Perrin's Worchestershire sauce. I say Lea& Perrin's only because I have tried other brands and they just don't taste the same.
  • Mix all together and let set in fridge to firm or use as is.
  • Serve on toasted bagels, toast or whatever you prefer. I used to serve on a nice crisp lettuce leaf with a slice of cheese to keep it low carb.

10 slices pumpernickel bread, frozen
¼ cup plus 2 tablespoons mayonnaise, divided
½ teaspoon salt, divided
⅜ teaspoon ground black pepper, divided
1 tablespoon crème fraîche
¼ teaspoon fresh lemon zest
1 (5-ounce) can chunk tuna, drained
1½ tablespoons capers, drained
1½ tablespoons finely diced celery
1 teaspoon chopped fresh tarragon
Garnish: celery leaves

Steps:

  • Preheat oven to 400°. Line a rimmed baking sheet with parchment paper.
  • Using a 2-inch square cutter, cut 20 squares from frozen bread slices, discarding scraps. Divide ¼ cup mayonnaise among bread squares, spreading in an even layer. Place bread squares, mayonnaise side up, 2 inches apart on prepared baking sheet. Sprinkle with ¼ teaspoon salt and ¼ teaspoon pepper.
  • Bake until bread is crisp, 5 to 8 minutes. Let cool on a wire rack.
  • In a medium bowl, whisk together crème fraîche, lemon zest, remaining 2 tablespoons mayonnaise, remaining ¼ teaspoon salt, and remaining ⅛ teaspoon pepper until smooth. Fold in tuna, capers, celery, and tarragon. Divide tuna mixture among 10 toasted bread squares. Cover with remaining toasted bread squares.
  • Garnish with celery leaves, if desired. Serve immediately.
