½ cup butter, divided
1 (8 ounce) package uncooked medium egg noodles
½ medium onion, finely chopped
1 stalk celery, finely chopped
1 clove garlic, minced
8 ounces button mushrooms, sliced
¼ cup all-purpose flour
2 cups milk
salt and pepper to taste
2 (5 ounce) cans tuna, drained and flaked
1 cup frozen peas, thawed
3 tablespoons bread crumbs
2 tablespoons butter, melted
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Butter a medium baking dish with 1 tablespoon butter.
  • Bring a large pot of lightly salted water to a boil. Add egg noodles, cook for 8 to 10 minutes, until al dente, and drain.
  • Melt 1 tablespoon butter in a skillet over medium-low heat. Stir in the onion, celery, and garlic, and cook 5 minutes, until tender. Increase heat to medium-high, and mix in mushrooms. Continue to cook and stir 5 minutes, or until most of the liquid has evaporated.
  • Melt 4 tablespoons butter in a medium saucepan, and whisk in flour until smooth. Gradually whisk in milk, and continue cooking 5 minutes, until sauce is smooth and slightly thickened. Season with salt and pepper. Stir in tuna, peas, mushroom mixture, and cooked noodles. Transfer to the baking dish. Melt remaining 2 tablespoons butter in a small bowl, mix with bread crumbs, and sprinkle over the casserole. Top with cheese.
  • Bake 25 minutes in the preheated oven, or until bubbly and lightly browned.

For a change of pace I add canned chopped green chilies and 1/8 teaspoon cayenne, use pasta shells or spirals, or top the casserole with sliced American or cheddar cheese instead of breadcrumbs.

1 (12 ounce) package egg noodles
2 tablespoons vegetable oil
¼ cup chopped onion
¼ cup chopped green bell pepper
¼ cup red bell pepper, chopped
1 (11 ounce) can condensed cream of Cheddar cheese soup
1 (5 ounce) can tuna, drained
¼ cup milk
¼ teaspoon salt
ground black pepper to taste
¼ cup Italian seasoned bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of salted water to boil; place noodles in water and bring to boil again. Cook until al dente; drain well.
  • While noodles are cooking saute in a medium size saucepan vegetable oil, onion, green and red bell peppers. Saute until tender.
  • Pour soup, tuna, milk, salt and black pepper into the saucepan. Mix well over medium-low heat.

8 ounces dry spaghetti noodles
6 tablespoons margarine
2/3 cup parmesan cheese, grated
1 large onion, finely chopped
1 teaspoon dry dill weed
1 teaspoon garlic salt
1 1/2 tablespoons prepared mustard
2 (10 ounce) packages frozen peas, thawed
3 (6 ounce) cans bumble bee tuna in water
2 cups small curd cottage cheese
2 cups swiss cheese, shredded
4 eggs, well beaten

Steps:

  • Cook spaghetti according to package directions, drain well.
  • Melt 4 Tbs margarine, pour into large bowl.
  • Mix spaghetti & parmesan cheese w/ melted margarine.
  • Spread into greased 9-inch baking dish, set aside.
  • Melt remaining margarine in large frying pan over medium heat.
  • Add onion, cook until soft, not browned.
  • Stir in dill weed, garlic salt & mustard.
  • Remove from heat.
  • Mix in peas, tuna, cottage cheese and 1 cup of Swiss Cheese.
  • Pour eggs over set aside spaghetti.

2 cup(s) macaroni, large or small shells
2 can(s) tuna, packed in water (small cans)
1 can(s) cream of celery soup
1/2 cup(s) milk
1/2 cup(s) chopped celery
1/3 cup(s) diced onion
1/2 teaspoon(s) salt and pepper
2/3 cup(s) shredded swiss cheese, maybe substitute mozzarella.

Steps:

  • Preheat Oven to 350 degrees. Boil noodles in medium pot for 12 mins.(or until tender but not overcooked)
  • Dice and chop onion and celery and saute in skillet with Pam or a few drops of oil and a few drops of water. Until translucent.(3-4) mins.
  • Then remove tuna from cans(strain off liquid first)and add to celery and onions in skillet. Add cream of celery soup and milk. Stir on low heat.
