TUNA SALAD SANDWICHES
Inspired by Iranians' love affair with pickles and fresh herbs, this tuna salad combines the crunch and tang of dill pickles with a mix of herbs. The cheerful addition of potato chips celebrates relaxed summer lunches - and tastes great any time of year. Ciabatta rolls and classic salted chips are especially good here, but you can use your favorite loaves and chips, or skip the bread and just serve the tuna salad with chips for scooping.

KITTENCAL'S TUNA SALAD SANDWICHES
This is a simple recipe but big on flavor and it even tastes better if left in the fridge a few hours to blend the flavors so I suggest to do that --- it's wonderful with a slice of tomato on top of the tuna and served between two thick slices of toasted whole grain bread or in a pita bread or served on a plate on top of a bed of lettuce --- I sometimes add in some chopped small sweet gherkin pickles or yum yum pickles also --- feel free to add in some cooked macaroni pasta and serve on a plate --- please only fresh lemon juice for this bottled is just not the same, I have left the mustard powder and Tabasco as optional I most always add it in it takes this salad to another level :)

TINK'S CHICKEN & TUNA SALAD SANDWICHES
An easy combo of chicken and tuna that's not too fruity, sweet or spicy, but packed with flavors that really compliment each other. Tonight, DS told me he wasn't going to be home for dinner so I planned on just splitting one leftover chicken breast between DH, our toddler & myself. Then at the last minute DS said he was going to be home after all, but now I had nothing thawed to make! I got into creative mode, scrounged the fridge & pantry & came up with this unusual take on the chicken sandwich. I didn't expect great things, but my boys raved over it, I impressed myself & even my toddler ate it! In the future I will probably add green onion to the mix, as I usually would, but just didn't have it on hand this time. I'm posting my creation here so we can enjoy it again and in hopes that you'll find it as pretty and tasty as we did. :)

CHICKPEA "TUNA" SALAD SANDWICHES
Chickpeas are surprisingly fishy, and when they're mashed, taste a lot like tuna! Mix it with nori and the usual tuna salad suspects (like carrots and onion) for a vegan 'tuna' sandwich.

Steps:
- Pulse nori in a blender until it's a fine powder. Set aside to let dust settle.
- Mash chickpeas with a sturdy fork or a small-holed potato masher (chickpeas slip through larger, zigzag-type mashers) in a large bowl until most are broken up. Do not overmash--they should retain some texture.
- Stir in mayo and mash a little more. Stir in nori powder, carrot, celery, onion, dill, salt, and pepper. Cover and chill at least 15 minutes or up to 3 days.
- For the sandwiches, slather toast with mayo (about 1 1/2 teaspoons per slice). Layer salad, lettuce, and tomato between toast slices. Cut sandwiches in half diagonally.
