SOUP BEANS

Soup Beans image

Like poor people everywhere, mountain people in the South thrived for centuries on food that was indigenous, inexpensive and healthful. These days "soup beans" speak instant comfort to anyone who had familial connections from Appalachia, where every garden produced shelling beans that could be eaten fresh or grown to maturity for dry beans. Serve this thick, stew-like soup with cornbread, pickle relish and diced sweet onion.

Time 2h10m

Number Of Ingredients 8

1 pound pinto, yellow-eyed or other dried beans, sorted and rinsed (2 1/2 cups)
12 cups water
8 ounces finely diced ham, (about 1 1/2 cups)
1 medium onion, peeled
1 clove garlic, peeled
½ teaspoon salt
1 teaspoon freshly ground pepper
¼ teaspoon crushed red pepper

Steps:

  • Place beans, water, ham, onion, garlic, salt, pepper and crushed red pepper in a large Dutch oven; bring to a boil. Reduce heat and simmer, stirring occasionally, until the beans are very tender and beginning to burst, 1 1/2 to 2 hours. If necessary, add an additional 1/2 to 1 cup water while simmering to keep the beans just submerged in cooking liquid.
  • Remove from the heat; discard the onion and garlic. Transfer 2 cups of the beans to a medium bowl and coarsely mash with a fork or potato masher. Return the mashed beans to the pot; stir to combine.

BEAN AND TURKEY SOUP

Bean and Turkey Soup image

Don't let the long list of ingredients scare you, its a lot of canned beans and spices. My Husband goes Deer Hunting, actually camping (he is the cook) and I sent a giant pot of this for all the guys-it was a big hit. It smells so good and can be very spicy, so be careful with the jalapenos-(I used sliced in the jar.) I always make this after Thanksginving with leftover turkey.I usually double the recipe and use full cans.

LEMONY WHITE BEAN SOUP WITH TURKEY AND GREENS

Lemony White Bean Soup With Turkey and Greens image

Bright with lemon and herbs, and packed with hearty greens, this highly adaptable soup can be either light and brothy or thick and stewlike, depending on your preference. Smashing some of the beans to release their starch will give you a thicker soup that's almost worthy of a fork. To keep it on the brothy side, add a little more liquid and leave the beans intact. Either way, it's a warming, piquant, one-pot meal that's perfect for winter.

Time 45m

Yield 4 servings

Number Of Ingredients 15

3 tablespoons olive oil
1 large onion, diced
1 large carrot, diced
1 bunch sturdy greens, such as kale, broccoli rabe, mustard greens or collard greens
1 tablespoon tomato paste
3/4 teaspoon ground cumin, plus more to taste
1/8 teaspoon red-pepper flakes, plus more to taste
1/2 pound ground turkey
3 garlic cloves, minced
1 tablespoon finely grated fresh ginger
1 teaspoon kosher salt, plus more to taste
1 quart chicken stock
2 (15-ounce) cans white beans, drained and rinsed
1 cup chopped fresh, soft herbs, such as parsley, mint, dill, basil, tarragon, chives or a combination
Fresh lemon juice, to taste

Steps:

  • Heat a large pot over medium-high for a minute or so to warm it up. Add the oil and heat until it thins out, about 30 seconds. Add onion and carrot, and sauté until very soft and brown at the edges, 7 to 10 minutes.
  • Meanwhile, rinse the greens and pull the leaves off the stems. Tear or chop into bite-size pieces and set aside.
  • When the onion is golden, add tomato paste, 3/4 teaspoon cumin and 1/8 teaspoon red-pepper flakes to the pot, and sauté until paste darkens, about 1 minute. Add turkey, garlic, ginger and 1 teaspoon salt, and sauté, breaking up the meat with your spoon, until turkey is browned in spots, 4 to 7 minutes.
  • Add stock and beans, and bring to a simmer. Let simmer until the soup is thick and flavorful, adding more salt if needed, 15 to 25 minutes. If you like a thicker broth, you can smash some of the beans with the back of the spoon to release their starch. Or leave the beans whole for a brothier soup.
  • Add the greens to the pot and simmer until they are very soft. This will take 5 to 10 minutes for most greens, but tough collard greens might take 15 minutes. (Add a little water if the broth gets too reduced.)
  • Stir herbs and lemon juice into the pot, taste and add more salt, cumin and lemon until the broth is lively and bright-tasting. Serve topped with a drizzle of olive oil and more red-pepper flakes, if desired.

Tips:

  • Use flavorful turkey stock. Turkey stock forms the base of the soup, so use a high-quality stock or broth. If you don't have any on hand, you can make your own by simmering turkey bones and vegetables in water.
  • Don't skimp on the vegetables. The vegetables in this soup add flavor, texture, and nutrition. Use a variety of vegetables, such as carrots, celery, onions, and potatoes.
  • Add some herbs and spices. Herbs and spices can help to enhance the flavor of the soup. Try adding some thyme, sage, rosemary, or bay leaves.
  • Don't overcook the turkey. The turkey should be cooked until it is tender, but not overcooked. Overcooked turkey will become tough and dry.
  • Serve the soup with a side of crusty bread or crackers. This will help to soak up the broth and add some extra flavor to the meal.

Conclusion:

Turkey and Navy Bean Soup is a hearty, flavorful, and comforting soup that is perfect for a cold winter day. It is also a great way to use up leftover turkey after Thanksgiving or Christmas. With its simple ingredients and easy-to-follow instructions, this soup is sure to become a family favorite.
