Yield 6 servings

Number Of Ingredients 12

1 tablespoon coconut oil
1 lb turkey sausage
1 can cannellini bean, rinsed and drained
1 can diced tomato, drained
½ teaspoon salt
½ teaspoon black pepper
1 teaspoon dried thyme
4 eggs, beaten
4 cups spinach
greek yogurt
2 ripe avocados
6 whole wheat flour tortillas

Steps:

  • Heat the oil in a large nonstick skillet over medium-high heat.
  • Toss in the sausage and break up with a wooden spoon until brown.
  • Pour in the beans, tomatoes, salt, pepper, and thyme, and mix until everything has warmed through.
  • Move the contents of the pan out of the way to form an open well in the center of the pan. Pour the eggs into the well, and as the bottom of the eggs start to cook and solidify, use a spatula to gently scrape the cooked bits off the bottom and slowly mix with the other contents of the pan.
  • Add the spinach to the pan and mix.

  • Enjoy!

TURKEY BURRITO

Turkey Burrito image

I've been making this for years, and use whatever I have left over from Thanksgiving dinner. No one cares about the turkey dinner. They make me do the turkey so I will make the burritos. This recipe calls for instant flour, formulated to dissolve easily in liquids, and primarily used as a thickener in gravy recipes. Chicken broth can be used in place of turkey broth.

Tips:

  • Choose the Right Turkey: Select a fresh or frozen turkey breast or tenderloin for tender and flavorful meat.
  • Seasoning is Key: Use a flavorful blend of spices and herbs to enhance the taste of the turkey. Experiment with different combinations to find your perfect flavor profile.
  • Cook to the Correct Temperature: Use a meat thermometer to ensure the turkey is cooked to 165°F (74°C) for safety and juiciness.
  • Let It Rest: Allow the cooked turkey to rest for a few minutes before shredding or carving. This helps the juices redistribute, resulting in a more tender and moist meat.
  • Use Fresh Vegetables: Opt for fresh, crisp vegetables for a vibrant and nutritious filling. Choose a variety of colors and textures for a visually appealing and flavorful burrito.
  • Layer It Up: Layer the ingredients in the burrito evenly to ensure every bite is packed with flavor. Start with a layer of rice, followed by beans, turkey, vegetables, and your favorite toppings.
  • Use a Large Tortilla: Choose a large, sturdy tortilla that can hold all the fillings without breaking. This will make it easier to roll and enjoy your burrito.
  • Experiment with Toppings: Get creative with your toppings! From guacamole and sour cream to sliced avocado and pico de gallo, the options are endless. Choose toppings that complement the flavors of the turkey and vegetables.

Conclusion:

With these tips and the delicious recipes provided, you're well on your way to creating a mouthwatering turkey burrito that will satisfy your taste buds. Remember to experiment with different flavors and toppings to find your perfect combination. So, grab your apron, gather your ingredients, and get ready to embark on a culinary adventure!
