½ ripe avocado
¼ cup mayonnaise
2 ciabatta rolls
1 tablespoon olive oil, divided
2 slices provolone cheese
1 cup whole fresh spinach leaves, divided
¼ pound thinly sliced mesquite smoked turkey breast
2 roasted red peppers, sliced into strips

Steps:

  • Mash the avocado and the mayonnaise together in a bowl until thoroughly mixed.
  • Preheat a panini sandwich press.
  • To make the sandwiches, split the ciabatta rolls in half the flat way, and brush the bottom of each roll with olive oil. Place the bottoms of the rolls onto the panini press, olive oil side down. Place a provolone cheese slice, half the spinach leaves, half the sliced turkey breast, and a sliced roasted red pepper on each sandwich. Spread half of the avocado mixture on the cut surface of each top, and place the top of the roll on the sandwich. Brush the top of the roll with olive oil.
  • Close the panini press and cook until the bun is toasted and crisp, with golden brown grill marks, and the cheese has melted, about 5 to 8 minutes.

8 slices cooked bacon
1/2 cup cranberry sauce

12 ounces cranberries
1 cup sugar
1/2 cup orange juice
1/2 cup water
1/3 cup brown sugar
1/2 teaspoon chili powder
8 slices center-cut bacon
12 ounces turkey breast, slices
4 slices havarti cheese
1/2 cup onion, sliced
1/2 cup red bell pepper, sliced
1/2 cup poblano pepper, sliced
1 tablespoon olive oil
1 cup fresh basil
4 French rolls, split
mayonnaise (optional)

Steps:

  • Make cranberry sauce (or use leftover) as follows:.
  • Mix cranberries, sugar, orange juice and water in a medium saucepan. Bring to a boil; simmer until berries pop. Chill until ready to use.
  • Make candied bacon:.
  • Preheat oven to 400*. Mix brown sugar and chili powder. Coat each slice of bacon on both sides with sugar mixture. Place bacon on a cookie sheet with sides and bake 15-20 minutes. Drain.

1 pound thick cut bacon, slices cut in 1/2
1/3 cup maple syrup
1 cup all-purpose flour
1 teaspoon cayenne
Salt and freshly ground black pepper
2 cups thinly sliced shallots
1 cup mayonnaise
4 chipotle peppers, chopped
1 tablespoon adobo sauce
1 teaspoon chopped fresh cilantro leaves
1/2 lemon, juiced
1 tablespoon minced garlic
1 roasted skin-on turkey breast, store-bought
6 thick slices marble rye bread
8 to 12 slices smoked Cheddar
Melted butter, to cook sandwiches

Steps:

  • Fill a pot with 2-inches of canola oil and heat it to 375 degrees F. Preheat the oven to 400 degrees F.
  • Arrange the bacon on a sheet tray with a rack. Brush the bacon with even amounts of maple syrup. Bake until crisp, about 18 to 22 minutes. Remove the bacon from the oven to a paper towel lined platter. Set aside.
  • Combine the flour, cayenne, and salt and pepper, to taste, in a medium-sized bowl. Add the sliced shallots and toss the shallots in the flour to coat evenly. Shake off excess flour. Working in 2 batches, fry the shallots until crisp, about 2 to 3 minutes. Remove them to a paper towel lined platter and sprinkle with salt. Set aside.
  • In a small bowl, mix together the mayonnaise, chipotles, adobo sauce, cilantro, lemon and garlic until well combined. Season with salt and pepper, to taste. Set aside.
  • Slice the turkey breast into 1/4-inch slices. Lay the bread out on a large cutting board. Spread chipotle mayonnaise on each slice of bread. Top each slice of bread with a slice of smoked Cheddar and a couple slices of bacon. Sprinkle some crispy shallots on 3 slices of bread. Put a few slices of turkey on top of the onions. Sprinkle some additional shallots on the turkey. Form 3 sandwiches and spread each sandwich with a little melted butter. Put the sandwiches in a large skillet over medium heat. Cook, pressing down the sandwich with a spatula, for 3 to 4 minutes on each side. Remove the sandwiches from the pan and serve.

8 slices bread (I love Trader Joe's San Fran bread)
1/2-1 lb sliced turkey
1 tomato sliced
4-8 slices pepper jack cheese
1 avocado (sliced)
1/4 cup mayonnaise
mayo & mustard, optional, for sandwiches
lettuce, optional

Steps:

  • Prepare baking sheet with foil and place a cooling rack on top of the baking sheet; spray cooling rack lightly with cooking spray to prevent sticking. Set aside.
  • Coat bacon in brown sugar and line cooling rack with bacon slices.
  • Place in the cold oven set to 350. Bake for about 30 minutes or until the bacon reaches desired crispiness.
  • Allow to cool and harden at least 5 minutes before using.
  • Prepare bread by spreading mayonnaise on the outside of the slices.
  • Heat up panini maker; if using a grill pan, wait to heat the pan until your sandwiches are assembled.
  • Layer sandwiches with cheese on one side of the bread and make this the side you place down first. The cheese will stick to the bread making it easier to flip.

If you are using a panini maker, place two sandwiches on the grill and gently close the top applying light pressure. (Do not press so hard that your fillings spill out.)
  • Monitor the bread for toastiness; remove from grill pan or panini maker when done.
  • Optional: I add lettuce and mayo/mustard to the inside of the bread on the slices without cheese once the paninis are done. Nobody likes hot lettuce!

1 tablespoon butter
2 cloves garlic, minced
½ red onion, thinly sliced
