TURKEY POTATO CASSEROLE

Turkey Potato Casserole image

This was made from Thanksgiving leftovers, and ingredients in my pantry. It's a family favorite and a hit at Pot lucks. With leftovers, it's a breeze, made from scratch ... it's work. Either way it's a hit and well worth the time. After a holiday meal half the work is done because you usually have the mashed potatoes, and turkey. When I make it from scratch, I usually use chicken rather than turkey. Prep times are from leftovers.

Tips:

  • Prep the Turkey and Vegetables in Advance: To save time and ensure even cooking, cut up the turkey and vegetables the night before or early in the morning. This will also help the flavors to meld together.
  • Choose the Right Potatoes: Russet potatoes are a classic choice for this dish, as they hold their shape well and become fluffy when mashed. However, you can also use Yukon Gold or red potatoes for a different flavor and texture.
  • Don't Crowd the Pan: When browning the turkey cubes, be sure not to overcrowd the pan, as this will prevent them from browning evenly. Cook the turkey in batches if necessary.
  • Use a Dutch Oven or Large Pot: A Dutch oven or large pot is ideal for this recipe, as it will provide plenty of space for the turkey and vegetables to cook evenly.
  • Add Some Herbs and Spices: To enhance the flavor of the dish, add some herbs and spices to the turkey and vegetables. Some good options include thyme, rosemary, sage, garlic powder, and onion powder.
  • Use a Low-Sodium Broth: To keep the dish from becoming too salty, use a low-sodium chicken or vegetable broth. You can also add water if desired.
  • Simmer Until the Turkey and Vegetables are Tender: Allow the dish to simmer until the turkey and vegetables are tender. This will usually take about 30 minutes.
  • Mash the Potatoes: Once the turkey and vegetables are cooked, remove them from the pot and mash the potatoes until smooth. You can use a potato masher or a hand mixer to do this.
  • Stir in the Turkey and Vegetables: Stir the turkey and vegetables back into the mashed potatoes until well combined.
  • Serve with Gravy or Cranberry Sauce: Serve the turkey potato supper with gravy or cranberry sauce, if desired.

Conclusion:

Turkey potato supper is a classic comfort food dish that is perfect for a weeknight meal or a special occasion. It is a great way to use up leftover turkey, and it is also a budget-friendly meal. With a few simple tips, you can make a delicious and satisfying turkey potato supper that the whole family will enjoy.
