1 yellow onion, chopped
3 garlic cloves, minced
1 (28 ounce) can crushed tomatoes
1 (6 ounce) can tomato paste
1 cup chicken broth
1 tablespoon dried oregano
1 tablespoon dried basil
1 teaspoon dried thyme
1 teaspoon sea salt
1/2 teaspoon cracked black pepper
1 tablespoon butter

Steps:

  • In a 4 1/2 quart pot/pan brown the ground turkey over medium heat.
  • Add the onion and garlic and cook until softened.
  • Add tomato paste and crushed tomatoes, stirring until all is combined.
  • Add chicken broth to thin it down a little bit.
  • Add spices, butter, and salt and pepper and allow to simmer over low heat for about 15 minutes (just long enough to boil the water and cook the pasta!).
  • Taste and adjust seasonings to preference.

4 tablespoons extra-virgin olive oil
1 medium onion, finely chopped
3 cloves garlic, minced
1 pound ground turkey
1 teaspoon dried oregano
1 teaspoon fennel seeds
1 28-ounce can plum tomatoes
Salt and freshly ground black pepper
Pinch of hot red pepper flakes
2 tablespoons chopped Italian parsley

Steps:

  • Heat the oil in a heavy skillet. Add the onion and saute until soft and barely beginning to brown. Add the garlic and stir.
  • Add the turkey and cook over medium heat, stirring, until the meat is uniformly broken up and loses its color. Stir in the oregano and fennel.
  • Drain the tomatoes, reserving the juice. Break them up and add to the turkey. Bring to a simmer and cook, stirring from time to time, for about 20 minutes, until the sauce has thickened. Season to taste with salt, pepper and hot pepper flakes.
  • Before serving, reheat the sauce, adding a little of the reserved juice if the sauce is too thick. Sprinkle with parsley.

28 ounces canned diced tomatoes
28 ounces canned crushed tomatoes
¾ cup water
1 large green bell pepper (diced)

1 pound spaghetti
1 tablespoon olive oil
4 cloves garlic, minced
1/2 Spanish onion, chopped
10 ounces ground turkey
One 28-ounce can crushed tomatoes
Two 8-ounce cans tomato sauce
Two 6-ounce cans tomato paste
1/2 tablespoon sugar
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon dried parsley

2 bay leaves
2 tablespoons grated Parmesan
1/2 bunch fresh basil leaves

Steps:

  • Bring a large pot of salted water to a boil.
  • Heat a large pan over medium heat and add the olive oil, garlic and onion. Cook until translucent, about 2 minutes. Add the turkey and cook, breaking it up with a spoon, until cooked through, about 8 minutes.
  • Add the crushed tomatoes, tomato sauce and tomato paste, stirring to combine. Add the sugar, dried basil, oregano, parsley, cinnamon and 1/2 teaspoon each salt and pepper and stir to combine. Add the bay leaves and 1/2 cup water. Stir well and simmer to infuse the flavors, about 10 minutes.
  • Meanwhile cook the spaghetti in the boiling water according to the package instructions. Drain well.
  • Transfer the spaghetti to a platter and ladle the sauce on top. Top with the grated Parmesan and fresh basil leaves.

1/4 cup extra-virgin olive oil
1 onion, chopped
4 garlic cloves, minced
1 carrot, peeled and finely chopped
1 celery stalk, finely chopped
1 pound shredded cooked turkey (preferably dark meat)
3 cups marinara sauce
1/4 cup chopped fresh basil leaves
Salt and freshly ground black pepper
1 pound spaghetti
Freshly grated Parmesan

Steps:

  • Heat the oil in a heavy large frying pan over medium heat. Add the onion and garlic and saute until translucent, about 5 minutes. Add the carrot and celery and saute until the vegetables are tender, about 5 minutes. Add the turkey and saute 1 minute. Add the marinara sauce. Decrease the heat to medium-low and simmer gently for 15 minutes to allow the flavors to blend, stirring often. Stir in the basil. Season the sauce, to taste, with salt and pepper. (The sauce can be made 1 week ahead. Cool the sauce completely, then transfer it to a container and freeze for future use. Bring the sauce to a simmer before using.)
  • Meanwhile, cook the spaghetti in a large pot of boiling salted water until just tender but still firm to bite, stirring often, about 8 minutes. Drain, reserving 1 cup of the cooking liquid. Add the pasta to the sauce and toss to coat, adding enough reserved cooking liquid to moisten as needed. Serve with the Parmesan.

Dash of garlic powder
3 tablespoons tomato paste
1 cup water
1/2 teaspoon dried rosemary
2 dashes Tabasco sauce

Pepper to taste
1/3 pound of spaghetti

5- to 6-pound turkey, cut in quarters and prepared as for Turkey Chili
2 large onions, coarsely chopped
3 tablespoons butter
3 tablespoons olive oil
6 large ripe tomatoes, peeled, seeded, and chopped
1/2 cup fresh basil leaves, finely chopped, or 2 to 3 teaspoons dried basil
Salt, freshly ground pepper to taste
2 to 3 pounds hot spaghettini, cooked al dente and drained
Grated Romano cheese
Grated Parmesan cheese

Steps:

  • Cook the turkey in water with onion, celery, parsley and peppers, as for Turkey Chili. Remove and cool. Cut the meat from the bird into small dice. Reduce the broth to 4 cups.
  • Sauté the onion in the butter and oil, add the tomatoes and simmer until the tomatoes are melted into the onions. Add the basil, salt and freshly ground pepper. Combine with the 4 cups broth and cook down for 20 minutes. Add the diced turkey and heat through.

2 onions, finely chopped
500g turkey mince (thigh is best)
1 garlic clove, crushed
2 x 400g cans chopped tomatoes
1 tbsp chipotle paste
300ml chicken stock
400g large pasta shells
250g tub mascarpone
200g cheddar, grated
2 tbsp grated parmesan

Steps:

  • Heat the olive oil in a large pan. Add the onions and cook for 8-10 mins until softened. Add the mince and brown all over. Once browned, add the garlic, tomatoes, chipotle paste and chicken stock, and bring to the boil. Turn down to a simmer and cook, uncovered, for 35-40 mins, adding a splash of water if it looks too dry.
  • While the turkey cooks, boil the pasta following pack instructions, then drain, reserving some of the water. Warm through the mascarpone with a splash of the hot pasta water over a low heat. Add 140g cheddar, season and stir to combine.
  • Heat oven to 200C/180C fan/gas 6. Transfer the turkey sauce to a large baking dish. Stir the cheese sauce through the pasta and pour over the mince. Sprinkle the remaining cheddar and the parmesan on top. Bake in the oven for 20 mins or until golden and crisping at the edges.
