1 can (15 ounces) great northern beans, rinsed and drained
4 plum tomatoes, chopped
1 small zucchini, chopped
1 medium onion, chopped
1 garlic clove, minced
1/4 cup white wine
3/4 teaspoon salt, divided
1/4 teaspoon pepper, divided
4 tilapia fillets (6 ounces each)
1 medium lemon, cut into 8 thin slices

Steps:

  • Preheat oven to 400°. In a bowl, combine beans, tomatoes, zucchini, onion, garlic, wine, 1/2 teaspoon salt and 1/8 teaspoons pepper., Rinse fish and pat dry. Place each fillet on an 18x12-inch piece of heavy-duty foil; season with remaining salt and pepper. Spoon bean mixture over fish; top with lemon slices. Fold foil around fish and crimp edges to seal. Transfer packets to a baking sheet., Bake until fish just begins to flake easily with a fork and vegetables are tender, 15-20 minutes. Be careful of escaping steam when opening packets.

1 lemon, zested
1 1/2 teaspoons salt, plus more for seasoning
1/2 teaspoon freshly ground black pepper, plus more for seasoning
1 1/2 pounds sugar snap peas, stemmed
1 yellow bell pepper, sliced
1 orange bell pepper, sliced
1/2 cup white wine
1/4 cup lemon juice
4 teaspoons olive oil
4 (4-ounce) trout fillets, skinned (or other fish about 1/2-inch thick)
8 thin slices lemon
1/4 cup fresh chopped mint leaves

Steps:

  • Special equipment: 4 large sheets of aluminum foil or parchment paper
  • Preheat the oven to 350 degrees F. In a small bowl mix together the lemon zest, salt, and pepper. Set aside.
  • Lay out the 4 sheets of aluminum foil. Place 1/4 of the sugar snap peas, 1/4 of the yellow bell peppers, and 1/4 of the orange bell peppers on each sheet of foil. Over each pile of vegetables drizzle 2 tablespoons of white wine, 1 tablespoon of lemon juice, and 1 teaspoon of olive oil. Sprinkle with salt and pepper and gently toss.
  • Top each pile of seasoned vegetables with a piece of fish. Sprinkle the fish with some of the reserved lemon zest mixture. Top each fish with 2 slices of lemon.

2 carrots, thinly sliced
1 15-ounce can chickpeas, drained and rinsed
1/2 cup pitted green olives (such as Castelvetrano), halved
Kosher salt and freshly ground pepper
1/4 cup plus 3 tablespoons extra-virgin olive oil
4 wide strips lemon zest, plus 2 tablespoons lemon juice and wedges for serving
4 center-cut skinless cod fillets (about 6 ounces each)
1 cup fresh parsley
1/2 cup fresh mint
1 teaspoon ground coriander
1 teaspoon smoked paprika

Steps:

  • Preheat the oven to 450 degrees F. Lay out four 12-inch sheets of heavy-duty foil. Divide the leeks, carrots, chickpeas and olives among the foil sheets and mound in the center; season with salt and pepper. I spent a few days in Florence about 30 years ago, and while I don't remember much, I do recall my surprise at how delicious the Tuscan fish stew was. What I found so interesting was how herbs like oregano, sage, and rosemary, which I'd only associated with meat, were also used with seafood. Also, FYI just in case any old-school Tuscans are coming over: I hear that for this to qualify as an official Italian fish stew you need use at least 5 different types of seafood, which is both insane and adorable. Serve with crusty bread.

3 cups cherry tomatoes, halved
1 cup clam juice
4 tablespoons olive oil, divided
¼ cup sliced green onions
4 cloves garlic, sliced
1 anchovy fillet
2 pinches red pepper flakes
12 ounces halibut, cut into 2-inch pieces
1 pound shrimp, peeled and deveined
salt to taste
1 tablespoon chopped fresh parsley
½ tablespoon chopped fresh basil

Steps:

  • Puree cherry tomatoes and clam juice in a blender until smooth. Press mixture through a fine-mesh strainer into a bowl.
  • Combine 3 tablespoons olive oil, green onions, garlic, anchovy, and 1 pinch red pepper flakes in a cold plan. Place over medium heat. 24 pitted green olives, roughly chopped
¾ cup low-sodium chicken broth
1 orange, juiced
1 teaspoon finely grated orange zest
½ teaspoon kosher salt
¼ teaspoon ground black pepper
1 pound cod, cut into 4 pieces
4 teaspoons extra-virgin olive oil
4 thin slices orange
2 tablespoons chopped toasted almonds
2 tablespoons chopped fresh parsley

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Cut four 12x15-inch sheets of parchment paper. Fold each in half widthwise and reopen.
  • Mix rice, green olives, chicken broth, orange juice, orange zest, salt, and pepper together in a bowl.

I got this recipe from a very good Jamaican friend of mine, Miss Hines. With the walkers wood jerk sauce...start lightly...it is spicy. I adjust it according to each of my family members taste...Hope you enjoy it as much as we do!! I usually serve rice and peas on the side to soak up the juice!

4 talapia fillets
walkerswood jerk sauce
1 large onion, sliced in rings, divided
1 large red pepper, divided
1 large yellow pepper, divided
garlic, minced, divided
1 (15 ounce) can diced tomatoes with jalapenos, drained, divided
italian seasoning, divided
1 (8 ounce) package white button mushrooms, cleaned and sliced, divided
1 lemon, juice of, divided
red pepper flakes, to taste, divided
Pam cooking spray

Steps:

  • Preheat oven to 350 degrees F.
  • Take aluminum foil; 2 sheets per person. Double them together. Spray foil with Pam. Place filet on each doubled sheet. Spread walkerswood jerk sauce on filet -- again -- this is spicy stuff so lightly at first!
  • Then add the onion, red pepper, yellow pepper, tomatoes, mushrooms, italian seasoning, red pepper flakes and squeeze of lemon juice on each packet.
  • Close each packet completely. At this point I take a marker and mark the initial of each person on their packet.

  • Open packet carefully, and put contents over rice. Throw packet away! Easy peasy clean up too !
