  • Peel potatoes on the sides, leaving the ends with the skin on. Cut the potatoes into 1/3-inch slices and then slice into 1/3-inch sticks.
  • Fill a large bowl with water and soak potatoes, submerged, for at least 30 minutes up to 24 hours. This will help remove the excess starch from the potatoes and keep them from oxidizing.
  • Heat a heavy stock pot fitted with a deep-fry thermometer with oil to 325 degrees F.

Canola oil (for deep-frying)

Steps:

  • Bring large pot of salted water to boil. Line large baking sheet with several layers of paper towels. Cut 1 potato lengthwise into 1/4-inch-thick slices. Stack 2 to 3 potato slices at a time and cut lengthwise into 1/4-inch-wide sticks. Cook potato sticks in boiling water just until beginning to soften, 3 to 4 minutes. 3 tablespoons unsalted butter
1 1/2-1 3/4 lbs russet potatoes or 1 1/2-1 3/4 lbs yukon gold potatoes, peeled and cut into 3/4-inch cubes

1/4 cup diced green bell pepper
1/4 cup diced red bell pepper
1/2 teaspoon chili powder (optional)
minced fresh chives (optional) or parsley (optional)

Steps:

  • Warm the butter in a 10- to 12-inch cast-iron skillet over medium-low heat.

1 gallon beef tallow or duck fat (see Note)
1 bunch fresh flat-leaf parsley, chopped

  • Cut the potatoes into strips approximately 1/2 to 3/4 inch wide and 1/2 inch thick. As you cut them, submerge them in a bowl filled with cold water to prevent oxidizing (turning color).
  • Fill a stockpot with cold water, add a little salt, and bring to a boil over medium-high heat.
