Time 50m

1 c shortening
1 1/2 c sugar
1 tsp vanilla extract
2 large eggs
2 1/4 c sifted flour
2 1/2 tsp baking powder
1 tsp salt
1 c plus 2 tablespoons of milk

Steps:

  • 1. Stir shortening to soften. Gradually add sugar and mix thoroughly at medium speed.
  • 2. Add vanilla, and then add the eggs one at a time mixing well after each. Sift flour with baking powder and salt.

  • 4. Bake in 2 paper-lined 9x1 1/2-inch ROUND pie pans at 375 degrees for roughly 23-25 minutes
  • 5. Cool and add any frosting you wish and serve
  • 6. NOTE: May take longer to prepare until you get the recipe down

Tips:

  • Use fresh eggs at room temperature for best results.
  • Don't overbeat the eggs; overbeating can make the cake tough.
  • Measure the flour correctly; too much flour can make the cake dry and dense.
  • Be careful not to overmix the batter; overmixing can also make the cake tough.
  • Bake the cake in a preheated oven; a cold oven can prevent the cake from rising properly.
  • Don't open the oven door during baking; this can cause the cake to fall.
  • Let the cake cool completely before frosting it.
