ROASTED CARROT AND SWEET POTATO TZIMMES

Roasted Carrot and Sweet Potato Tzimmes image

Categories     Carrot     Casserole/Gratin     Potato     Side     Rosh Hashanah/Yom Kippur

Number Of Ingredients 8

2 pound peeled carrot
3 pound sweet potatoes, peeled
8 shallots,peeled
1/2 - 3/4 pound dried plums or pitted prunes
6 oranges (enough to yield 2 ½ cups juice)
1 lemon
4 tablespoon extra-virgin olive oil
1 salt

Steps:

  • Preheat oven to 400 degrees. Use a vegetable peeler to peel the zest of two oranges into large strips (be sure to press down only hard enough to remove just the colored part of the skin, not the bitter white pith). Do the same with the lemon. Juice enough oranges to get 2 ½ cups juice. Cut carrots crosswise into 2-inch chunks or lengthwise into 2-inch pieces. Cut the sweet potatoes into large bite-size chunks. Cut shallots into quarters lengthwise. Snip dried fruit in half. Use a roasting pan large enough to accommodate all the vegetables in roughly a single layer (don't go crazy with this, just don't pile them too deeply). Place carrots, potatoes, shallots, dried fruit, and lemon and orange zests into pan. Toss with olive oil, salt and pepper. Pour juice over all. Roast uncovered until vegetables are tender and browned in places, and the juice is mostly absorbed, about 1 ¼ hours. Turn the vegetables once or twice during the cooking time. If you want more juice in the finished dish, add another ½-1 cup juice during last 20 minutes of cooking time. The juices should thicken slightly. This dish may be made a day ahead and reheated in a 350-degree oven.

4 sweet potatoes, peeled and cut into 1 inch chunks (about 2 pounds)
1/4 cup dates
1/2 cup dried pitted prunes
1 cup dried apricot
2 tablespoons fresh lemon juice
1 cup orange juice (freshly squeezed is best)
1/4 cup honey

1/4 teaspoon salt

  • Cover with foil, and bake approximately 30min, basting with pan juices midway.
  • Uncover foil and broil for 5 minutes
  • Remove from oven, and serve immediately.
  • Leftovers are great the next day, warmed in the oven (DH eats it cold!).

TZIMMES KUGEL

Tzimmes is normally cooked loosely in a pot and served as a pretty wet side dish, but Levana put a whole new spin on this traditional food, and has turned it into a delicious kugel. If you use matzo meal instead of flour, it's a fantastic addition to your Passover repetoire.

BEEF TZIMMES WITH BUTTERNUT SQUASH

Beef Tzimmes with Butternut Squash image

This is a Faye Levy recipe for the local weekend paper. Tzimmes can be made with meat or without. We usually have it without, as a side dish, but with meat it makes a great main course, very seasonal with the leaves turning color in the fall. This is not only perfect for Rosh Hashana, it's also great on Passover, and even for Thanksgiving.

Provided by Mirj2338

Categories     Vegetable

Time 3h20m

Yield 6 serving(s)

Number Of Ingredients 10

2 lbs boneless lean beef chuck, trimmed of fat

1 1/4 cups prunes, pitted

Steps:

  • Cut beef in 1 1/2- 2 inch pieces and pat them dry.

  • Discard seeds and stringy parts in cavity.
  • Cut squash in 1 inch cubes.
  • Stir honey and cinnamon into sauce.
  • Add squash and push pieces into liquid.
  • Cover and simmer for 10 minutes.
  • Turn squash pieces over.

GOLDEN CARROT TZIMMES

Golden Carrot Tzimmes image

a sweet & flavorful concoction of carrots, prunes, raisines, nuts, honey, and cinnamon. Served with the main dish (meat or chicken) and is the "jewish" equivalent to a spiced apple side-dish...

Provided by Gohogsgirl

Categories     < 4 Hours

Time 2h35m

Yield 4-6 serving(s)

Number Of Ingredients 12

1 1/2 lbs carrots
3 tablespoons margarine
1/2 teaspoon kosher salt
1 cup water
1/2 cup golden raisin
1 cup pitted prunes
6 tablespoons light brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon ground cloves
1 tablespoon lemon juice
2 tablespoons candied orange peel, chopped
2 tablespoons honey

Steps:

  • peel and slice carrots into thick slices.
  • melt margarine in a medium sautepan.
  • add carrots and cook 5 minutes add water & sugar and bring to a boil.
  • stir in remaining ingredients and lower the heat.
  • cover and let simmer over low heat for 2 hours. check to make sure there is enough liquid - on occasion.
  • remove cover at the end of 2 hours and cook for another 20 minutes. should be moist, but not soupy - serve warm/hot.

Tips:

  • Choose the right carrots. For the best flavor and texture, use fresh, young carrots. Avoid carrots that are too thick or woody.
  • Cut the carrots evenly. This will help them cook evenly. If the carrots are too thick, cut them in half or quarters lengthwise.
  • Use a heavy pot. A heavy pot will help to distribute the heat evenly and prevent the carrots from sticking.
  • Don't overcrowd the pot. If you overcrowd the pot, the carrots will not cook evenly. Leave some space between the carrots so that they can cook properly.
  • Add the right amount of liquid. The amount of liquid you add will depend on the recipe you are following. Generally, you want to add enough liquid to cover the carrots by about 1 inch.
  • Bring the liquid to a boil, then reduce the heat. This will help to prevent the carrots from overcooking.
  • Cook the carrots until they are tender. The cooking time will vary depending on the size and thickness of the carrots. Cook the carrots until they are tender when pierced with a fork.
  • Season the carrots to taste. Once the carrots are cooked, season them to taste with salt, pepper, and other spices. You can also add a little bit of honey or maple syrup for sweetness.
  • Serve the carrots hot or cold. Tzimmes can be served hot or cold. It is a delicious side dish for any meal.

Conclusion:

Tzimmes is a delicious and versatile dish that can be enjoyed by people of all ages. It is a great way to use up leftover carrots, and it is also a healthy and nutritious side dish.
