Number Of Ingredients 18

Unsalted butter, for cups
3 cups heavy cream
2 cups whole milk
2 cinnamon sticks
2 dried hot red chiles, crumbled
1/2 vanilla bean, seeds scraped and reserved
6 ounces milk chocolate, finely chopped
6 ounces bittersweet chocolate (preferably at least 61 percent cacao), finely chopped
6 large egg yolks
1/2 cup plus 2 tablespoons granulated sugar
3/4 teaspoon salt
3 tablespoons bourbon
1 loaf challah or brioche (about 1 pound), preferably 2 days old, cut into 3/4-inch cubes
3 tablespoons coarse raw sugar, such as turbinado
1/2 cup sour cream
1 tablespoon confectioners' sugar
Ground cinnamon, for garnish
Chocolate curls, for garnish

Steps:

  • Butter insides of eight 1-cup ovenproof cups. Bring 2 cups cream, the milk, cinnamon sticks, chiles, and vanilla bean and seeds to a simmer over medium-high heat. Remove from heat, cover, and let stand for 30 minutes.
  • Place milk chocolate and bittersweet chocolate in a heatproof bowl. Return cream mixture to a simmer, then strain over chocolate, discarding solids. Gently stir until smooth.

Provided by riffraff

Categories     Dessert

Time 1h20m

Yield 8 serving(s)

Number Of Ingredients 7

3 1/2 cups whole milk
1 cup sugar
1 vanilla bean, split lengthwise
7 large eggs
5 large egg yolks
2 1/2 cups heavy cream
6 cups bread, cut into 1 inch cubes

Steps:

  • Note: bread can be any non-savory firm textured bread.
  • Avoid soft supermarket bread- makes pudding mushy and avoid rustic crusty loaves with open crumb- doesn't absorb and yields too firm a pudding.
  • Whole wheat cinnamon raisin works well, but a brioche or challah work the best.
  • Preheat oven to 350, butter a 13x9 baking dish.
  • Whisk milk and sugar in a saucepan over medium heat.
  • Meanwhile scrape vanilla bean into milk mixture and throw in pods.
  • Heat to steaming, but not boiling.
  • Discard vanilla pods.
  • Whisk eggs and yolks in a large bowl, gradually add 2 cups of hot milk mixture, then pour egg mixture into the saucepan with the hot milk.
  • Strain and whisk in cream.
  • Spread bread cubes in prepared dish.
  • Slowly pour custard over bread being sure to saturate all of the bread.
  • Bake in the center of the oven for about 1 hour or until a small knife inserted in the center of the pudding comes out clean.
  • Serve warm or chilled with whipped cream or caramel sauce.
  • Note: you can add raisins, currents, dried cranberries, sour cherries or any other dried fruit you like.

Tips:

  • Use high-quality chocolate for the best flavor. A good semisweet or bittersweet chocolate with a cocoa content of at least 60% is ideal.
  • Don't overmix the batter. Overmixing will make the bread pudding tough.
  • Use a loaf pan that is at least 9x13 inches. A smaller pan will make the bread pudding too thick and dense.
  • Bake the bread pudding until it is set in the center. A toothpick inserted into the center should come out clean.
  • Let the bread pudding cool slightly before serving. This will help it to set and make it easier to slice.
  • Serve the bread pudding with your favorite toppings, such as whipped cream, ice cream, or chocolate sauce.

Conclusion:

Chocolate bread pudding is a delicious and easy-to-make dessert that is perfect for any occasion. With its rich chocolate flavor and creamy texture, it is sure to be a hit with everyone who tries it. So next time you are looking for a sweet treat, give chocolate bread pudding a try. You won't be disappointed!
