1 (15 ounce) can pumpkin puree
1 cup unsalted butter
1 cup white sugar
1 cup packed brown sugar
2 eggs
2 ½ cups all-purpose flour
2 tablespoons ground cinnamon
1 tablespoon ground ginger
½ tablespoon ground nutmeg
1 ½ teaspoons baking soda
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon ground cloves

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Beat pumpkin, butter, white sugar, and brown sugar together using an electric mixer in a mixing bowl until creamy. Beat in eggs.

1 (18 1/2 ounce) box spice cake mix
1 (15 ounce) can pumpkin puree
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1 cup confectioners' sugar
1 tablespoon milk
1/2 tablespoon vanilla extract

Steps:

  • Mix cake mix, pumpkin puree, and seasonings until well blended.
  • Drop by spoonfuls onto an ungreased cookie sheet, flattening slightly.
  • Bake at 350° for 25 minutes.
  • Let cool for 5 minutes, then remove to a baking rack to finish cooling.
