Steps:

  • Place cabbage in a deep 12-inch heavy skillet with broth, 1 garlic clove (sliced), and a rounded 1/4 teaspoon salt. Bring to a simmer over medium heat, then cook, covered, turning cabbage occasionally, until very tender, about 45 minutes. (Add more broth or water if necessary.)
  • Meanwhile, cook onion and remaining garlic in oil in a heavy medium pot over medium heat, stirring occasionally, until golden, about 8 minutes. 2 garlic cloves, minced (more if you like)
1 eggs, beaten or 1 egg substitute
1 (14 ounce) can stewed tomatoes

12 ounces vegetable juice, like V8 (we like to use the hot & spicy here)
1 tablespoon brown sugar
1/4 teaspoon cayenne (more if you like) (optional)

1 bay leaf
salt and pepper, to taste

Steps:

  • Saute onion and garlic in a large skillet for about a minute. Add meat and cook, stirring often, until meat is no longer pink. Drain well and return to pan.
  • Meanwhile, remove tough outer leaves from cabbage & remove core. Shred cabbage if not using a bag of shredded cabbage.
  • Add cabbage into pan and saute with the meat just until the cabbage begins to soften.

1 head of cabbage, diced how you like it.
46 oz tomato sauce or v-8 juice or tomato juice (see note)
3 lb ground beef
2 c regular rice
2 eggs
dash(es) soy sauce (about 8 shakes or so)
black pepper to taste
onion powder to taste
garlic powder to taste
4 bay leaves, dried
1 c ketchup (more to taste)

Steps:

  • 1. Start by cutting up your cabbage. You can make chunks,slices, whatever you feel like at the moment. Place it in a large sauce pan. Take half of your tomato juice or sauce, and pour it over the cabbage. Bring to a boil and then simmer for at least 15 minutes to reduce the cabbage and give you room for the porcupine balls.
  • 2. While the cabbage simmers, mix the meat ball mixture. In a large bowl, mix the ground beef,eggs,soy sauce,pepper,onion powder, garlic powder and the rice. Mush it up with your hands and blend it all very well. Form this into meatballs by rolling a palm full in your hands.
  • 3. After the cabbage is reduced and you have room in the pot, put the balls right on top of the cabbage. Add your 4 bay leaves and the rest of your tomato sauce or V-8 or tomato juice. Bring back to a boil and reduce heat and simmer for about 50 minutes to an hour. They are done when the rice if fully cooked.
  • 4. NOTES: Mom used tomato sauce. I tried them with V-8 juice and they are good too. My Mom didnt use as much sauce/juice as I do now. I added more liquid due to the fact that the rice sucks it all up. The following day, you can add more sauce and ketchup because you will find that those thirsty meat balls sucked it all up again. Either that, or you can leave them and add more ketchup on top before reheating.

Stuffed cabbage without all the hard work of stuffing cabbage leaves. I am Polish and make stuffed cabbage all the time. But it is too time-consuming. So I decided to put all the ingredients in a pot and cook and whaddaya know. It worked!

1 head cabbage, chopped
1 lb ground beef, browned
1 lb ground pork, browned
1/2 onion, sliced
2 cups cooked rice
2 (10 3/4 ounce) cans condensed tomato soup
2 (8 ounce) cans tomato sauce
1 teaspoon garlic powder
1/2 teaspoon ground black pepper
1 1/4 cups water

Steps:

  • Put everything in a Dutch oven and bring to a boil. Lower heat to low and cover. Cook 2-3 hours until the cabbage is soft and tender.
  • Check while cooking as you may have to add more water or garlic powder.
  • Serve with Polish rye bread and butter.
  • Note: For those on sodium-restricted diets, you can make this with salt-free tomato sauce and reduced sodium tomato soup. Comes out great.

I think once upon a time I followed a recipe but I can't find one that matches what's in my head anywhere. My 14yo (THE PICKY ONE) says this is her FAVORITE dish. THAT is the biggest compliment of all. :) This recipe served the 4 of us, including 2nd helpings, with not a lot left over.

2 tablespoons vegetable oil
1 cup chopped yellow onion
1 lb bulk italian sweet sausage
1 lb bulk italian hot sausage
1 cup white rice (not instant)
28 ounces crushed tomatoes
2 cups chicken broth
1 cup raisins
1/3 cup brown sugar
1/2 cup cider vinegar
1 teaspoon salt & pepper
1 small cabbage (8-12c chopped)

Steps:

  • Heat oil in 4qt. Dutch oven. Add onion & sausage; cook until meat is cooked, breaking it up into small bits.
  • Add rice, tomatoes & chicken broth. Stir well to combine & simmer 15 minutes.
  • Add raisins, brown sugar, vinegar, salt & pepper. Stir well.
  • Add cabbage & stir well to combine. Cover pot & simmer on low 10-15 minutes or until rice is tender and cabbage is tender-crisp.
  • Stir again & serve. Enjoy!

2 lbs green cabbage
2 lbs lean ground beef
4 medium onions (1 finely chopped 3 sliced)
3 teaspoons salt
1/2 teaspoon pepper
2 eggs
2 tablespoons white rice
3 tablespoons water
28 ounces canned tomatoes (whole)
15 ounces tomato sauce
1/2 cup dark brown sugar or white sugar (packed)
1 lemon, juice of
1/3 cup raisins ((1/3 to 1/2)
1 tablespoon honey ((1 to 2)
1 tablespoon vegetable oil

Steps:

  • 1 Use Large Stock Pot and wooden spoon. 2 Wash cabbage, cut off core. Cut cabbage in half horizontally. Take core out and cut. 3 cabbage in 3 inch chunks. 4 Cook sliced onions in oil until translucent. 5 Add can of whole tomatoes, stir and chop slightly with spoon. Add tomato sauce, half of salt, half of pepper, and mix. 6 Cover and simmer for 20 minutes, stir occasionally so it doesn't burn. 7 Then add cabbage and stir and push cabbage down into the sauce. 8 Cover pot and continue to simmer approx 1 hour till you can mix cabbage around in the sauce. 9 In large bowl mix ground beef with chopped onion, 1 1/2 level teaspoons salt, 1/4 tsp pepper, 2 eggs, rice, and water. Mix well with hands. 10 If too mushy, add a little more rice. Form golf ball size meat balls, and then store briefly in refrigerator to get firmer. 11 Place meatballs on top of cabbage on sauce. Cover and simmer approx 15 minutes till meatballs feel firm. 12 Then gently mix meat balls into sauce. Let pot simmer for approx 45 minutes, then add lemon. Taste for lemon taste, if not add more lemon. 13 Then add raisins, honey, and then sugar a little at time to taste. Cook for another 15 minutes, then mix gently, uncover and remove from heat. 14 Try not to eat right away so flavors can infuse. Tastes better when eaten the second day, but don't overheat. Only reheat what you will eat at that sitting. 15 This freezes well.

1 1/2 lbs ground beef
1/2 onion, diced
2 garlic cloves, minced
1 large head of cabbage, chopped
24 ounces marinara sauce, such as rao's
1/2 cup water
1 teaspoon salt

Steps:

  • Add the beef to a 5 quart dutch oven over medium heat. Brown the meat, crumbling as it cooks.
  • When meat is partially cooked, add the onion and garlic to the pan and continue cooking, stirring often.
  • Add the cabbage, marinara, water, and salt to the pan and stir to cover the cabbage in the marinara and beef.
  • Continue cooking, stirring occasionally, for 20 minutes or until the cabbage is as tender as you'd like.
  • Serve immediately.
