1 (16 ounce) can sliced pineapple
8 maraschino cherries
1 1/2 cups sifted cake flour

3/4 cup granulated sugar
1 teaspoon lemon, zest of, freshly grated
1 teaspoon lemon juice
1 teaspoon vanilla
1/2 cup sour cream

Steps:

  • Melt 1/3 cup of the butter in a 10-inch cast-iron skillet; stir in brown sugar until well blended.
  • Drain pineapple, reserving 2 tablespoons of the syrup.
  • Arrange pineapple slices close together in butter-sugar mixture.
  • Center each slice with a cherry.
  • Sift flour, baking powder and salt onto waxed paper.
  • Beat egg whites until foamy in medium bowl.
  • Beat in 1/4 cup of the granulated sugar a tablespoon at a time until meringue stands in soft peaks.
  • With same beater, beat remaining 1/3 cup butter with remaining 1/2 cup sugar until fluffy.
  • Beat in egg yolks, lemon rind, lemon juice and vanilla.
  • Blend flour mixture into creamed mixture alternately with sour cream and the 2 tablespoons reserved pineapple syrup.
  • Fold meringue until no streaks of white remain.
  • Pour over pineapple in skillet.
  • Bake in a 350° oven for 35 minutes or until center springs back when lightly touched with fingertip.
  • Cool cake in skillet on wire rack for 10 minutes; then invert over serving plate.
  • Allow skillet to remain over a cake a minute for syrup to drain from pan.
  • Serve warm or cold.

Steps:

  • Preheat oven to 350°F (180°C) and grease a 9-inch (23cm) cake pan.
  • In a bowl, cream together the butter and sugar.

1 1/2 teaspoons baking powder

Steps:

  • Preheat oven to 350 degrees. Coat bottom and side of a 9-inch round cake pan with 2 tablespoons butter; sprinkle bottom with brown sugar. In a medium bowl, toss apples with lemon juice; arrange in prepared pan in two concentric circles (you might not use all of them).
  • In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon; set aside.
  • With an electric mixer, beat remaining 8 tablespoons butter with granulated sugar until light and fluffy. Add eggs and vanilla; beat until incorporated. With mixer on low speed, alternately add the flour mixture in three parts and the milk in two, beginning and ending with flour mixture.

In one of them, i make eggs, omeletts, fried chicken, fried vegetables, fried breaded meats, etc. In the other one, i make cakes and desserts because i don't like to mix flavors in the same one. I have made this apple cake in it and it is very good, so am sharing my recipe here. Enjoy it like we do.

1/3 cup light butter
1/2 cup splenda brown sugar
1 teaspoon ground cinnamon (or use ground apple pie spices)
3 medium green apples, peeled, cored and sliced
1 (18 ounce) box spice cake mix (i use Duncan Hines with less sugar)
1/2 cup light butter, melted
1 cup ligh sour cream
1/3 cup light dark corn syrup
2 eggs (I use 1 cup egg beaters)
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 green apple, chopped
1/2 cup pecans, chopped (optional)

Steps:

  • Place your oven rack in the middle of the oven and preheat oven to 350ºF.
  • Prepare the topping, melting the 1/3 cup butter in a 10" cast iron skillet ((2" deep), over low heat.
  • Remove skillet from heat and stir in the brown sugar and ground cinnamon (or apple pie spices) using a fork.
  • Spread this mixture evenly over the bottom of the skillet and arrange the apple slices over the butter/sugar mixture in the skillet.
  • In a mixer, blend cake mix, 1 stick melted butter, sour cream, dark corn syrup, eggs and ground cinnamon.
  • Beat on low speed for 1 minute. Increase speed to medium and beat 2 minutes longer until creamy.
  • Pour the batter over the top of the apples in the skillet and then place the skillet in the oven and bake at 350ºF. for 40-45 minutes and bake until the cake rises high in the skillet, (it will spring back when lightly pressed with your finger when it's done).
  • Remove skillet and cool cake in the pan for 5-10 minutes and then run a knife around the edges of the cake to loosen it from the sides of the pan and carefully flip upside down onto a serving plate.
  • Cool completely for about 15 minutes and serve warm with vanilla ice cream if you like.
  • I have made this cake with Duncan Hines Caramel flavor cake mix and the taste is excellent, too.
  • NOTE: this cake can also be made in these baking pans. Just prepare the butter, brown sugar and spices in a skillet over the stove and then pour this mixture in the baking pan sprayed with cooking oil, add the apple slices, pour the batter and bake it.
  • Here is a guide to bake the cake in those pan sizes:

4 cups apples, preferably Greening or Cortland, peeled, cored and cut into slices 1/2-inch thick
3/4 cup dark brown sugar
1/2 teaspoon cinnamon
3 eggs, separated
3/4 cup granulated sugar
1 tablespoon apple cider or apple brandy
3/4 cup sifted cake flour
3/4 teaspoon baking powder

Steps:

  • Melt four tablespoons of the butter in a heavy nine-inch skillet, preferable cast iron and one that does not have a nonstick surface. The skillet must also have a handle that will withstand oven heat. Add the apple slices and saute over high heat for about eight minutes, until the apples are tender, beginning to brown but still hold their shape.
  • Remove the apples carefully, draining them. Set them aside. They should now be reduced to about two cups of apples. Melt the remaining butter in the skillet.
  • Tip the skillet so the sides are coated with butter. Add the brown sugar and cinnamon and stir over very low heat just until the sugar has dissolved. Spread the sugar mixture evenly over the bottom of the skillet.
  • Remove the skillet from the heat and arrange the apple slices in a pattern over the brown sugar mixture in the bottom of the skillet. Any slices that do not fit into the pattern can be scattered on top of the rest -they will not show.
  • Preheat oven to 350 degrees.
  • Beat egg yolks until thick, gradually adding the granulated sugar and beating till light and lemon colored. Stir in the cider or brandy.
  • Sift the flour with the baking powder and fold into the yolk mixture. Beat the egg whites until they hold peaks but are still creamy-textured and fold them in.
  • Spread the batter over the apples in the skillet. Bake 30 minutes. Unmold the cake onto a large platter and serve while still warm.

1 (18 1/4 ounce) box yellow cake mix

  • In bowl, mix flour, first six tablespoons of butter, eggs, baking powder, sugar, salt, and milk with a spoon to form a lumpy batter.

  • Heat oven to 350 degrees. Lightly spray an 8-by-1 1/2-inch round cake pan with vegetable spray and set aside. In a large nonstick skillet, melt 1 teaspoon butter over medium-high heat. Add the apples, cut side down, and sprinkle them with 3 tablespoons sugar; cook until the apples are tender and caramelized, 4 to 5 minutes on each side. Remove from heat.

4 bacon strips, chopped
1 large apple, peeled and sliced
2 tablespoons brown sugar
1/2 teaspoon ground cinnamon

3/4 cup 2% milk
1 tablespoon butter, melted

Steps:

  • Preheat oven to 375°. In an 8-in. cast-iron or other ovenproof skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove bacon to paper towels to drain, reserving drippings., Add apple to drippings; cook and stir over medium-high heat until crisp-tender, 2-3 minutes. Remove from heat. Sprinkle with bacon, brown sugar and cinnamon., In a large bowl, combine flour, sugar and baking powder. In a small bowl, combine egg, milk, butter and vanilla; stir into dry ingredients just until moistened. Pour over apples., Bake until lightly browned, 20-25 minutes. Invert onto a serving plate. If desired, dust with confectioners' sugar and serve with syrup.

Steps:
