1 1/2 cups sweetened flaked coconut, lightly toasted (for garnish)

Tips:

  • For the best results, use fresh, unsweetened shredded coconut. Sweetened coconut will make the cupcakes too sweet.
  • If you don't have coconut flour, you can make your own by grinding unsweetened shredded coconut in a food processor until it resembles fine flour.
  • Be sure to measure the coconut flour correctly. Coconut flour is very absorbent, so too much flour will make the cupcakes dry and crumbly.
  • If you don't have coconut oil, you can substitute another type of oil, such as canola oil or vegetable oil.
  • Be careful not to overmix the batter. Overmixing will make the cupcakes tough.
  • Bake the cupcakes until a toothpick inserted into the center comes out clean. Overbaking will make the cupcakes dry.
  • Let the cupcakes cool completely before frosting them. This will help the frosting to set properly.
  • If you don't have vanilla extract, you can substitute another type of extract, such as almond extract or lemon extract.

Conclusion:

These vanilla coconut flour cupcakes are a delicious and healthy treat that are perfect for any occasion. They are made with simple ingredients and are easy to make. The cupcakes are also gluten-free and grain-free, making them a great option for people with dietary restrictions. So next time you're looking for a sweet treat, give these vanilla coconut flour cupcakes a try!
