1/4 teaspoon ground ginger (can sub 1-2 teaspoons fresh grated ginger, to taste)
1 5- inch cinnamon stick (can sub 1/8 teaspoon ground cinnamon)
1/2 teaspoon pure vanilla extract
1/2 teaspoon coconut oil (optional*)
Pinch freshly ground black pepper*
1/2 vanilla bean (seeds scraped and entire bean added)
2-3 cardamom pods (crushed)
1 star anise
Pinch ground cayenne pepper
Pinch freshly ground nutmeg
Black peppercorns

Steps:

  • Set a small saucepan over low heat. Add the almond milk, 1 teaspoon honey, turmeric, ginger, cinnamon stick, and black pepper and stir with a whisk until combined.
  • Bring to steaming, just below a simmer. Do not let it come to a boil. Keep just below a simmer, stirring occasionally, for 10 minutes.
  • Remove from heat. Remove the cinnamon stick. If you added other spices that need to be strained out, strain using a fine mesh strainer then return to the pan. Stir in the vanilla and coconut oil (if using). Taste and add additional honey if desired (I like about 2 teaspoons).
  • Use a frother to froth the tea, if desired. Pour into a mug and spoon the froth over the top. Serve.

3/4 cup french vanilla liquid coffee creamer (like coffee mate or international delight)
1 1/4 cups milk (I used 2%)
2 tablespoons instant coffee
1 cup light whipped topping

Steps:

  • Put Milk in a microwave safe bowl and microwave just until warm enough to dissolve the instant coffee crystals DO NOT SCALD OR BOIL.
  • Add the coffee crystals and stir until dissolved.
  • While stirring add in the creamer and mix well.
  • Add the whipped topping and mix well, don't worry about"deflating" the whipped topping.
  • Put in your ice cream machine according to your manufacturer's instructions.
  • Place in the freezer for 4-5 hrs minimum.
  • After 2 hrs take it out and stir it up, just so it doesn't freeze into a solid brick!

3 cups water
1 cup blanched almond
4 cardamom pods
1/4 teaspoon peppercorn
1/2 cinnamon stick
6 whole cloves
1/4 inch fresh ginger, peeled slice
1/3 teaspoon fennel seed
2 teaspoons green tea powder (Must be matcha but F. didn't recognise, I use Matcha Superior from Teaopia)
1 1/2 teaspoons alcohol free vanilla (I buy ours from the health food shop)
1/8 cup local raw honey, to taste

Steps:

  • Blend water and almonds until very smooth.
  • Strain through a fine sieve.
  • Bring almond milk and spices to a boil.
  • Boil for 5 minutes with the lid off, then simmer for 10 minutes covered.
  • Strain into a blender (I use glass). Let the mixture cool down for a few minutes, then add the matcha powder & vanilla and blend. Add raw honey to taste. I probably use more than an 1/8 cup but do it to taste.
  • Enjoy hot or cold. (I prefer it hot though).

1 vanilla bean
300 ml milk
300 ml coffee, hot
sugar, to taste

Steps:

  • Slice vanilla bean and scrape out the seeds, using a sharp pointed knife.
  • Combine vanilla bean, seeds and milk in a pot and let soak for an hour.
  • After soaking one hour, slowly bring to a boil, remove the vanilla bean and foam the milk.
  • Divide steamed milk into two tall glasses, then slowly pour half of the coffee into each glass (not in the middle but from the rim down the side of the glass).
  • If you want sweet coffee, you can sweeten the coffee before pouring into the milk.

  • The longer the vanilla bean stays in the sugar, the more heavenly the scent and taste.

  • Combine water and sugar in a heavy sauce pan bring to a boil for 5 minutes.
  • Remove from heat and add vanilla.

  • Pouring down the inside of the cup so as not to disturb the milk, pour desired amount of coffee.
