Categories     Veal

Time 30m

Yield 4 serving(s)

Number Of Ingredients 10

800 g veal schnitzels
1 tablespoon olive oil
60 g butter
2 garlic cloves (minced)
400 g button mushrooms (sliced)
1/2 cup white wine (125ml)
2 tablespoons beef stock (or veal glaze)
1/2 cup thickened cream (125ml double cream)
2 teaspoons Dijon mustard
salt and white pepper (to taste)

Steps:

  • Place veal between two sheets of cling wrap and beat them with a rolling pin or mallet or I've even used a small frypan until very thin (if they're already paper thin when you buy them, don't bother with this step).
  • Heat the olive oil and 1 tablespoon of the butter in a large frying pan/skillet over high heat and cook the veal quickly, only about 1 minute on each side, in batches so you don't overcrowd the pan and set aside on a plate and cover loosely with foil to keep warm.
  • Into the same pan add the remaining butter and the garlic and mushroomns and saute until the mushrooms are browned.
  • Deglaze the pan with the wine and simmer until it is almost evaporated and then add the stock, cream and mustard and siommer until the sauce reduces slightly and starts to thicken.
  • Season to taste with salt and pepper and then pour over the veal, sprinkle with ground black pepper, if you like.

VEAL TENDRONS IN CREAM AND TARRAGON SAUCE

Veal Tendrons in Cream and Tarragon Sauce image

Provided by Jacques Pepin

Categories     dinner, main course

Time 1h45m

Yield 6 servings

Number Of Ingredients 12

1 tablespoon vegetable oil
1 tablespoon unsalted butter
1 veal breast (3 1/2 to 4 pounds), cut into ribs, with each rib cut in half crosswise. (There should be about 8 pieces.)
2 onions (about 8 ounces), peeled and coarsely chopped
1 tablespoon flour
1 1/4 cups water
4 cloves garlic, peeled, crushed and coarsely chopped (about 1 tablespoon)
2 bay leaves and 5 to 6 sprigs of thyme tied together to make an herb bouquet or, if fresh thyme is not available, 1/2 teaspoon dry thyme
1 teaspoon salt
1/2 cup heavy cream
1 tablespoon chopped fresh tarragon, or 1/2 teaspoon dried
1/4 teaspoon freshly ground black pepper

Steps:

  • Heat the oil and butter in a sturdy black-enamel or cast-iron pan and, when hot, add half the veal ribs in one layer. Cook over high heat for about 10 minutes, turning to brown on all sides. Remove the browned ribs to a plate. Repeat with the remaining ribs, placing them on the plate after they are browned.
  • Remove all but 1 tablespoon of fat from the cooking pan and add the onion. Cook 3 to 4 minutes, stirring constantly. The onion should be wilted and mixed with the solidified meat juices loosened through stirring. Add the flour and mix well. Add the water and bring to a boil, stirring well.
  • Return the meat to the pan and add the garlic, herb bouquet and salt. Bring to a boil, cover, reduce the heat to very low and cook slowly for 1 hour. By then the meat should be tender and there should be 1 1/4 to 1 1/2 cups of lightly thickened sauce. Discard the herb bouquet and add the cream. Bring to a boil, stir in the tarragon and pepper and serve.

SAUTEED MUSHROOMS WITH TARRAGON CREAM SAUCE

Sauteed Mushrooms With Tarragon Cream Sauce image

This is a delicious appetizer I just created last night based off of a Morel sauce recipe I found. We wanted an extra decadent button mushroom based dish, so here it is.

Provided by E. Nigma

Categories     Vegetable

Time 10m

Yield 12 hors-d'oeuvre, 12 serving(s)

Number Of Ingredients 10

6 tablespoons butter
12 ounces button mushrooms
6 morels, sliced
1 shallot, minced
1/2 tablespoon dried tarragon
1 cup beef stock
1/2 cup heavy cream
1/4 cup dry white wine
crostini
salt and pepper

Steps:

  • First wipe the button mushrooms clean with a damp paper towel. Slice the morels in half first and check for bugs that might have crawled inside. If using fresh morels, wash them first; if dried you may reconsititue them by soaking them in warm water for 30 minutes.
  • Melt 4 tablespoons of the butter in a pan and saute the button mushrooms over medium-high heat for about 5 minutes or until done. Set these aside.
  • Now melt the remaining 2 tablespoons of butter in the same pan and saute the shallots over medium-high heat for about 4 minutes. Add the sliced morels and sauted for a minute more.
  • Reduce the heat slightly and deglaze the pan with the wine. Stir in the stock and cream. Add the tarragon and season to taste with salt and pepper.
  • Let the sauce bubble for a few minutes until it reaches the desired consistency, then add the mushrooms back in and heat through.
  • Serve with crostini (slices of a French bagette, toasted).

Crafting delectable veal in tarragon mushroom sauce is an art that requires careful attention to detail and a harmonious blend of flavors. To ensure a successful culinary experience, here are some essential tips and a comprehensive conclusion to guide your cooking journey:

Tips:

  • Selecting Finest Ingredients: Opt for high-quality veal cutlets, ensuring they are thinly sliced to cook evenly and remain tender. Use fresh tarragon leaves for an aromatic and distinctive flavor, and select a flavorful white wine to enhance the sauce's depth.
  • Searing Veal to Perfection: Sear the veal cutlets in a hot pan with butter until golden brown, creating a delectable crust that locks in the juices and adds a delightful layer of flavor.
  • Creating a Flavorful Sauce: Sauté shallots and mushrooms in butter until softened, releasing their natural flavors. Deglaze the pan with white wine to dissolve any browned bits and infuse the sauce with a rich aroma. Stir in chicken broth, tarragon, and cream, allowing the sauce to simmer and develop its complexity.
  • Balancing Seasonings: Season the sauce with salt, pepper, and a hint of nutmeg to enhance its flavors without overpowering the delicate taste of the veal. Adjust the seasoning to your personal preference, ensuring a harmonious balance.
  • Cooking Veal in the Sauce: Gently place the seared veal cutlets in the simmering sauce and cook until cooked through, approximately 5-7 minutes. This allows the veal to absorb the delectable flavors of the sauce, resulting in a tender and flavorful dish.
  • Garnish for Presentation: Before serving, garnish the dish with fresh tarragon leaves and a sprinkle of chopped parsley. This adds a vibrant visual appeal, enhancing the overall presentation and inviting diners to savor the culinary creation.
