Categories     main-dish

Time 2h20m

Yield 4 to 6 servings

Number Of Ingredients 13

8 osso bucco, veal shins, center cut, about 1 1/2 inches thick
4 cups all-purpose flour, seasoned well with salt and pepper, for dredging the shanks
5 tablespoons butter
7 shallots, minced
2 Granny Smith, Haralson, or other tart cooking apple, peeled, cored, halved and sliced
2 cups natural apple cider
1/2 cup calvados or applejack
1/2 cup cider vinegar
1 cup chicken stock
1/2 cup heavy cream
3 tablespoons minced tarragon
1/2 cup dried Zante currants
Sea salt

Steps:

  • Preheat the oven to 350 degrees F.
  • Dredge the shanks in the seasoned flour. Brown the shanks in the butter in a very large oven safe pan over high heat; this will take 12 to 15 minutes. Lower the heat and continue cooking for 5 minutes, turning frequently to cook evenly. DO NOT SCORCH.
  • In the pan you have the shanks in, add the shallots and apples. When softened, add the cider, calvados and vinegar. Let it come to a low boil and reduce the liquid by 40 to 50 percent. Then add the chicken stock and bring it back up to a low boil.
  • Place the pan in the oven for 90 minutes, tented with foil. When the cooking time in the oven is over, remove from the oven and skim fat if needed. Test the meat to make sure it's fork tender. If it's not, stick it back in the oven for a few minutes. Then place the pan back over medium-low heat on the stove.
  • Add the cream and tarragon. Cook for 5 more minutes to finish cooking and reduce the sauce to a rich consistency.
  • Add the currants and correct the seasoning using sea salt and then correcting for vinegar. You may be adding a bit more for acidic punch.

Time 1h20m

Yield 4 serving(s)

Number Of Ingredients 5

1 lb fresh veal sausage, cut into 3/4-inch slices (4-5 links)
ground cinnamon, to taste
1/4 cup calvados, applejack or 1/4 cup good apple cider
1/4 cup heavy cream
chopped fresh parsley leaves, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large cold skillet, arrange the sausage slices in 1 layer. Set over medium-high heat, and cook, turning the slices once or twice until they are crisp and nicely browned on both sides, about 10 minutes. Remove from the heat and set aside.
  • In a 2-quart casserole, arrange a layer of about 1/4 of the sausage slices. Cover the sausage with a layer of about 1/4 of the apple slices. Sprinkle lightly with cinnamon. Continue in this manner to make 4 layers, ending with the apple slices.
  • Stir the Calvados into the skillet in which the sausage was browned, scraping up any crusty, brown bits that cling to the bottom of the pan. Stir in the cream until well blended, Pour this mixture evenly over the casserole.
  • Cover, and bake for 1 hour until the apples have cooked down and the mixture is bubbling. Sprinkle with parsley before serving.

VEAL SAUSAGE

Veal Sausage image

Provided by Michael Symon : Food Network

Time 2h

Yield 8 six-inch links

Number Of Ingredients 14

2 teaspoons extra-virgin olive oil
4 cloves garlic, minced
1/2 cup minced shallot
1 1/2 pounds veal shoulder, cubed
1/2 pound pork fatback, cubed
1 tablespoon red pepper flakes
2 teaspoons fennel seeds, toasted
2 tablespoons coriander seeds, toasted and ground
1 teaspoon sugar
Kosher salt
One 4 1/2-foot hog casing, soaked in water 30 minutes and then flushed with water
Cornichons, for serving
Whole-grain mustard, for serving
Toasted or grilled bread, for serving

Steps:

  • Heat the olive oil in a medium skillet over medium-low heat. Add the garlic and shallot and cook until translucent, about 2 minutes. Remove from the heat and let cool completely.
  • Combine the veal and pork fatback with the shallot mixture, red pepper flakes, fennel seeds, coriander, sugar and 1 tablespoon salt in a large bowl. Transfer to a large plastic zip-top bag and refrigerate overnight.
  • At least 30 minutes before grinding the meat, place all of your tools (including the meat grinder parts, stand mixer bowl, stand mixer paddle attachment and sausage stuffer parts) in the freezer to chill.
  • Using your meat grinder, grind the marinated meat mixture twice through the small die plate into the chilled bowl of the stand mixer. Refrigerate at least 30 minutes, then return the mixture to the mixer and beat on medium speed using the chilled paddle attachment, 45 to 60 seconds. Refrigerate until ready to use.
  • Stuff the sausages (see Cook's Note) and, for best results, refrigerate overnight.
  • Before cooking, pierce each sausage several times with a pin. Grill over medium heat until the center registers 150 degrees F, 10 to 12 minutes. (You can also pan-fry or broil the sausages.) Serve with cornichons, mustard and bread.
  • If you don't have time to stuff sausage links, cook the sausage mixture loose in a skillet or form it into patties for grilling or pan-frying.

Veal Scaloppine W/Cream, Calvados & Apples (Jacques Pepin) image

This recipe by Jacques Pepin from his A FRENCH CHEF COOKS AT HOME cookbook, takes an Italian classic & adds French influence to produce a company-worthy outcome. I have not made this dish, but will be searching my grocery store for veal at a reasonable price for it. In the meantime, I hope someone will be as tempted as I am to give this a try. *Enjoy*

VEAL SAUSAGE AND BROCCOLI RABE WITH PASTA

Veal Sausage and Broccoli Rabe with Pasta image

My "favorite" pasta changes each time I whip up a new one. Here I go again.

Yield 4 servings

Number Of Ingredients 12

Salt
1 pound short-cut pasta, such as penne
1 pound ground veal
2 tablespoons thinly sliced sage leaves, a couple of sprigs
1 teaspoon fennel seeds
3 garlic cloves, minced
1 small onion, finely chopped
1/2 teaspoon red pepper flakes
Black pepper
1 1/2 pounds broccoli rabe, 1 large or 2 small bunches, trimmed and cut into bite-size pieces
2 tablespoons EVOO (extra-virgin olive oil)
A couple of handfuls of grated Parmigiano-Reggiano cheese, plus some to pass at the table

Steps:

  • Bring a large pot of water to a boil for the pasta. Salt the water and cook the pasta to al dente. Heads up: you will need a ladle of the cooking water for the pasta sauce.
  • In a medium bowl, combine the veal, sage, fennel seed, garlic, onions, red pepper flakes, salt, and black pepper.
  • Bring an inch of salted water to a boil in a deep skillet. Add the broccoli rabe and boil for 7 to 8 minutes. Drain well.
  • Return the skillet to the stovetop and heat to medium-high heat. Add the EVOO and the veal sausage mixture and break it up. Cook the veal crumbles for 5 to 6 minutes, until lightly browned all over. Add the broccoli rabe and combine. Adjust the salt and pepper to taste.
  • Add a ladle of starchy pasta cooking water to the sausage and rabe, then drain the pasta and add to the skillet. Combine the pasta with the sausage and broccoli rabe. Add a couple of handfuls of grated cheese to the pan and adjust the salt and pepper one final time, then serve.

Tips:

  • To make the best veal sausage, use high-quality veal meat. Look for veal that is a light pink color with a fine grain.
  • Be sure to grind the veal meat yourself, as this will give you the best control over the texture of the sausage.
  • If you don't have a meat grinder, you can purchase ground veal from a butcher.
  • Season the veal sausage generously with salt, pepper, and other spices. This will help to enhance the flavor of the sausage.
  • Use fresh herbs, such as parsley, thyme, and sage, to add flavor to the sausage.
  • Be careful not to overmix the veal sausage, as this will make it tough.
  • When cooking the veal sausage, be sure to cook it over medium heat. This will help to prevent the sausage from drying out.
  • Serve the veal sausage with your favorite sides, such as mashed potatoes, roasted vegetables, or a fresh salad.

Conclusion:

Veal sausage is a delicious and versatile meat that can be used in a variety of dishes. With its mild flavor and tender texture, veal sausage is a great choice for both everyday meals and special occasions. Whether you are grilling, frying, or baking veal sausage, you are sure to enjoy its delicious flavor. So next time you are looking for a new and exciting recipe, give veal sausage a try!
