1 (8 ounce) package button mushrooms, finely diced
½ cup finely diced onion
2 cloves garlic, minced
1 (8 ounce) tub vegan cream cheese substitute, softened
1 cup vegan shredded cheese substitute, divided
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Set jalapeño halves on a baking sheet lined with aluminum foil, open side up.
  • Heat vegetable oil in a skillet over medium-high heat. Add mushrooms, onion, and garlic to the skillet and saute until vegetables are tender and mushrooms have released their liquid, about 8 minutes. Transfer vegetables to a paper towel-lined plate to soak up the excess moisture.
  • Mix mushroom mixture, cream cheese substitute, 3/4 cup shredded cheese substitute, salt, and pepper together in a bowl. Spoon into the jalapeño pepper halves on the baking sheet.

These jalapeno poppers are so good, they even had my meat-loving father asking for seconds! The whole family loves them. They are so easy to make and are a great snack for your game-day or Superbowl party. They're even more delicious when served with a little raspberry jelly on the side.

12 large jalapeno peppers
9 oz vegan cream cheese
1 c vegan shredded cheese
1/2 pkg vegan ground sausage
1/2 Tbsp chipotle chile powder
1/4 c bread crumbs
cooking spray

Steps:

  • 1. Preheat oven to 375 degrees. Coat baking sheet with cooking spray and set aside.
  • 2. Heat small skillet over medium heat. Coat pan with cooking spray. Crumble the sausage into the pan, making sure to break it up into small pieces. Cook until brown and beginning to crisp. Put sausage into a bowl and set aside.
  • 3. Rinse and dry jalapenos. DO NOT CUT OFF STEM END. Cut in half lengthwise from top. Scoop out the seeds and ribs inside the pepper. Test to see if the halves will lay flat without tipping to one side. If they do lean, use knife to carefully shave some of the outer skin and flesh from the bottom of the jalapeno so that it will stand upright. Be careful not to cut through to the inside of the pepper.
  • 4. Add cream cheese, shredded cheese and chile powder to browned sausage. Mix well.
  • 5. Spoon 1/2 to 1 Tbsp. of cream cheese mixture into each jalapeno half (or enough to fill them). Set filled jalapeno halves on baking sheet. Sprinkle each half with enough bread crumbs to lightly cover the cheese.
  • 6. Bake for 15 - 12 minutes, or until peppers are somewhat soft, cheese is melted and breadcrumbs are lightly browned. Serve immediately.
