2 cups cooked barley, quick-cooking recommended
1/4 teaspoon ground cumin
1/4 teaspoon dried oregano, crushed
1/2 teaspoon table salt
1/4 teaspoon black pepper, freshly ground
cooking spray, 2 spray(s)
1/2 cup shredded low-fat cheddar cheese, sharp-variety recommended

Steps:

  • Preheat oven to 350ºF.
  • Heat oil in very large nonstick skillet over medium heat.
  • Add onion, garlic, corn and Swiss chard; cook, stirring frequently, until onion is translucent and Swiss chard is tender, about 5 minutes.

2 ribs celery, chopped
1 cup pearl barley
1 (8 ounce) package sliced fresh mushrooms
1 green bell pepper, chopped
2 cups chicken broth
salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt butter in a 1 1/2-quart Dutch oven or oven-safe pot over medium heat and cook onion until lightly browned, 5 to 8 minutes.
