Here is an awesome soup that i got out of "The New German Cookbook". I make it often and it is greedily eaten by those in attendance. I would advise a double recipe.

3 tablespoons butter
1 large onion, chopped
1 large leek, chopped
2 medium carrots, chopped
1 medium celery rib, chopped
1 bay leaf
1/4 teaspoon black pepper
1 large baking potato, chopped
1 cup sauerkraut
3 cups beef broth
2 1/2 cups chicken broth
1/3 cup riesling wine (I prefer liebfraumilch)
1 extra-large egg yolk
1/2 cup sour cream
1/4 lb sliced turkey (I use double that)
2 tablespoons parsley

Steps:

  • melt the butter and sauté the onion, leek, carrot, celery, and bay leaf till golden.
  • Add potato, sauerkraut, broths, wine and simmer for 30 minutes.
  • In a heatproof bowl, blend the egg yolk with the sour cream.
  • Add a cup of the hot soup mixture into the bowl and blend.
  • Then add that back to the soup.
  • DO NOT BOIL, the sour cream will curdle.
  • cook another 3 minutes Add the turkey and cook another 3 minutes or till heated through.
  • Add the parsley and cook two minutes longer.

1 leftover whole roasted turkey
2 medium onions, cored, peeled and chopped
3 medium carrots, peeled and chopped
3 medium stalks celery, cleaned and chopped
2 bay leaves
Salt
Freshly ground black pepper
Water, to cover
Any leftover turkey meat, diced
2 cups cooked diced potatoes, rice or pasta
2 cups cooked sweet peas
2 cups cooked carrots, diced
2 cups any other cooked vegetables
2 cloves garlic, chopped
1 cup chopped green onions, green part only
1/4 cup chiffonade fresh basil leaves
1/4 cup finely chopped fresh parsley leaves
1 cup cooked macaroni
Loaf crusty bread

Steps:

  • Place whole turkey in a large stockpot. Add 1/2 of the onions, carrots, and celery. Add bay leaves, salt and pepper. Cover the turkey with 3 quarts of water. Place over medium heat and bring to a boil. Reduce heat to medium low and simmer for 1 hour.
  • Remove stock from heat and strain through a fine mesh sieve, saving the liquid (about 2 quarts) and turkey meat, discarding the vegetables.
  • Saute remaining onions, carrots, and celery until wilted, about 4 minutes. Add to strained stock. Add the remaining vegetables, and garlic to the stock. Season with salt and pepper. Simmer for 10 minutes. Remove the meat from the turkey carcass and dice. Add the meat, herbs, and cooked macaroni to stock. Heat through.
  • Ladle the soup into each serving bowl and serve with the crusty bread.

I just made this from scratch and it is way beyond my expectations, the way all the flavors blended together.I made this in the crock pot a day in advance and you will find you have everything in cub board!

2 quarts tomato juice
1 quart whole roma tomato
15 1/4 ounces canned corn
15 1/4 ounces green beans
1 large onion, diced
1 (2 lb) bag sauerkraut
2 lbs smoked sausage or 2 lbs smoked kielbasa
4 garlic cloves, minced
1/2 teaspoon caraway seed
1/2 teaspoon salt
1 teaspoon pepper
2 tablespoons brown sugar
1 teaspoon liquid smoke

Steps:

  • Slice the whole Roma tomatoes into small pieces, about 1 inch pieces.
  • Make sure you slice the sausage into 1/2 -1 inch rounds, then slice in half and add to the crock pot. Add all other ingredients to the crock and cook on low for 6-8 hours depending how your pot cooks.
  • If your crock pot is high in temperature then you will only need 6 hours on low. If it one like mine that cooks cooler on low, then you will need 7-8 hours.
