Black Bean Vegetarian Meat Loaf image

This was a creation based on trying my first black bean vegetarian burger and deciding I had to learn how to make one, then I decided to go for a vegetarian meatloaf instead! Based on a 4 ounce serving, this recipe could be used to make twelve 4 ounce burgers instead of a meatloaf.

EASY VEGAN "MEATLOAF"

Easy Vegan

This is a vegan "meatloaf" that tastes like and has the consistency of regular meatloaf. I used my mom's age-old recipe and veganized it. A little of the tomato sauce can be saved to glaze the top or you can use ketchup. I like making meatloaf sandwiches out of this!

Tips:

  • Use a variety of beans. This will give your meatloaf a more complex flavor and texture. Try using a combination of black beans, kidney beans, and pinto beans.
  • Don't skimp on the spices. Spices are what give your meatloaf its flavor. Be generous with the garlic, onion, and chili powder.
  • Use a good quality breadcrumb. This will help to bind the meatloaf together and give it a crispy crust.
  • Don't overmix the meatloaf. Overmixing will make the meatloaf tough. Just mix the ingredients until they are combined.
  • Bake the meatloaf at a high temperature. This will help to create a crispy crust and a juicy interior.
  • Let the meatloaf rest before slicing. This will help to keep the meatloaf moist and prevent it from falling apart.

Conclusion:

Vegetarian baked bean meatloaf is a delicious and hearty dish that is perfect for a weeknight meal. It is easy to make and can be customized to your liking. With its rich flavor and meaty texture, this meatloaf is sure to please even the most dedicated meat-eaters.
