BROWN SUGAR-MAPLE FROSTING

Brown Sugar-Maple Frosting image

This makes a somewhat stiff frosting that tastes a bit like toffee and is perfect for covering fall desserts. From apple cakes to pumpkin cookies to cranberry-walnut cupcakes, this is my go-to frosting to capture the flavors of my favorite season. I like to top it with chopped walnuts and a sprinkle of cinnamon. Be warned, however, that it's extremely sweet, so it's best paired with low-sugar baked goods. A little goes a long way.

Tips:

  • Use real maple syrup: This is essential for getting the right flavor and consistency. If you don't have maple syrup, you can substitute another type of syrup, but the flavor will be different.
  • Don't boil the syrup too long: If you boil it for too long, it will become too thick and sugary. You only need to boil it until it reaches a soft-ball stage, which is about 235 degrees Fahrenheit.
  • Cool the syrup before adding it to the butter: This will help to prevent the butter from melting too quickly and making the icing too thin.
  • Beat the butter and syrup together until they are light and fluffy: This will take a few minutes, but it's worth it to get the right texture.
  • Add the milk or cream a little at a time: This will help to prevent the icing from becoming too thin.
  • Use the icing immediately: Boiled icing is best when it's fresh. If you need to store it, you can keep it in the refrigerator for up to a week. Bring it back to room temperature before using it.

Conclusion:

Vermont maple boiled icing is a delicious and versatile icing that can be used on a variety of cakes, cookies, and other desserts. It's easy to make and only requires a few simple ingredients. Whether you're a professional baker or a home cook, you're sure to love this icing.
